CREAMY HATCH CHILE AND MUSHROOM CHICKEN BREASTS
I made this dish with Hatch chiles that I had in my freezer and some onions and mushrooms that needed to be used. I served it over a bed of cilantro-lime rice. I shredded my chicken breast and mixed it in with the rice. Hubby preferred his chicken breast whole. We're going through a stay-at-home order due to the Coronavirus pandemic and this was a great meal to make with items that I already had.

HATCHET CHILE STUFFED CHICKEN

Steps:
- Preheat the oven to 375 degrees F.
- Place the Hatch chiles on a burner over medium-low heat until the skins char and blister; this will happen very quickly. Remove to a bowl, cover with plastic wrap and set aside for 15 minutes to steam.
- Heat a 10-inch cast-iron skillet over medium heat and add the canola oil, swirling the pan to coat. Add the scallions and cook until slightly softened, stirring, 1 to 2 minutes.
- Meanwhile, peel and seed the chile and then it cut into medium dice. Turn the heat under the skillet to low and add the chiles, cream cheese and some salt and pepper. Cook, stirring often, until the cream cheese is melted. Add the sour cream, 1 1/2 cups of the shredded cheese, and the lime zest. Smooth the top and then sprinkle with the remaining 1/2 cup shredded cheese.
- Bake until the cheese is melted and bubbly and just starting to brown, about 15 minutes.
- Garnish with the dark green scallions and serve with tortilla chips.

- To make the charred corn crepes. To char your corn place the ears of corn directly on separate gas stovetop burners or if you do not have a gas stove top char the corn under the broiler. Char the corn for about 1 minute "per side". The corn in going to pop and crackle, trust me it is going to to be loud. Once the corn is lightly charred all over, remove from the burner (or broiler) and set aside to cool.
- In the bowl of a food processor or blender. Add the flour, milk, water, eggs and a pinch if salt and pepper. Now go and scrape the kernels off both ears of corn using a sharp knife. Add half of the kernels to the food processor and reserve the remaining kernels for the enchilada filling. Process until almost completely smooth, about 2 to 3 minutes. Place the crepe batter in the refrigerator for about 30 minutes. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours. I made the filling for the crepechiladas during this time.
- Heat a 12 inch non-stick pan. Add butter or cooking spray (I like to use cooking spray) to coat. Pour 1/3 cup of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. Makes about 12 crepes.
- To make the crepechiladas, heat a medium size skillet over medium heat. Add 1 tablespoon olive oil and the onion and sauté about five minutes or until soft. Add the jalapeño and garlic and sauté another 5 to 10 minutes or until they are soft and caramelized.

- Preheat the oven to 375°F. Season both sides of the chicken with salt and pepper. Heat up a bit of oil in an oven safe pan – a dutch oven works well – over medium high heat and sear the chicken thighs, undisturbed, until golden brown 5-8 minutes. Remove from the pan.
- There should be quite a bit of rendered fat in the pan, but if it’s dry, add a bit of oil. Cook the onion, stirring, until soft but not brown. Stir in the salsa verde and chicken stock. Nestle in the chicken thighs and place in the oven, uncovered. Bake for 15-20 minutes, or until the chicken is cooked through.
- Remove and drizzle with honey. Finish with avocado (if using), lime wedges, and plenty of cilantro.

- Preheat oven to 350 degrees. Place chicken breasts in a casserole, add a little liquid, cover and bake about 30 minutes. Once done, let them cool and chop into bite sized pieces.
- In the meantime, stack half of the corn tortillas and with a sharp knife, cut through the tortillas to quarter them. Do the same with the rest of the tortillas. Heat a skillet over medium high heat. Add oil. When oil is hot, place as many of the corn tortillas that will fit in the oil and cook until just getting crispy. No need to turn them. With tongs, remove the chips to paper towels and in batches cook the rest of the tortillas. Replenishing the oil as you need.
- When all the tortillas are done, wipe out the skillet. Add the butter and the onions and sautee until onions are just turning opaque. About 7 minutes. Add tomato juice, salt, pepper and chopped chiles. Cover and simmer for 30 minutes.
