COCONUT BREAD

I've received many requests for this recipe. It's easy to make and just a little different from other quick breads I've tried.

Yield 2 loaves.

Number Of Ingredients 11

2 cups sugar
3/4 cup vegetable oil
4 large eggs
2 teaspoons coconut extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the sugar, oil, eggs and extract. Combine the flour, baking powder, baking soda and salt; add to sugar mixture alternately with buttermilk, stirring just until moistened. Fold in coconut and walnuts. , Pour into two greased 8x4-in. loaf pans. Bake at 325° for 60-65 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes in pans before removing from pans to wire racks to cool completely.

1 1/4 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1 cup semisweet chocolate chips
2 large eggs
1/2 cup plain yogurt or sour cream
1 teaspoon vanilla extract
1 teaspoon grated orange zest (optional)
1 cup mashed banana
1 cup confectioners' sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons milk
1/4 teaspoon vanilla extract
Pinch of salt

Steps:

  • Make the banana bread: Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan or three 6-by-3-inch mini loaf pans.
  • Whisk the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a large bowl. Add the chocolate chips.
  • Whisk the eggs, melted butter, yogurt, vanilla and orange zest (if using) in a medium bowl. Stir in the mashed banana. Fold the banana mixture into the flour mixture until just combined.
  • Spread the batter in the prepared pan(s). Bake until a toothpick inserted into the center comes out clean, about 55 minutes for a standard loaf or 35 to 40 minutes for mini loaves. Cool 30 minutes in the pan(s) on a rack, then turn out onto the rack to cool completely.
  • Make the glaze: Whisk the confectioners' sugar, cocoa powder, milk, vanilla and salt in a bowl. Pour over the cooled banana bread and let set, 15 to 20 minutes.

1/2 teaspoon baking powder

1 1/4 cups light brown sugar
3 ounces unsweetened chocolate, chopped
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour (see Cook's Note)
1/2 cup granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
1 large egg, at room temperature
3 very ripe bananas, mashed
1/3 cup sour cream
1 stick (8 tablespoons) unsalted butter, melted
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter
2 ounces unsweetened chocolate
1 cup confectioners' sugar
3 to 4 tablespoons boiling water, plus more if needed
1 cup toasted walnuts, coarsely chopped

Steps:

  • For the brownies: Preheat the oven to 350 degrees F. Line a 9-by-13-inch glass baking dish with aluminum foil so that 2 inches hang over each end.
  • Whisk the flour, cocoa powder, baking powder and salt together in a small bowl. Bring the butter, brown sugar and 1/2 cup water to a simmer in a saucepan, then turn off the heat. Whisk in the unsweetened chocolate, then let cool slightly. Whisk in the eggs and vanilla. Stir in the flour mixture. Set aside while you make the banana bread.
  • For the banana bread: Whisk the flour, granulated sugar, baking soda, cinnamon and salt together in a medium bowl. Beat the egg in a large bowl. Add the bananas to the egg and mix to combine well. Stir in the sour cream, melted butter and vanilla. Stir in the flour mixture until just combined.
  • Use a medium ice cream scoop to dollop about half of the banana bread batter in the prepared baking dish. Spoon or pour the brownie batter around the banana bread batter (it will cover it partially). Scoop the remaining banana bread batter over the top, making sure some brownie batter still shows through. Bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool in the baking dish on a rack, about 1 hour.
  • Lift the brownies out of the pan using the foil overhang, but leave in the foil.
  • For the topping: Combine the butter and chocolate in a small heatproof glass bowl. Microwave in 30-second intervals, stirring in between each, until melted. Sift the confectioners' sugar into a medium bowl. Whisk in the melted chocolate and the boiling water to make a smooth glaze, adding a little more water if it is too thick to drizzle. Drizzle the glaze over the top of the brownies with a spoon. Sprinkle the walnuts all over. Let the glaze set, about 30 minutes. Cut into squares and serve.

1/2 cup unsweetened finely grated coconut
2 tablespoons sugar
1 (1/4 ounce) package active dry yeast
1/2 cup warm water
3 1/2 cups flour, plus more for kneading

Steps:

  • Put coconut, sugar, yeast and water into a small non-reactive bowl and stir briefly.
  • Set aside until mixture is swollen and bubbly, about 15 minutes.
  • Mix flour and salt together in a large bowl.
  • Add yeast mixture, coconut milk and butter; using your hands or a wooden spoon, stir until well combined.
  • Turn dough out onto a well-floured surface and knead, dusting with more flour as necessary, until soft and elastic, 5 to 6 minutes.
  • Form dough into a ball, dust generously all over with flour and transfer to a clean large bowl.
  • Cover bowl with a kitchen towel and set aside in a warm spot to let rise until doubled in size, about 1 1/2 hours.

