CHOCOLATE-GLAZED COCONUT ALMOND CHEESECAKE
My idea was to make a cheesecake taste like my favorite candy bar, which has chocolate, coconut and almonds. This cheesecake also works in bite size. Use a mini muffin pan with muffin liners, fill 3/4 full and bake 15-17 minutes. Allow to sit and cool completely before topping with chocolate, coconut and almonds. -Keri Brammer, Lawton, Oklahoma

- Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan., In a small bowl, combine the cracker crumbs, coconut and almonds; stir in butter. Press onto the bottom and 1 in. up the sides of prepared pan. Place pan on a baking sheet. Bake 12 minutes. Cool on a wire rack. Reduce oven temperature to 325°., In a large bowl, beat cream cheese and sugar until smooth. Beat in coconut extract. Add eggs; beat on low speed just until combined. Fold in coconut. Pour into crust. Place springform pan in a large baking pan; add 1 in. of boiling water to larger pan. , Bake 45-55 minutes or until center is just set and top appears dull. Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack 10 minutes; loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight., For glaze, place chocolate chips in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in vanilla. Cool slightly to reach a spreading consistency, stirring occasionally., Remove rim from pan. Spread glaze over cheesecake. Refrigerate 1 hour or until set. Top with toasted coconut and almonds if desired.

Steps:
- Special equipment: a 9-inch springform pan
- Preheat the oven to 350 degrees F.
- For the crust: Add the chocolate graham crackers and the almonds to a food processor. Process until finely chopped. Add the butter and salt and process to the consistency of wet sand. Press the crust into the bottom of a 9-inch springform pan. Refrigerate until ready to use.
- For the topping: In a small bowl, combine the brown sugar, flour and almonds. Using your fingers, work in the butter until the mixture has the texture of a crumble topping. Set aside.
- For the filling: Place the cream cheese, sugar and yogurt in a large bowl. Using an electric hand mixer, beat on medium speed until light and fluffy, about 3 minutes, scraping down the sides of the bowl as needed with a rubber spatula. Add the eggs, almond extract, vanilla extract and salt; beat another minute on medium. Reduce the speed to low and beat in the chocolate until combined. Pour the filling over the crust and sprinkle evenly with the crumble topping.
- Bake until the center of the cake is just set, 45 minutes. Let cool to room temperature, then refrigerate until completely chilled.
- Serve cold, with a dusting of powdered sugar if desired.

- In a small bowl, combine crust ingredients; reserve 2 tablespoons for garnish. Press remaining crumbs evenly onto the bottom and 2 in. up the sides of a 9-in. springform pan. Chill. , For filling, in a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, chocolate and extract. Add eggs; beat on low speed just until combined. Pour into crust., Place pan on a baking sheet. Bake at 350° for 40 minutes (filling will not be set). Remove from oven and let stand for 5 minutes., Meanwhile, combine topping ingredients. - For crust:
- Preheat oven to 350°F. Wrap foil around outside of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Blend all ingredients in processor until nuts are finely ground and crumbs stick together. Press crust mixture over bottom and 2 inches up sides of prepared pan. Bake until set, about 10 minutes. Cool. Maintain oven temperature.
- For filling:
- Using electric mixer, beat cream cheese, sugar and extract in large bowl to blend. Beat in cream of coconut, shredded coconut and flour. Add eggs 1 at a time, beating until just combined. Pour filling into crust. Bake until top is brown and center is almost set, about 1 hour 15 minutes. Transfer to rack and cool. Cover and chill overnight.
- For topping:
- Bring cream and syrup to simmer in medium saucepan. Remove from heat. Add chocolate chips; whisk until smooth. Cool to just lukewarm. Pour topping over cake. Sprinkle edge with almonds and coconut. Chill until topping is set, about 2 hours. (Can be made 2 days ahead; cover and refrigerate.)

COCONUT-ALMOND CHOCOLATE CHIP CHEESECAKE
I make this often for church dinners and there's never a crumb left. I top it with whipped cream cheese topping, sliced almonds and drizzle it with a thin chocolate ganache.

- 1. Line the bottom of a 9 inch springform pan with parchment paper or tin foil. Spray with non-stick spray. Set aside. Preheat oven to 325 degrees.
- 2. In a medium mixing bowl, whisk together flour, cocoa, and confectioners sugar. Cut in butter until crumbly. Add chopped almonds and mix well.
- 3. Spread crumbly mixture over bottom and up about 1 inch of the sides of the prepared springform pan .
- 4. In large mixer bowl, combine cream cheese and sugar. Beat on medium speed until smooth. Add eggs, one at a time, beating until smooth after each addition. Add vanilla. Mix well. Add coconut, chocolate chips and sliced almonds. Mix well.
- 5. Pour into prepared springform pan. Bake 55-60 minutes at 325 degrees. Remove from oven and cool completely on wire rack. Refrigerate overnight. Remove from pan to serving platter and top with Whipped Cream Cheese Topping and garnish with Ganache and milk chocolate chips.
- 6. The next day, before removing the cheesecake from the refrigerator prepare the topping and ganache. Ganache: heat 1/4 cup whipping cream to just below boiling in microwave. Remove and stir in milk chocolate chips. Continue to stir until smooth. Topping: Combine cream cheese, sugar, vanilla, and almond extract in bowl of stand mixer. Fit mixer with whisk attachment and mix on medium until smooth. while continuing to beat, slowly pour in 1 cup of the heavy cream. Beat until stiff peaks form. Cover cheesecake with about half of the topping. Put the remaining topping in a decorator bag with a star tip and pipe a decorative edge around the top, outter edge of the cheesecake. Sprinkle decorative edge with sliced almonds. Drizzle with ganache and sprinkle with milk chocolate chips. Refrigerate until ready to serve.

- In a nonstick skillet melt the butter on low heat. Add coconut and almonds to the butter till is toasted brown, stirring occasionly(This will take up to a hour or two. After this is toasted, set aside to cool off to room temperature.
- Base:.
- In a bowl combine cream cheese and condensed milk until creamy. Add Cool Whip and mix.
- Put it all together:.
- Put 1/4 of the creamy mixture in each pie shell and spread till level.
- Put 1/4 of toasted mixture on top and lightly press down. Drizzle caramel topping on top(I usually go in a spiral and then back in forth).
- Repeat with base, topping, and caramel topping.

- 1. Stir together first 3 ingredients; press mixture into bottom of a 10 inch spring form pan.
- 2. Bake at 350 degrees for 8 minutes, cool
- 3. Beat cream cheese, eggs and one cup sugar at medium speed with an electric mixer until fluffy. Stir in coconut and next 3 ingredients. Pour into prepared crust and bake at 350 degrees for one hour. Cool on wire rack.
- 4. Place semi sweet chips in a zip lock bag and submerge in hot water until chips are melted. Snip a hole in the corner of the bag and drizzle chocolate over the top of the cheesecake. Cover and chill for 8 hours..
