Is it Coke? Or is it Pepsi? Really, it doesn't matter in baking or cooking.

Number Of Ingredients 20

PART 1:
1 c cola
1/2 c butter
1/2 c vegetable oil
1/2 c cocoa powder
22 large marshmallows
PART 2:
2 c flour
2 c sugar
1 tsp baking soda
1 c buttermilk
2 large eggs, beaten
1 tsp vanilla
COLA FROSTING:
1/4 c powdered cocoa
6 Tbsp cola
1/2 c butter
3 3/4 c powdered sugar (1 lb. box)
1 c nuts, chopped (your choice)
1 tsp vanilla

Steps:

  • 1. Preheat oven to 325 degrees. Prep cupcake tin with paper liners.
  • 2. PART 1:
  • 3. In a saucepan mix cola, butter, vegetable oil and cocoa powder. Bring to a boil, remove from heat and add marshmallows. Place lid on pan until marshmallows start to melt, stir well.
  • 4. PART 2:
  • 5. Mix flour, sugar and baking soda in a large bowl, add buttermilk, eggs, and vanilla, mix well.
  • 6. Combine Part 1 and Part 2 together, blend well.
  • 7. Spoon batter into cupcake liners 2/3 full.
  • 8. Bake for approximately 20 minutes. Do a toothpick test and if it comes out clean, it's done.
  • 9. Remove the cupcakes from the oven onto a wire rack to cool.
  • 10. COLA FROSTING:
  • 11. In a medium saucepan, mix together cocoa, cola and butter. Heat over medium heat until melted then bring to a boil.
  • 12. Remove from heat and add powdered sugar, nuts and vanilla, blend well.
  • 13. Make sure that the cupcakes are completely cooled.
  • 14. Let frosting cool until stiff enough to frost or pipe onto the cupcakes.

MOM'S CHOCOLATE COCA-COLA CAKE & FROSTING

This is the recipe my mom used to make my birthday cake when I was a little girl, and the recipe for my son's cake when he requests chocolate. It is very similar to the other Chocolate Coca-Cola Cakes, but the main difference is the little bit of cinnamon that is in it. It is our favorite chocolate birthday cake. For a prettier cake, you can use double-boiler seven minute frosting....it's not chocolate, but it does make a very pretty cake! It is a nice white frosting...almost like a meringue type frosting. Cook time does not include the 7 minutes for the white icing!

1/2 cup butter or 1/2 cup margarine
1/2 cup cooking oil
3 tablespoons cocoa
1 cup Coca-Cola
2 cups all-purpose flour
1/2 teaspoon cinnamon

1/2 cup buttermilk
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 1/4 cups miniature marshmallows
1/2 cup margarine
3 tablespoons cocoa
6 tablespoons Coca-Cola
1 (1 lb) box confectioners' sugar
1 teaspoon vanilla

Steps:

  • In a large bowl, mix together 2 cups flour, 1/2 tsp cinnamon, and 2 cups sugar.
  • In a heavy saucepan combine 1/2 cup margarine or butter, 1/2 cup oil, 3 tbsp cocoa, and 1 cup coke. Bring to a boil. Pour over the dry ingredients mixed earlier. Mix until blended.
  • In a small bowl, mix together 1/2 cup buttermilk and 1 tsp baking soda. Then add it to the mixture.
  • Add 2 eggs and 1 tsp vanilla and beat inches Then fold in the marshmallows.
  • Bake in a 13 x 9 x 2 inch pan for 30 to 35 minutes (or until a toothpick inserted in the middle comes out clean) in a 350 degree oven.
  • For the frosting: Place 1/2 cup margarine or butter, 3 tbsp cocoa, and 5 tbsp coke in a saucepan and bring to a boil. Add the confectioners sugar and vanilla. Mix well. If it is too thick, and a drop or two more of coke.
  • If you want the white 7 minute frosting: (These ingredients are not listed above!) In the top of a double boiler, combine 1 1/2 cups sugar, 1/4 cup + 1 tbsp cold water, 2 egg whites, 1 tbsp light corn syrup, and a dash of salt. Beat at a low speed of an electric mixer 30 seconds or just until blended. Place over boiling water; beat constantly on high speed 7 minutes or until stiff peaks form. Remove from heat. Add vanilla and beat 2 minutes or until frosting is thick enough to spread.

These Coca-Cola Cupcakes are a fun and flavorful dessert treat. They are rich, moist and chocolatey and have Coca-Cola in the cupcakes and the frosting!