1 package active dry yeast or 18 grams fresh yeast
1/2 teaspoon sugar
1/3 cup plus 1 tablespoon lukewarm water
4 1/2 cups unbleached all-purpose flour
1/2 cup plus 2 tablespoons sugar
1/3 cup unsweetened cocoa powder
2 teaspoons salt
1 1/4 cups lukewarm water
1 egg yolk
1 tablespoon butter, room temperature
1 cup unsweetened chocolate chips

Steps:

  • Stir the first 3 ingredients in a large mixing bowl; let stand until foamy, about 10 minutes. Mix the flour, sugar, cocoa and salt in another bowl. Stir 1 1/4 cups water, the egg yolk and butter into dissolved yeast; then stir in the flour mixture, 1 cup at a time, with your hands. Stir in the chocolate chips last. Knead on a lightly floured surface until velvety, elastic and moist, 8 to 10 minutes.
  • If done in a mixer, follow the same stages but add the chocolate chips together with the flour using the paddle. When it is blended, change to the dough hook and knead 2 minutes at low speed then 2 minutes at medium speed.
  • Place the dough in an oiled bowl, cover with plastic wrap and let rise about 2 hours.
  • Punch the dough down and cut in half. Shape into round loaves and place on an oiled baking sheet. Cover with a towel and let rise until doubled, about 1 hour.
  • Preheat the oven to 450 degrees F.
  • Bake for 15 minutes, reduce the heat to 375 degrees F and bake 30 minutes longer. Cool on a rack. Slice and enjoy for breakfast or a snack.

1/4 cup unsweetened cocoa
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup dark brown sugar, packed
1 large egg
1 cup milk
1/3 cup canola oil
1 teaspoon vanilla
1 cup walnuts, chopped
3/4 cup semi-sweet chocolate chips
1/2 cup chopped pitted dates or 1/2 cup dried apricot (optional)
2 tablespoons chopped walnuts
2 tablespoons semi-sweet chocolate chips

Steps:

  • Preheat oven to 350º.
  • Lightly grease and cocoa pans; tap out excess cocoa.
  • In a medium mixing bowl, whisk together cocoa, flour, baking powder, baking soda, and salt.
  • In a large bowl, using a whisk or an electric mixer, blend together sugar, egg, milk, oil and vanilla.
  • Slowly add in the dry ingredients, beating just until combined.
  • Stir in walnuts, chocolate chips, and dates.
  • Turn batter into the baking pans, sprinkle with nuts and chocolate chips.
  • Bake 55 to 60 minutes for a large loaf, about 25 minutes for mini loaves or until tester inserted in bread comes out clean.
  • Cool in pan on wire rack 10 minutes, take out of pan and cool completely on the rack.

  • Line a loaf pan with greaseproof paper and grease, set aside. Preheat oven to 350F.
  • Sift flour, baking powder and spices, set aside.
  • Cream butter and sugar till light and fluffy. Add eggs one at a time, beating well with each addition. If you fear of splitting, a tb. of the flour mix can be added with each egg.
  • Add vanilla (and rum if using) to milk and add alternatively with flour mixture to creamed mix.
  • Fold in raisins and coconut. Sprinkle top with more coconut and sugar.
  • Bake for at 1 hr before testing doneness.

3 -4 bananas, very ripe, mashed to equal 1 1/4 cups, plus
1 whole banana (to garnish)
2 extra-large eggs
1 1/2 teaspoons pure vanilla extract
4 ounces unsalted butter, chilled and cut into 1 inch cubes
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1 teaspoon ground cinnamon
3/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves (scant)
1 tablespoon poppy seed
1/2 cup granulated sugar, plus
1 teaspoon sugar, extra for sprinkling
6 tablespoons light brown sugar, lightly packed
1 1/2 cups unbleached all-purpose flour

Steps:

  • Lightly coat a six cup capacity loaf pan, with melted butter.
  • Adjust the oven rack to the middle position and preheat the oven to 325°F.
  • Spread the nuts on a baking sheet and toast in the oven until lightly browned, about 8-10 minutes.
  • Shake the pan halfway through to ensure that the nuts toast evenly.
  • Cool, chop coarsely; set aside.
  • Turn the oven up to 350°F.
  • In a medium bowl, whisk the banana puree, eggs, and vanilla extract to combine.

  • Add the sugars and turn the mixer up to medium, mixing another 3 to 4 minutes until fluffy, scraping down the sides of the bowl as needed.
  • Add the flour and banana mixture alternately in three batches, beginning with the flour, mixing until just combined.
  • Remove the bowl from the mixer and fold in the nuts.
  • Pour the batter into prepared loaf pan to just below the rim.
  • Cut two 1/4 inch thick strips from the remaining banana, slicing down the entire length.
  • Arrange the two C-shapes on top of the loaf, staggered, with the two ends slightly interlocking with each other in the center.
  • Sprinkle about one teaspoons of granulated sugar over the surface.
  • Bake for 50-60 minutes until nicely browned and firm to the touch.
  • Do not slice bananas for the top too thickly or they will sink.
