Steps:
- In a large pot, cover potatoes and garlic with water by 1 inch. Bring to a boil, add salt and simmer until tender, about 15 minutes. Drain well.
- Put the potatoes and garlic back in the pot and cook over low heat to evaporate the rest of the water. Mash in the butter with a potato masher. Add the heavy cream in stages until the desired consistency reached. Season with salt and pepper.

- Place ingredients, except jello in a large bowl; sprinkle jello over last and Mix in slowly as you pour. Mix well. Form into ball the size you like. If putting in sticks let balls air dry for about 1 hour before inserting stick. Let balls air dry or chill slightly, 10 minutes. They will harden in a few days if not eaten within 24 hours.( I guess you have suckers then-lol)

- If using homemade shredded coconut, then you can find out how to make it on my blog. Alternatively, use unsweetened desiccated coconut and begin by mixing the coconut with the condensed coconut milk until thoroughly combined.
- Form this mixture into coconut balls and leave to chill in the fridge (use my images for size reference).
- Meanwhile, melt the dark chocolate and dip each coconut ball into it. You can use whatever method you prefer. However, I like to use wooden skewers to dip the balls into the chocolate and then leave to dry on a wire cooling rack. Leave a piece of baking paper underneath to catch any chocolate drippings.
- Chill once more and enjoy!

- Blend all the dry ingredients in a food processor until well combined.
- Add in wet ingredients and pulse till a sticky dough is formed.
- Roll dough into balls and coat with desiccated coconut and lemon zest.
- Leave in the refrigerator to set for at least an hour.
- Serve.
