One of my favourite muffins, sweeter than most breakfast muffins but still a long way from being cupcakes in disguise which too many muffins are. NOTE: I have adjusted the quantity of flour thantks to my reviewers.

Number Of Ingredients 11

2 cups mashed ripe bananas
2 large eggs
3/4 cup buttermilk
3 tablespoons vegetable oil
1 teaspoon vanilla
1 2/3 cups whole wheat flour
1/2 cup cocoa, sifted
3/4 cup dark brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Butter or put paper cups in muffin pan.
  • Mash bananas.
  • Whisk in eggs, buttermilk, vegetable oil and vanilla.
  • Mix the dry ingredients.
  • Be sure to sift the cocoa.
  • Mix wet and dry ingredients until just blended.
  • Spoon the batter into the muffin cups.
  • Bake for 20-25 minutes, until done.
  • If you like, lay a slice of banana over each muffin before baking.

1 medium egg, beaten

½ teaspoon salt
1 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with 12 paper liners.
  • Combine mashed banana, oil, milk, egg, and vanilla extract in a medium bowl. Sift flour and cocoa powder into a large bowl. Add sugar, baking powder, and salt into the flour mixture; mix to combine. Add wet ingredients to dry ingredients, mixing until just combined. Batter should be wet enough to scoop into muffin liners; add a little extra milk if your mixture is too dry.
  • Stir chocolate chips into batter. Scoop batter into muffin liners.
  • Bake in the preheated oven until tops spring back when lightly pressed, 12 to 15 minutes.

⅓ cup white sugar
2 tablespoons Dutch process cocoa powder

Steps:

  • In a large bowl combine the flour, sugar, cocoa powder and baking powder.
  • In another bowl, blend the bananas, oil and egg together. Add to dry ingredients, mixing just until blended. Fold in the chocolate chips. Spoon the batter into a greased muffin pan, filling three-fourths full.
  • Bake in a preheated 425 degree F(220 degrees C) for 15 to 20 minutes. Remove the muffins to a wire rack to cool completely.

½ cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups mashed bananas

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. Add the egg and the vanilla and beat until well combined. Stir in the mashed banana, set aside.
  • Stir together the flour, baking soda, baking powder, and salt in a separate large bowl, and make a well in the center. Pour the banana mixture into the well and stir just until combined.
  • Remove half of the batter from the bowl. Mix the cocoa powder into the batter remaining in the bowl and stir well. Spread the cocoa batter in the bottom of the prepared pan. Spoon the remaining batter on top and use a knife to swirl the batter into a marbled design.

I found this recipe on vegcooking.com and modified it. They are so moist and delish! I add 1 cup of raisins, can also use nuts or chocolate chips.

1 cup sugar
3 ripe bananas, mashed
2 cups flour (use less for whole wheat flour)
1 teaspoon baking soda
1 teaspoon salt (optional)

Steps:

  • Mix melted margarine, sugar and bananas together.
  • Sift flour, baking soda and salt (if using) together.
  • Add to banana mixture.
  • Mix until well blended.
  • Add cocoa, continue to mix.
  • If mixture seems dry (due to whole wheat flour), add some of the water.
  • Mix in additives. My favorite is raisins!
  • Bake at 350°F for 25 minutes or until toothpick comes out clean.
  • OAMC: let cool and freeze.
