CROCK POT COCA-COLA PULLED PORK
This is a modified version of a friend's recipe for pulled pork. Hers is always a hit at potlucks. The only revisions I made to her original recipe were to suit my family's taste. This is the easiest, tastiest pulled pork. Set the Crock Pot before you leave the house for work and return home to a wonderful aroma and a main dish that is ready when you are. It turns out slightly sweet and smokey with a hint of heat. The Coca-Cola makes the meat fall-off-the-bone tender. I could make my own barbecue sauce but choose to use Famous Dave's Rich & Sassy sauce instead. It's easier, and my family loves it! Use your favorite brand of barbecue sauce if Famous Dave's brand is unavailable in your area. Serve on a burger bun or on its own and enjoy!

Steps:
- Place roast in a 5 quart crock pot. Season with garlic, onion, black pepper and cayenne pepper. Add liquid smoke and pour in Coca-Cola until it reaches nearly the top of the roast (or covers it depending on the cut of meat).
- Set Crock Pot on low heat and cook for 8-10 hours.
- When ready to serve, remove roast from Crock Pot to a platter. Remove any bones and trim all fat. With a fork, begin "pulling" pork apart into thin shreds. Add barbecue sauce and fold into meat.
- Serve pulled pork on a burger bun or on its own.
- Note: If preparing this dish for a potluck, pour 1 cup of Crock Pot liquid into a measuring cup and discard the remainder. Then return pulled pork to Crock Pot, set on warm or low heat setting, add 1/2 cup of reserved liquid (to keep the meat from drying out) and cover until ready to serve. If the meat is in the Crock Pot for more than one hour, add more liquid as needed for moisture.

- I usually buy a big roast and add lots of the veggies.
- Put roast in a crock-pot,sprinkle with onion soup mix.
- Add coke to almost cover the roast.
- Add carrots to liquid around roast and all other vegetables to top of meat.
- Cook all day on low (8-10 hours),or on high 5-6 hours.
- Liquid makes a great gravy.
COCA-COLA PORK ROAST
There are lots of cola/meat recipes on this site, this one is a little different. I found this in a crockpot cookbook that my folks gave me for Christmas. I tweaked it a bit, but still--great stuff!

- Rub the roast with salt and pepper then place it in the crockpot.
- Add soup mix and coke.
- Cook on low 8 hours or high for 4.
- Before serving dump liquid from crockpot into a pot.
- Skim fat.
- To the remaining juices add salt and pepper to taste and a dash of Kitchen Bouquet.
- Bring mixture to a boil.
- Remove a cup of the liquid and add corn starch to thicken.
- Add corn starch mixture to the rest of the juices.
- Cook until it reaches desired consistency.
- WONDERFUL GRAVY!

COLA-BRAISED POT ROAST
Steps:
- Preheat the oven to 325 degrees F.
- Season the roast well on all sides with 2 teaspoons of the salt and the pepper. On a cutting board combine the remaining salt, minced garlic and rosemary and, using the side of a knife, mash against the board repeatedly to form a paste. Using a small paring knife, make thin slits into the roast on all sides, about 2 inches apart, and fill the holes with the garlic-rosemary paste. Repeat until you have used all of the paste.
- Heat a Dutch oven over high heat and add the oil. When the oil is hot, add the roast and cook until very well browned on all sides, 10 to 12 minutes. Add the beef stock and cola and bring to a boil, scraping the bottom of the pan with a wooden spoon to release any browned bits. Add the tomato paste and stir to blend. The liquid should be about 1/2 way up the sides of the roast. Cover the Dutch oven, place in oven, and roast until the meat is fork-tender, about 3 1/2 hours, turning the meat every hour and adding extra water if necessary to keep the liquid level at about 1/3 up the sides of the roast.
- When the meat is fork-tender, remove the roast from the oven and carefully transfer the roast to a serving platter. Cover loosely to keep warm.
- Skim off as much of the fat from the surface of the cooking liquid as possible. Reserve 2 tablespoons of the fat in a small bowl and add the flour. Stir to make a smooth paste. Add 1/2 cup of the hot cooking liquid to the bowl and whisk to combine. Slowly whisk this mixture into the hot cooking liquid that remains in the Dutch oven and place over high heat on the stovetop. Cook, whisking frequently, until mixture comes to a boil and thickens. Continue to cook for about 5 minutes, or until the sauce is thick enough to coat the back of a spoon and any floury taste is gone. Taste and adjust seasoning, if necessary.
- Serve the roast with the hot gravy.

