Steps:
- Prepare crust.
- Stir together cocoa, sugar, cornstarch and salt in medium saucepan.
- Gradually add milk, stirring until smooth.
- Cook over medium heat, stirring constantly, until mixture comes to a boil; boil 1 minute.
- Remove from heat; stir in butter and vanilla.
- Pour into prepared crust.
- Press plastic wrap directly onto surface.
- Cool to room temperature.
- Refrigerate 6 to 8 hours.
- Top with whipped cream.
- Cover; refrigerate leftover pie.

I belong to several senior groups, and my Cocoa Pie always receives compliments when I bring it to their covered-dish luncheons. These days, I especially like recipes such as this one that are quick to make and require ingredients I have on hand.

GRANDMA'S COCOA MERINGUE PIE
This is a chocolate custard pie recipe my grandmother taught me many years ago. It's always a big hit at church functions, charity bake sales, or family get-togethers.

- Preheat oven to 425 degrees F (220 degrees C.)
- In a large saucepan or double boiler combine flour, cocoa powder, 1 cup of sugar, and salt. Mix well, then stir in milk and egg yolks. Whisk until all ingredients are thoroughly combined. Cook over medium heat, stirring constantly, until mixture is thickened. Remove from heat and stir in vanilla extract. Pour mixture into baked pie shell.
- In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar and vanilla, continuing to beat until stiff peaks form. Spread meringue over pie, covering completely.
- Bake in the preheated oven for 8 to 10 minutes, or until top is lightly browned. Remove and allow to cool before serving.

CHOCOLATE PIE
Steps:
- For the crust: In a food processor, pulse the graham crackers and sugar until crumbs form. Pour in the butter and continue to pulse until the crumbs are coated. Press the mixture firmly into the bottom of a 9-inch pie plate. Set aside.
- For the filling: In a small saucepan, heat the milk until hot but not simmering. To a medium saucepan, add the sugar, flour and cocoa and whisk together well. Lightly beat the egg yolks (saving the whites for the meringue) and pour into the flour mixture. Slowly add the hot milk, stirring. This will create a paste in the beginning, ensuring that the chocolate and flour blend smoothly. Place over medium heat and cook, stirring constantly, until very thick, about 5 minutes. The mixture will start to bubble sporadically; continue to stir and cook for another 2 minutes. Remove the pan from the heat and stir in the butter, vanilla and salt. Stir until the butter is completely incorporated.
- Pour the filling into the crust and chill in the refrigerator, about 45 minutes.
- For the meringue: Preheat the oven to 325 degrees F. With an electric mixer, beat the egg whites with the salt until stiff. With the mixer running, gradually add the sugar and beat until the whites are smooth and glossy. Spread the meringue on the pie, reaching the edges of the crust to seal in the filling. Bake until brown, 15 to 20 minutes. Cool completely before serving.
COCOA PECAN PIE
This version of pecan pie includes cocoa, which darkens the color, adds complexity to the flavor and hints at even greater indulgence without, miraculously, adding fat.

- Heat oven to 375 deg F.
- Spray 9-inch pie pan with nonstick cooking spray.
- Lightly spoon flour into measuring cup; level off.
- In medium bowl, combine flour, graham cracker crumbs and sugar; mix well.
- Add margarine; mix well.
- Press firmly in bottom and up sides of sprayed pie pan.
- In large bowl, combine brown sugar and cocoa; mix well.
- Aded all remaining filling ingredients except pecans (corn syrup to egg whites); stir until smooth.
- Stir in pecans.
- Pour into crust.
- Bake at 375 deg F for 28 to 38 minutes or until center is puffed and knife inserted in center comes out clean.
- Cool on wire rack for at least 1 hour or until completely cooled.
- Serve at room temperature or refrigerate until serving time.
- To serve, spoon or pipe whipped topping around edge of pie.

- Mix cocoa, cornstarch, beaten egg yolks; sugar and salt, then add milk gradually, while stirring in a pot over med-high heat. Cook until thick, beating it smooth. While stirring, mix in the vanilla. Cream pies take some time to thicken, so stir... and stir (10 to 15 minutes). Using a heavy bottom pan really helps. Just keep it up until it thickens. Pour into a pre-baked pie shell. Put in the fridge to chill for several hours before serving. Add whipped cream, cool whip, or a baked meringue for the topping if you like :)

- 1. Bake the pie shell on 375 to 400 degree temp. This should take approximately 10 to 15 minutes so begin watching your pie shell that last 5 minutes due to varying ovens.
- 2. In a microwaveable mixing bowl, mix cornstarch, cocoa, sugar and salt thoroughly-- breaking up all cornstarch lumps; stir in slightly beaten egg yolks. With an electric mixer, mix all together as you add a tablespoon of the whole milk. (Scrape down the sides of the mixing bowl with spatula to blend all thoroughly.) Add another tablespoon of whole milk and mix all very thoroughly and then add another tablespoon of the milk until the pie filling is very creamy and without any lumps. Now slowly add a 1/2 cup of milk at a time until all milk is thoroughly blended in.
- 3. Place mixing bowl of uncooked pie filling in the micorwave and cook on high for 3 minutes. Stir using a spatula, raking down the sides of the bowl. Cook on HIGH for 3 more minutes, stopping around the 1 1/2 minute mark to blend the chocolate pie filling together. Continue to cook on high for another 1 1/2 minutes or until the chocolate pie filling is thick like pudding. *TIP* (Sometimes, I pull the bowl out of the microwave oven around the 4th to 5th minute to mix the pie filling very thoroughly with the electric mixer.)
- 4. Once it is cooked, which it should be cooked around the 6th to 7th minute, add two tablespoons of butter and then 1 teaspoon of vanilla; stir and allow to cool at room temperature an hour or two.
- 5. Add cooked and cooled pie filling to cooked pastry pie shell.
- 6. *Meringue* To make meringue, beat the 3 egg whites until stiff (approximately 4 to 5 minutes. (When you begin beating on high speed of mixer, add your 1/4th tsp of Cream of Tarter and then slowly add a tablespoon of sugar at a time until 1/2 cup of sugar is blended.) Bake in oven @ 375 to 400 degrees for several minutes to 5 minutes, until meringue is light golden brown. Chill in refrigerator for several hours before serving.
