CREAMY HATCH CHILE AND MUSHROOM CHICKEN BREASTS



Creamy Hatch Chile and Mushroom Chicken Breasts image

I made this dish with Hatch chiles that I had in my freezer and some onions and mushrooms that needed to be used. I served it over a bed of cilantro-lime rice. I shredded my chicken breast and mixed it in with the rice. Hubby preferred his chicken breast whole. We're going through a stay-at-home order due to the Coronavirus pandemic and this was a great meal to make with items that I already had.

1 pound skinless, boneless chicken breast halves
1 tablespoon olive oil
1 medium onion, thinly sliced
1 (8 ounce) package sliced fresh mushrooms
3 cloves garlic, crushed
¼ cup chicken broth
3 tablespoons taco seasoning mix
1 teaspoon salt
½ teaspoon ground black pepper
4 Hatch chile peppers, halved and seeded
½ cup heavy whipping cream

Steps:

  • Spray a slow cooker with nonstick cooking spray. Place chicken breasts in the slow cooker.
  • Heat olive oil in a skillet until shimmering. Add onion; cook and stir for 5 minutes. Add mushrooms and cook until onion is translucent and mushrooms are soft, 2 to 4 minutes. Add garlic and cook for 1 minute more.
  • Transfer the onion mixture to the slow cooker. Add chicken broth, taco seasoning, salt, and pepper. Cook on High for 1 hour 30 minutes.
  • Meanwhile, set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place chile peppers cut-side down on baking sheet.
  • Broil the chile peppers until skin is heavily blistered and turning black, about 4 minutes per side.
  • Transfer the chile peppers to a bowl and cover tightly with plastic wrap. Allow to steam as they cool, about 15 minutes. Remove the skins and chop the flesh into 1-inch pieces.
  • Add Hatch chiles and heavy whipping cream to the slow cooker and cook for 30 minutes more.

3 Tbsp neutral oil
3 Tbsp butter
1 cup onion (yellow or white, chopped )
1/2 cup red or green bell pepper (chopped)
2 tsp garlic (chopped)

5 Tbsp flour
3 cups chicken broth
2 cups Hatch chiles (roasted, peeled, deseeded, and chopped (see note))

6 oz cheddar cheese (shredded )

Steps:

  • In a large pot sauté onion in butter & oil over medium to med-high heat until becoming translucent - about 3 minutes.
  • Add chopped red bell pepper, garlic, oregano, salt & pepperStir until aromatics bloom. About 2 minutes.
  • Add flour and whisk until all veggies are coated and a film starts to form on the bottom of the pan.Add chicken broth. Whisk vigorously, adjusting the heat, until mixture comes to a simmer and starts to thicken. Scrape the bottom of the pot to release all the fond (the browned bits from the veggies & flour).
  • Add chicken, chiles, and corn.Stir and allow to come back to a simmer.
  • Add milk & cream. Stir, allowing to come back to a simmer.Taste for seasoning.
  • *Important* Before adding the cheese, turn OFF the heat and remove from the burner area. Add the cheese in small batches, completely stirring it in after each addition. This method will prevent the cheese from separating (also called breaking).

5 Hatch chile peppers
1 ½ tablespoons butter
1 onion, cut into strips
1 cup frozen corn
¾ tablespoon chicken bouillon granules
¼ teaspoon ground black pepper
1 ½ cups shredded rotisserie chicken
1 cup Mexican crema

Steps:

  • Place Hatch chiles directly on the grates of a gas stove. Cook over medium heat, flipping with tongs occasionally, until blackened and charred, about 5 minutes. Place in a sealed plastic bag and allow to cool, 7 to 8 minutes. Peel off charred skins, remove seeds, and cut flesh into 1-inch squares.
  • Melt butter in a pan and saute onion until translucent, about 5 minutes. Stir in corn. Add chiles and sprinkle with chicken bouillon granules and pepper. Stir until well combined. Add chicken and crema; simmer until heated through, about 5 minutes.

1 chopped onion
2 minced garlic cloves
1 tablespoon olive oil
1/2 teaspoon salt
3/4 cup chopped green hatch chile
1 teaspoon cumin
1 teaspoon oregano
2 chicken breasts, pounded thin
1 cup grated cheddar cheese
1/4 cup cornmeal
1/4 cup sour cream

Steps:

  • Saute the onion and garlic in olive oil until soft.
  • Add salt, chiles, cumin and oregano to onions and garlic.
  • On each chicken breast, place 1/4 of the chile mixture and 1/4 cup cheese. Roll up and secure with toothpicks. Roll the chicken breasts in the corn meal.
  • Bake at 375 for 45-55 minutes. Towards the end of cooking --
  • Combine remaining peppers, cheese, and sour cream. Cook over low heat until the cheese melts and the sauce is smooth.
  • When chicken is done, remove from oven and let rest 5 minutes before serving. Serve with the chile cheese sauce poured over the breasts.

