CHOCOLATE BANANA BREAD



Chocolate Banana Bread image

Nothing tops old-fashioned banana bread, except maybe this chocolate version! Each slice is studded with nuts. -Connie Deke, DeWitt, Nebraska

Number Of Ingredients 11

1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup mashed ripe bananas (about 2 medium)
1/4 cup milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped nuts, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar. Add eggs, bananas, milk and vanilla. Combine the flour, cocoa, baking soda and salt; add to the banana mixture and mix just until combined. Fold in nuts if desired. Transfer to a greased 9x5-in. loaf pan., Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

This recipe makes the best naan I have tasted outside of an Indian restaurant. I can't make enough of it for my family. I serve it with shish kabobs, but I think they would eat it plain.

Number Of Ingredients 9

1 (.25 ounce) package active dry yeast
1 cup warm water
¼ cup white sugar
3 tablespoons milk
1 egg, beaten
2 teaspoons salt
4 ½ cups bread flour
2 teaspoons minced garlic
¼ cup butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.
  • Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.
  • During the second rising, preheat grill to high heat.
  • At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

2 cups flour
1 cup cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
8 tablespoons butter, softened
3/4 cup sugar
1/2 cup packed brown sugar
2 eggs
2 ripe bananas, mashed
3/4 cup buttermilk
1/2 cup bittersweet chocolate chips

Steps:

  • Preheat oven to 350. Butter a 9x5 inch loaf pan and place in on an insulated baking sheet (can use 2 regular sheets stacked together).
  • Sift together flour, cocoa, baking powder, baking soda, and salt.
  • Cream butter and sugars together.
  • Add eggs, one at a time.
  • Reduce mixer speed to low and mix in bananas.
  • Add dry ingredients in 3 additions, mixing only until ingredients are mixed together.
  • Beat in buttermilk on low speed.
  • Stir in chocolate chips.
  • Scrape batter into pan.
  • Bake for 30 minutes, then cover loosely with a foil tent to prevent from overbrowning.
  • Bake for another 40-45 minutes, or until tests done.
  • Remove and cool for at least 20 minutes before running a knife around the edge of the pan, then turning it out of the pan.
  • Cool to room temperature (make sure bread is right side up while cooling).

In my opinion, this is the absolute best banana bread out there. I got it through a mail order recipe club called "Grandma's Kitchen". It is so easy to make, and it seems like everyone always has some ripening bananas that they're trying to get rid of!

5 tablespoons butter
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
2 egg whites
1 teaspoon vanilla extract
2 ripe mashed bananas
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup heavy cream
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees, and spray bottom of a 9 inch round pan with non-stick cooking spray.
  • Beat butter in a large bowl with an electric mixer until light and fluffy.
  • Add granulated Sugar and brown sugar; Beat until well blended.
  • Add egg, egg whites and vanilla; blend.
  • Mix in the mashed bananas, and beat the mixture on high speed for 30 seconds.
  • In a separate bowl, combine flour, baking soda, salt and baking powder.
  • Add flour mixture to butter mixture alternately with the cream, ending with the flour mixture.
  • Mix in the walnuts.
  • Pour batter evenly into prepared 9 inch round pan (or loaf pan).
  • Bake until golden brown, and toothpick inserted near the center comes out clean (About one hour).

½ cup buttermilk
2 eggs
½ cup vegetable oil
1 cup white sugar
2 small very ripe bananas, sliced
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
⅛ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • In a blender, combine milk, eggs, oil, sugar, banana pieces, and vanilla extract. Process until smooth. In a large bowl, sift together all the flour, cinnamon, baking powder, baking soda, and salt. Add banana mixture to dry ingredients. Mix well. Stir in nuts. Pour batter into prepared pan.
  • Bake in preheated oven for 55 to 60 minutes until golden brown, an a toothpick inserted into center of the loaf comes out clean.
