3/4 cup all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, at room temperature
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg
3/4 cup sweetened coconut flakes
1/2 cup semisweet chocolate chips
1/2 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F. Cover 2 sheet trays with parchment paper.
  • Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl.
  • Add the butter and sugars to a large bowl and beat with an electric hand mixer until light and fluffy, about 4 minutes. Add the vanilla and egg and beat until incorporated. Add the flour mixture in increments, beating until well combined. Briefly beat in the coconut flakes, chocolate chips and pecans until mixed together. Using your hands, roll the dough into walnut-size balls and drop 8 on a sheet tray, leaving 2 1/2 inches of space between them. Flatten them slightly. Bake 13 minutes. Let cool on the sheet tray 5 minutes.

1/2 tsp Cinnamon
1 tbs Raw Coconut Nector
1 tbs Raw Heavy Cream or Nutiva Coconut Manna
1 tbs Raw Cocoa
1 cup Go Raw Chocolate Granola

Steps:

  • 1. Before mixing, the ingredients should all be at room temperature. 2. Stir in the granola after all of the other ingredients have been thoroughly blended together. The heavy cream can be substituted with coconut manna. 3. Refrigerate after all of the ingredients have been mixed. The coconut oil content will cause the mixture to solidify in the refrigerator.

8 ounces cream cheese
16 ounces Cool Whip
1 cup powdered sugar
1 cup coconut
2 (3 1/2 ounce) packages instant coconut pudding mix
5 cups milk

Steps:

  • Cream flour and butter together.
  • mash in bottom of 9 x 13 inch pan 1/4 inch thick.
  • sprinkle chopped nuts over mixture.
  • bake 20 minutes at 350 f.
  • cool.
  • beat cream cheese, 8 ounces cool whip, and powdered sugar together.
  • spread over pastry.
  • sprinkle coconut over this mixture.
  • mix pudding and milk.
  • spread on top of coconut.
  • spread remaining cool whip on top.
  • sprinkle with more coconut.
  • keep in refrigerator at least 2 days before serving. (this step is not necessary, but it does taste better.).

2-1/2 cups confectioners' sugar
1/3 cup mashed potatoes (prepared without milk and butter)
1 cup semisweet chocolate chips
1 tablespoon shortening
Chopped walnuts, optional

Steps:

  • In a large bowl, combine coconut, sugar and mashed potatoes; mix well. Roll into 1-in. balls; place on waxed paper-lined baking sheets. In a microwave or double boiler, melt chocolate chips and shortening; stir until smooth. Dip the balls into chocolate and then walnuts if desired. Return to waxed paper until chocolate is set.

One of the parent's of my mom's student gave this to her! It is so easy and it makes the cake ever! The crust is delicious! I love it with a scoop of ice cream and some of the rest of the family like it with whipped cream! Enjoy! The amount of oil, water and eggs will depend on the brand of cake mix you use, make sure you use the amount as recommended by the cake mix YOU are using!!! Cook time will also depend on the cake mix you use -- I like Betty Crocker best. Also, this needs to be cooked in a bundt pan. That way you get a really yummy crust on top.

3/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup butter, softened
1 1/2 cups packed light brown sugar
1/2 cup granulated sugar, plus
1 tablespoon granulated sugar, divided
2 eggs
1 teaspoon vanilla
1 cup chopped pecans, divided
1 (9 -12 ounce) package chocolate-covered caramel candies (I use Dove brand)
4 -6 ounces white chocolate chips

Steps:

  • Preheat oven to 375°F.
  • Combine flour, cocoa, baking powder and baking soda in medium bowl; set aside.
  • Beat butter, brown sugar and 1/2 cup granulated sugar with electric mixer at medium speed until light and fluffy; beat in eggs and vanilla.
  • Gradually add flour mixture and 1/2 cup pecans; beat well.
  • Cover dough; refrigerate 15 minutes or until firm enough to roll into balls.
  • Place remaining 1/2 cup pecans and 1 tablespoons sugar in shallow dish. Roll tablespoonful of dough around 1 caramel candy, covering completely; press one side into nut mixture.
  • Place, nut side up, on ungreased cookie sheet. Repeat with additional dough and candies, placing 3 inches apart.
  • Bake 10 to 12 minutes or until set and slightly cracked. Let stand on cookie sheet 2 minutes.
  • Transfer cookies to wire rack; cool completely.
  • Place white chocolate chips in a small resealable plastic freezer bag; seal bag.
  • Microwave at MEDIUM (50% power) 2 minutes. Continue microwaving in one minute intervals at 50% power until melted.
  • Knead bag until chocolate is smooth. Cut off tiny corner of bag; drizzle chocolate onto cookies.
  • Let stand about 30 minute or until chocolate is set.

1 (18 ounce) box chocolate cake mix (I recommend Betty Crocker Devils Food)
2 eggs
1/3 cup oil
1 1/2 cups coconut flakes (I use store brand for mine, but anything works)
6 ounces sweetened condensed milk

Steps:

  • Preheat oven to 375 degrees.
  • Hand mix cake mix, eggs, and oil in a large bowl. This will be extremely messy. Do this until batter is firm and holds together well.
  • In a separate bowl hand mix coconut, and milk; adding the milk slowly till mixture is moist.(You may not need all of the milk depending on the brand of coconut).
  • Take teaspoon sized amounts of dough and flatten. (I found if works best if I flatten against my palm). Place a generous pinch of coconut mixture and place in the center of the flattened batter. Roll the dough so that the coconut is not exposed. (pinch the sides closed if needed).
  • Place on a cookie sheet and bake for 8-12 minutes. Move onto wire rack to cool.