- Preheat oven to 350 degrees F (175 degrees C).
- Place meat in a roasting pan. Sprinkle carrots, celery and minced garlic around roast.
- In a small bowl, combine the brown gravy mix and water, mixing into a smooth paste. Add onion soup mix, cream of mushroom soup and cola-flavored carbonated beverage. Pour over the roast.

- Place beef in crock pot (slow cooker) and top with dry onion soup mix.
- Place vegetables around roast.
- Mix together the cream of mushroom soup and the Coca-Cola in a bowl and pour over roast.
- Set crock pot on low, cook for 6-8 hours. The longer you cook, the more tender the meat becomes. The liquid makes a great gravy! Pour the extras over the cut potatoes/mashed potatoes and the roast.
COCA COLA POT ROAST
Steps:
- Spray the inside of the slow cooker with cooking spray. Rinse and pat dry the pot roast. Drizzle with olive oil then rub with steak seasoning, black pepper and minced garlic on all sides. Center in the slow cooker.
- Arrange the carrots and onion wedges around the roast, placing a few onion wedges on top. Drizzle the Worcestershire sauce over the roast.
- Mix together the coca cola, brown gravy mix and Herbes de Provence until dissolved. Pour over the roast and vegetables. If adding potatoes, arrange the potato halves on top. If serving with mashed potatoes, omit.
- Season the vegetables with a light sprinkle of steak seasoning or seasoned salt and black pepper to your taste.
- Cook on low for 8-10 hours. To make the gravy, use a slotted spoon to remove the roast and vegetables from the slow cooker to a platter. Cover and keep warm.
- Pour the drippings into a saucepan, skimming any excess fat from the top.
- Thicken with cornstarch or a flour slurry to make the gravy, if desired.

SARASOTA'S 7-BONE CROCKPOT COCA-COLA POT ROAST
A classic dish, but I cut back on the cola for my version and add beef broth, tomato sauce and add a few more vegetables for my taste. - Roast -- This to me is an important step. Season the meat well with a mix of the flour, salt and pepper. Rub it in well on all sides of the meat. Then in a large pan add the oil and heat to medium high. Sear the meat on all sides until you get a nice crust and it begins to brown. Just a minute per side is all you need. This really helps the flavor in this dish. Then add your meat to the crock pot.
- Crockpot -- Add all the vegetables around your roast. I like to put the carrots, parsnips towards the bottom, then the potatoes and mushrooms, and last, add the onions over the top of the roast.
- Sauce -- Mix everything together in a small bowl and pour over the meat and vegetables. Turn your crockpot on low and cook 6-8 hours. Mine was tender in 6, but it really depends on whether you have a round or oval pot, and the newer models tend to cook a bit hotter. So, you know your crockpot best. Before serving, check if you want to add any additional pepper and add in the fresh parsley.
- Serve -- Remove the roast and vegetables and make sure to let the roast set 15 minutes before slicing. Serve with the gravy on the side. ENJOY!

- Season the outside of the roast on both sides with salt, pepper and garlic powder. Set your pressure cooker to saute. When hot, add oil. When the oil begins to shimmer, brown your chuck roast on both sides. Add the tomatoes with their juice, cola, broth, onions, celery and spaghetti sauce mix. Stir well until mix is dissolved.
- Add the roast to the pressure cooker. Nestle the roast in a little bit. Set the pressure cooker to high for 55 minutes. Let the pressure come down naturally for AT LEAST 10.Add the carrots and potatoes, set the pressure cooker to pressure for 5 minutes. Quick release the pressure when done.
- If you want to make a 'gravy' out of the liquid, remove the roast and veggies to a serving platter. Add 2 tablespoons of the liquid in the pot with 1 tablespoon cold water. Mix. Add 2 tablespoons cornstarch to the cooled mixture and stir. Turn the pot to to saute. Add to the cornstarch mixture to the pot of liquid and stir until thickened.
