COCONUT CRANBERRY OATMEAL COOKIES

Chewy, crisp Oatmeal Cookies with coconut and cranberries are a cookie that no one can resist!

3/4 cup butter (softened)
1/2 cup white sugar
1 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups old fashioned rolled oats
1 1/4 cups all-purpose flour *
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/3 cups sweetened shredded coconut
1 1/3 cups dried cranberries or craisins
1 cup brown rice flour
1/2 cup tapioca starch

Steps:

  • Preheat oven to 350 degrees. In a large bowl, beat the butter until smooth. Add the sugars and continue beating until the mixture is light and fluffy, about 3-4 minutes. Add the eggs and vanilla and beat until smooth again.
  • Whisk together the dry ingredients. Gradually add them to the wet ingredients, half at a time. Stir until fully combined. Add the coconut and cranberries. Stir again.
  • Using a medium-size scoop to drop the dough onto a large baking sheet lined with a parchment lined baking sheet.
  • Bake for 12-14 minutes. Remove from the oven before the cookies are browned and when they still look soft, but not wet in the center. Let the cookies cool on the tray for at least 5 minutes; this will allow them to finish baking without overcooking.
  • Transfer to a cooling rack and then store in an airtight container. The cookies will keep well for several days. Enjoy!

Steps:

  • Line rimless baking sheets with parchment paper or grease; set aside.
  • In large bowl, beat butter with sugar until fluffy; beat in egg and vanilla.
  • In separate bowl, whisk together rolled oats, flour, coconut, baking powder, baking soda and salt.
  • Add to butter mixture along with cranberries; stir until combined.
  • Drop by heaping 1 tbsp about 2 inches apart, onto prepared pans.

About 3 cups (285 grams) old-fashioned rolled oats
About 1 cup (80 grams) sweetened shredded coconut
3/4 cup (110 grams) dried cranberries
3/4 cup (90 grams) roughly chopped walnuts
3 large eggs
1 teaspoon vanilla extract
16 tablespoons (2 sticks/226 grams) unsalted butter, preferably European, at room temperature
1 cup (200 grams) granulated sugar
Scant 1 cup (200 grams) packed light brown sugar

Steps:

  • 1 Line 2 large, rimmed baking sheets with parchment paper
  • 2 In a medium bowl, whisk together the flour, cinnamon, baking soda and salt
  • 3 In a large bowl, stir together the oats, coconut, cranberries and walnuts

3/4 cup light brown sugar
3/4 cup granulated sugar
1 large egg
2 egg whites
1 teaspoon vanilla extract

2 cups rolled oats
1 teaspoon baking powder

My grand-daughter sent me this recipe she says they are delicious. These cookies work very well using Splenda or Splenda for Baking,in place of the white sugar. (note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

  • 9. Shape pieces of dough into 2-tablespoon balls and place 3 inches apart on sheets.
  • 10. Press with the bottom of a glass to flatten dough into 2-inch-diameter.
  • 11. Bake until golden but still soft in center, 16 to 18 minutes, turning sheets halfway through for even baking.
  • 12. Remove from oven; transfer with parchment to a wire rack to cool. Store in airtight container at room temperature for up to 1 week.
