1 cup (2 sticks) butter
1 cup granulated sugar
1 cup packed light brown sugar
2 eggs
1 tsp. vanilla extract
1 tsp. baking powder
1 tsp. baking soda
2 cups all-purpose flour
2-1/2 cups shredded coconut
1 cup chopped walnuts or pecans
2 cups old-fashioned oatmeal

Steps:

  • Heat oven to 350 degrees. Grease 2 large cookie sheets. Cream butter and sugars in mixer until light and fluffy. Add eggs, beat together. Add vanilla, baking powder and baking soda. Then add the flour. Mix until well combined. Stir in coconut and nuts. Mix in oatmeal.
  • Drop on greased cookie sheets by the tsp., spacing about 1/2 inch apart. Bake 12 to 15 minutes, just until the edges begin to brown. Transfer to a wire rack to cool.

Soft and chewy Coconut Flour Oatmeal Cookies with a great melt-in-your-mouth texture from the coconut flour. They are gluten free and naturally sweetened with only maple syrup and chocolate chips! These cookies are also dairy free because they call for coconut oil rather than butter. I debated calling them "Triple Coconut Cookies" because they have coconut flour, shredded coconut and coconut oil in them -- a delicious trio!

3/4 cup coconut flour
1/2 cup rolled oats
1/4 cup shredded unsweetened coconut
1/2 tsp baking soda
1/3 cup maple syrup (+ 1 tbsp)
1/2 cup coconut oil (+ 1 tbsp (melted))
1 tsp vanilla
2 eggs
1/2 cup chocolate chips ((dairy-free if necessary))

Steps:

  • Preheat the oven to 350 degrees. Prepare two cookie sheets with parchment paper.
  • In a medium-sized bowl combine coconut flour, oats, shredded unsweetened coconut, baking soda and salt. Whisk together thoroughly.
  • In a small saucepan melt ½ cup + 1 tbsp of coconut oil on low heat until melted. Set aside to cool slightly.
  • In a separate small bowl, combine maple syrup, vanilla and eggs and whisk together.
  • Pour in the melted coconut oil (after it has cooled) to the wet ingredients and whisk together thoroughly. Add the wet ingredients to the dry ingredients and stir together. Add the chocolate chips and stir again.
  • The batter may seem wet at first but coconut flour begins to soak up excess moisture quickly. Roll the dough into balls of approximately 2 tbsp. Place 6 at a time on the cookie sheet (If the dough seems too sticky and the balls aren't holding together, place the dough in the fridge for 10 minutes before rolling).
  • Flatten each cookie gently with a fork. Bake at 350 degrees F for 10-12 minutes.

For cookies:
1 stick unsalted butter
1/2 cup packed light brown sugar
1/4 teaspoon salt
3/4 cup sweetened flaked coconut
3/4 cup rolled oats
1/4 cup all-purpose flour
For decorating:
3 ounces fine-quality bittersweet chocolate, finely chopped and melted
3 ounces fine-quality white chocolate, finely chopped and melted
Equipment: 2 (17-by 11-inch) nonstick bakeware liners such as Silpats; 2 heavy-duty sealable bags

Steps:

  • Make cookies
  • Preheat oven to 350°F with rack in middle. Line 2 large baking sheets with nonstick liners.
  • Melt butter with brown sugar and salt in a metal bowl set over a pot of simmering water, stirring occasionally. Stir in coconut, oats, and flour until just combined. Remove pot from heat but keep batter warm over pot (so batter is easier to spread).
  • Drop rounded teaspoons of batter at least 3 1/2 inches apart on 1 baking sheet and spread each to about 2 inches with an offset spatula or back of a spoon. Bake until cookies are bubbling and golden brown, 8 to 12 minutes. Cool on baking sheet on a rack until firm, 3 to 4 minutes, then transfer cookies to rack to cool completely. Form and bake more cookies on second baking sheet (wipe liners clean and cool between batches).
  • Decorate with chocolate
  • Cool melted chocolates slightly. Transfer each to a sealable bag and snip a 1/16-inch opening at a corner of each bag. Put some of cooled cookies on a parchment-lined tray that will fit in freezer, then pipe chocolates decoratively over cookies. Freeze 2 to 3 minutes to set chocolate, then carefully remove cookies from parchment.

½ cup agave nectar
1 cup rolled oats
¾ cup all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt brown sugar, coconut oil, and agave nectar in a small pot over medium heat; bring to a boil. Remove from heat; add oats and flour. Pour into an 8-inch baking dish.
  • Bake in the preheated oven until lightly browned, about 20 minutes. Refrigerate until solid, at least 20 minutes. Cut into squares; you may need to pick up the whole thing and cut it from the side.

(note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

1 cup brown sugar, packed or 2 tablespoons molasses
1 cup white sugar (or Splenda or 1/2 cup Splenda for Baking)
2 large eggs

1 cup flaked coconut
1 teaspoon baking powder
1 teaspoon baking soda
2 cups rolled oats
1 cup raisins (optional) or 1 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350°.
  • In mixing bowl cream shortening,butter,and sugars.
  • Add eggs and vanilla until blended.
  • Set aside.
  • In separate bowl, combine dry ingredients.
  • Withholding coconut until all other ingredients are blended.
  • Add coconut.
  • Combine wet and dry ingredients until moist.
  • Drop on greased cookie sheet about 1-2 inches apart.
  • Bake for 10 minutes or until golden brown.

1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
2/3 cup margarine
1 cup granulated sugar
1 cup brown sugar

2 teaspoons vanilla
1 cup quick-cooking rolled oats
2 cups coconut

Steps:

  • Preheat oven to 350°F.
  • Sift flour, baking powder, baking soda, salt together. Set aside.
  • Cream together margarine, sugars, eggs and vanilla until light and creamy. Add flour mixture. Stir in oatmeal and coconut.
  • Place small spoonfuls on lightly greased cookie sheet. Bake for 12-15 minutes. Take out of oven when they don't look done and let set on cookie sheet for a minutes.
  • I spray my cookie sheet with PAM about every 2-3 times. The secret to these cookies is to not over bake them. Store in airtight container.
