Coconut Berry Cooler Food

WATERMELON-COCONUT COOLER

Steps:

• Blend 8 cups frozen cubed watermelon with 8 ounces lemon vodka, 7 ounces simple syrup (see No. 17) and a 17.5-ounce can coconut juice. Serve with watermelon wedges.

SUNNY'S GRAPEFRUIT-COCONUT COOLER

Steps:

• Combine the grapefruit juice, cream of coconut and agave in a small pitcher or bowl and stir to blend. Pour into a glass over ice.

FREEZER CHOCOLATE COCONUT WALNUT COOKIES

Steps:

• Mix together sugar, cocoa powder, and salt in a saucepan. Stir in milk and butter. Turn heat to medium and bring to a boil. Cook for 1 1/2 minutes. Remove from heat.
• Stir the hot mixture continuously while adding flaked coconut, quick oats, old-fashioned oats, walnuts, peanut butter, and vanilla extract. Mix well. Spoon onto waxed paper-lined cookie sheets and freeze for 3 hours.

COCONUT BERRY COOLER

Steps:

• In large bowl, combine all ingredients. Serve over ice.

CHOCOLATE COCONUT COOLER

Steps:

• PLACE coconut milk and 2/3 cup topping in blender container. Cover and process until blended. Add ice cream. Cover and process until smooth.
• DIVIDE evenly into 4 (8 oz.) tall glasses. Top with whipped cream. Drizzle with additional topping. Sprinkle with coconut.

COCONUT CREAM COOLER

Steps:

• Combine the pineapple juice, cream of coconut, orange juice concentrate, water, and almond extract in a large container.
• Stir well.
• Serve over ice.

BERRY BERRY COOLER

Steps:

• In blender container combine berries and apple juice concentrate.
• Cover and blend until smooth.
• Pour into pitcher and slowly stir in carbonated water.
• Pour over ice cubes or Berry Ice Cubes in tall, chilled glasses.
• Serve immediately.
• Optional: Fill 2 ice-cube trays with fresh berries, add water and freeze until firm.
• Add to cooler as a substitute for ice cubes.
