Cherry Coconut Bars are the perfect dessert bars with a buttery graham cracker crust, and coconut, vanilla, almond extract, and maraschino cherry topping.

1 cup unsalted butter (, melted)
1 cup graham cracker crumbs
2/3 cup brown sugar (, packed)
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
4 cups sweetened shredded coconut
28 ounces sweetened condensed milk
2 teaspoons vanilla extract
1 teaspoon almond extract
2 cups maraschino cherries

Steps:

  • Preheat oven to 325 degrees and spray a 9x13 baking dish with baking spray.
  • To a large mixing bowl add the butter, graham cracker crumbs, and brown sugar.
  • Stir until well combined, then add in the flour, baking powder, and salt until just combined.
  • Press mixture into the bottom of the baking dish.
  • To the mixing bowl add the coconut, condensed milk, vanilla, and almond extract and mix well.
  • Chop the maraschino cherries and pat dry with paper towels.
  • Mix gently into coconut topping and spread mixture over graham cracker crust.
  • Bake for 30-40 minutes until slightly browned.
  • Cool completely then refrigerate for at least 3 hours before serving.

1 cup all-purpose flour
1/2 cup butter, softened
1/4 cup powdered sugar
2 eggs
1 cup sugar
1/4 cup all-purpose flour
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sliced almonds
1/2 cup shredded sweetened coconut
1/2 cup maraschino cherries, drained and chopped

Steps:

  • Preheat the oven to 350F. Spray an 8×8-inch baking dish with nonstick cooking spray. Alternately, line the pan with parchment paper or foil and spray with nonstick cooking spray.
  • In a medium bowl, mix the 1 cup flour, butter and powdered sugar until it resembles fine crumbs. Press into the prepared baking dish. Bake for 10 minutes.
  • Meanwhile, in another medium bowl, lightly beat the eggs. Add in the sugar, flour, vanilla, baking powder and salt and mix until combined. Stir in the almonds, coconut and cherries. Spread over the crust.
  • Bake until golden brown, about 25 to 30 minutes. Cool completely before cutting into bars.

Steps:

  • In a small bowl, combine the graham cracker crumbs and butter. Press into an ungreased 13-in. x 9-in. baking pan. Combine milk and coconut; carefully spread over crust. Bake at 350° for 18-20 minutes or until lightly browned. , In a microwave, combine the chocolate chips and peanut butter; stir until smooth. Microwave 30-60 seconds longer or until chips are melted; stir until smooth. , Spread over warm bars. Garnish with almonds. Refrigerate for 1 hour before cutting.

⅔ cup honey
½ cup creamy peanut butter

3 tablespoons coconut oil
1 teaspoon vanilla extract
1 teaspoon salt
½ cup mini semisweet chocolate chips

Steps:

  • Line a 9x13-inch baking pan with a piece of parchment paper that is large enough to go up all sides of the pan.
  • Combine oats, rice cereal, coconut, almonds, and cherries in a large mixing bowl and set aside.
  • Combine honey, peanut butter, brown sugar, coconut oil, vanilla extract, and salt in a small saucepan. Heat over medium heat until brown sugar is melted; continue to simmer for 1 minute more. Pour heated mixture into the dry ingredients and stir to fully combine. Stir in chocolate chips.
  • Pour granola into the prepared baking pan and press firmly with a nonstick spatula or lightly oiled hands to tightly compact and distribute evenly throughout.

3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. 3/4 cup cold butter
1 egg, slightly beaten
1 cup flaked coconut
1/2 cup sliced almonds
2/3 cup cherry preserves (from 12-oz jar)
1/3 cup dried cherries, coarsely chopped
1 teaspoon almond extract

Steps:

  • Heat oven to 350°F. Spray bottom only of 8-inch square pan with cooking spray.
  • In large bowl, place cake mix. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. Set aside 3/4 cup crumb mixture. Add egg to remaining crumb mixture in bowl, stirring just until blended. Press mixture in bottom of pan. Bake 15 minutes or until light golden brown around edges.
  • Meanwhile, in small bowl, mix coconut, almonds and reserved crumb mixture; set aside. In small microwavable bowl, microwave preserves on High 45 to 60 seconds or until warm and slightly melted. Stir in dried cherries and almond extract. Spoon warm preserves over partially baked crust. Sprinkle with reserved coconut mixture.
  • Bake 20 to 25 minutes longer or until golden. Cool on cooling rack 1 hour. Cut into 4 rows by 4 rows.

1/4 teaspoon salt
1 cup coconut
1 cup maraschino cherry, drained and chopped
1/2 cup pecans, chopped
1/4 cup shortening, soft
2 cups icing sugar
1/2 teaspoon almond extract
3 -4 tablespoons milk

Steps:

  • Preheat oven to 350*.
  • Combine flour, baking soda, oats and brown sugar.
  • Cut in shortening until crumbly.
  • Press into a 9 x 13 pan, and bake for 10 minutes.
  • Beat eggs, brown sugar and almond extract thoroughly.
  • In a separate cup, mix together the flour, baking powder and salt.
  • Add to the egg/sugar mixture and blend well.
  • Stir in the coconut, cherries and pecans.
  • Spread evenly over crust.
  • Bake for 25 minutes or until lightly brown.
  • Cool completely before icing.
  • Beat all icing ingredients together until smooth and creamy.
  • Spread or over the baked mixture.

1 egg, beaten

1 tablespoon almond extract
2 cups icing sugar, sifted
1/3 cup chopped maraschino cherry

Steps:

  • Bottom Layer: Cook butter, sugar, cocoa, vanilla and beaten egg in a saucepan over low heat, stirring constantly, until mixture begins to thicken. Remove from heat and stir in coconut, graham crumbs and almonds. Pat firmly into 9 x 13 pan. Chill for at least 1 hour.
  • Filling: Cream butter, cherry juice and almond extract. Gradually beat in icing sugar to make a smooth spreading consistency. Stir in cherries. Spread over the first layer in the pan. Chill until firm.

  • Press 2/3 of the mixture onto the bottom of the prepared baking pan then spread the cherry preserves on top. Finish with the remaining oat mixture by pressing lightly on top of the preserves.
  • Bake for 35-40 minutes, rotating the pan halfway through the baking time. The top should be golden brown. Cool in the pan on a wire rack and don't slice into bars until everything has set, about three hours. Cut into squares and serve.