2 cups all-purpose flour
⅛ teaspoon salt
1 ¼ teaspoon baking soda
¾ cup cocoa powder
2 cups Coca-Cola soda ((not diet or Coke zero))
½ cup (1 stick) salted butter
1 cup granulated sugar
¾ cup packed light brown sugar
2 large eggs
4 cups powdered sugar
4 tablespoons Coca-Cola soda
½ cup (1 stick) softened butter

Steps:

  • Preheat oven to 350 F and line a standard muffin tin with cupcake wrappers
  • In a medium mixing bowl combine flour, salt, cocoa powder, and baking soda. Mix until combined and set aside.
  • In a saucepan, over medium heat, combine Coca-Cola, butter, granulated sugar, and brown sugar. Stir and heat up until the butter is all melted, and the sugar is dissolved. 4-5 minutes. Don't make it boil. Let the mixture cool
  • Pour the cooled Coca-Cola mixture into a large mixing bowl.
  • *This step is important because if the Coca-Cola mixture is not cooled, when adding the eggs, you take a chance of the mixture to cook the eggs and the egg white will curdle
  • Add the eggs and mix.
  • Add the flour mixture to the Coca-Cola mixture, mix with a hand-mixer until all combined.
  • *NOTE* You can mix with a whisk, but you may have more lumps. I used a hand mixer.
  • Once all the flour is combined, stop, don't over mix.
  • Pour the batter into the prepared muffin pans to about 2/3 full
  • Bake in a preheated oven for 20-22 minutes or when you insert a toothpick into the center and come out clean.
  • Allow to cool completely while making the Buttercream.
  • In a large mixing bowl combine butter and powdered sugar (1 cup at a time)
  • Mix in the Coca Cola and mix until combined.
  • Scoop the buttercream into a piping bag with a star tip nozzle.
  • *NOTE* You can use a Ziploc bag for piping as well
  • Pipe the buttercream on all the cupcakes.
  • Serve and enjoy.

2 cups granulated sugar
1 3/4 cups all-purpose flour
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup half-and-half
1/2 cup canola oil
1 tablespoon pure vanilla extract
1 cup cherry cola, warmed in microwave for 1 minute
Red Licorice Filling, recipe follows
2 cups crushed yogurt-covered pretzels
Marshmallow Frosting, recipe follows
Cherry Cola Glaze, recipe follows
5 ounces red licorice (about 10 jumbo pieces) (recommended: Red Vines)
2 cups water
1 1/2 cups granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
4 egg yolks, slightly beaten
8 egg whites
2 cups granulated sugar
3/4 teaspoon cream of tartar
1 teaspoon pure vanilla extract
3 to 5 teaspoons cherry cola
3/4 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Line 2 regular size cupcake pans with cupcake liners.
  • In a large bowl using an electric mixer on low speed, combine the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, half-and-half, oil, and vanilla and beat on medium speed for 2 minutes. Stir in the warmed cherry cola until fully combined.
  • Fill the cupcake liners three-quarters full with batter and bake until the cupcakes spring back when touched with your finger, 10 to 15 minutes. Let cool in the pans for a few minutes, and then remove to a wire rack to cool completely.
  • Fill each of the cupcakes with Red Licorice Filling. Sprinkle the crushed yogurt covered pretzels on top. Top with Marshmallow Frosting and drizzle with Cherry Cola Glaze.
  • Tear the licorice into 1 inch pieces and place in a saucepan with the water over medium heat until it comes to a boil. Remove from the heat and let cool. Whisk in the sugar, cornstarch, salt, and egg yolks. Cook over medium heat, whisking constantly, until thick and bubbly. Continue to cook for 1 minute, and then remove from the heat. Cool to room temperature.
  • Place the egg whites, sugar, and cream of tartar in a heat-safe bowl over a saucepan with boiling water. Whisk constantly over the heat for 1 to 3 minutes. Once the sugar has dissolved, remove from the heat and beat with an electric mixer on high until stiff peaks have formed, 5 to 7 minutes. Stir in the vanilla extract.
  • Add the cherry cola, 1 teaspoon at a time, to the powdered sugar until it has a good consistency to drizzle on cupcakes.

1 tablespoon vanilla
1 1/2 cup miniature marshmallows
3 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees. Combine flour and sugar in large bowl. In small saucepan, heat 1 cup butter, 3 tablespoons cocoa and 1 cup Coca-Cola. Bring to simmer and then pour over flour mixture. Stir well. Add buttermilk, eggs, baking soda and vanilla. Mix. Add marshmallows. Pour into 9x13 pan for 35 minutes.
  • To make the frosting, in a saucepan combine 1/2 cup butter, 6 tablespoons Coca-Cola, and 3 tablespoons cocoa. Bring to a boil. Pour over bowl with powdered sugar. Beat well. Spread evenly over warm cake. Let cool. Serve.

1 cup Coca-Cola (with fizz)

1 cup dark brown sugar
2/3 cup creamy peanut butter
1/4 cup milk

Steps:

  • To make the cake: preheat the oven to 350*F Grease and flour a 9 X 13 X 10 inch sheet cake pan.
  • Combine the flour and sugar in a large bowl.
  • In a separate bowl, combine the butter, cocoa and Coke, and pour over the flour and sugar mixture.
  • Stir until well blended.
  • Add the buttermilk, eggs, baking soda and vanilla.
  • Mix well.
  • Stir in the marshmallows.
  • Pour into the prepared pan, and bake for 40 minutes.
  • Remove the cake from the oven and frost while still barely warm.
  • To make the frosting: in a bowl cream the butter, sugar and peanut butter.
  • Beat in the milk.
  • Fold in the peanuts.
  • Spread over the cake.
  • Place the frosted cake under the broiler about 4 inches from the heat source.
  • Broil just a few seconds, or until topping starts to bubble.
  • WATCH COMSTANTLY, being careful not to scorch the frosting.
  • Let cool at least 30 minutes before serving.