2 lbs. chicken (about 2 lbs.) (, about 2 large chicken breasts; cooked and shredded; (use white or dark meat))
1 tablespoon oil (, canola or vegetable)
½ cup chopped sweet yellow onion
4 cups chicken broth
1½ cups Roasted Green Chiles ((I like Santa Fe Ole brand of roasted Hatch chiles))
1 cup Roasted Salsa Verde ((Herdez brand or other))
2 15.8 oz. canned white beans with juice (; do not drain; use (Great White Northern, White Kidney or Cannellini beans))
1 teaspoon cumin seed
1 teaspoon paprika (smoky) (for chicken seasoning)
2 teaspoons ground cumin (divided) (1 tsp. for chicken seasoning; 1 tsp. for broth)
2 teaspoons ground coriander (divided) (1 tsp. for chicken seasoning; 1 tsp. for broth)
1 teaspoon kosher salt (for chicken seasoning)
1 teaspoon minced garlic
2 dried bay leaves
juice from one small lime

Steps:

  • Lightly oil baking dish; preheat oven to 350ºF
  • Combine seasoning blend for the chicken in a small bowl and sprinkle evenly over the meat (see Recipe Notes below)
  • Place in a lightly oiled baking dish; cover with foil and bake until it reaches an internal temperature of 165º F (this usually takes about 45 minutes--depending upon your oven)
  • Once it's done, shred and set aside
  • Chop onions
  • Add chopped onions and roasted green chiles to food processor; pulse and set aside
  • Heat large stockpot with oil; add onion/green chile mixture and cumin seeds; cook on medium high heat for about 5 minutes
  • Reduce heat to medium and add chicken broth, garlic, 1 teaspoon ground cumin, 1 teaspoon ground coriander and salsa verde; cook for 5 minutes
  • Add shredded chicken and bay leaves to broth; reduce heat to low and allow to cook for 15 minutes
  • After 15 minutes, add canned white beans with their juice; cook additional 15 minutes; remove bay leaves; add salt and pepper to taste
  • Garnish with a squeeze of fresh lime juice, cilantro and Cotija cheese

1 Hatch green chile or 1 cup canned diced Hatch chiles
1 tablespoon canola oil
1/2 cup finely chopped scallions, white and light green parts only, plus 2 tablespoons sliced dark green parts, for garnish (4 to 5 scallions)
1 pound cream cheese, at room temperature
Kosher salt and freshly ground black pepper
1/2 cup sour cream
2 cups Mexican blend shredded cheese (8 ounces)
1 teaspoon lime zest (2 limes)
Blue and white tortilla chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the Hatch chiles on a burner over medium-low heat until the skins char and blister; this will happen very quickly. Remove to a bowl, cover with plastic wrap and set aside for 15 minutes to steam.
  • Heat a 10-inch cast-iron skillet over medium heat and add the canola oil, swirling the pan to coat. Add the scallions and cook until slightly softened, stirring, 1 to 2 minutes.
  • Meanwhile, peel and seed the chile and then it cut into medium dice. Turn the heat under the skillet to low and add the chiles, cream cheese and some salt and pepper. Cook, stirring often, until the cream cheese is melted. Add the sour cream, 1 1/2 cups of the shredded cheese, and the lime zest. Smooth the top and then sprinkle with the remaining 1/2 cup shredded cheese.
  • Bake until the cheese is melted and bubbly and just starting to brown, about 15 minutes.
  • Garnish with the dark green scallions and serve with tortilla chips.

  • To make the charred corn crepes. To char your corn place the ears of corn directly on separate gas stovetop burners or if you do not have a gas stove top char the corn under the broiler. Char the corn for about 1 minute "per side". The corn in going to pop and crackle, trust me it is going to to be loud. Add half of the kernels to the food processor and reserve the remaining kernels for the enchilada filling. Process until almost completely smooth, about 2 to 3 minutes. Place the crepe batter in the refrigerator for about 30 minutes. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours. I made the filling for the crepechiladas during this time.
  • Heat a 12 inch non-stick pan. Add butter or cooking spray (I like to use cooking spray) to coat. Pour 1/3 cup of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. Makes about 12 crepes.
  • To make the crepechiladas, heat a medium size skillet over medium heat. Add 1 tablespoon olive oil and the onion and sauté about five minutes or until soft. Add the jalapeño and garlic and sauté another 5 to 10 minutes or until they are soft and caramelized.

  • Heat large pot over medium heat. Melt butter and saute onions and celery until onions are translucent, 5 minutes. Stir in garlic and green chiles and saute 3 minutes. Pour in chicken broth, chili powder, cumin, salt and pepper and bring to boil.
  • Cover pot with well fitting lid and reduce to simmer. Simmer soup 10-15 minutes and then remove from heat. Using an immersion blender, puree soup and return to heat. Stir in carrots and cook until softened, about 5 minutes {I cut mine pretty small}. Stir in corn and chicken.
  • Place flour into small bowl and slowly whisk in cream to prevent lumps. {If there seems to be lumps, you can always pour it through a strainer first!} Pour this mixture into hot soup and cook until it thickens slightly. Taste and readjust seasonings adding more salt and pepper, if needed.
