Sweet Chili Chicken Bites image

This is so easy and makes such a tasty appetizer! Put it in the slow cooker and forget about it! I bought a slow cooker cookbook and this was in it. It is sweet and spicy and so yummy! You can also use as a main dish and serve over rice, topped with chopped green onion.

4 lb chicken breasts, boneless and skinless
1 bottle (about 12 oz) asain sweet chili sauce, any brand
4 qt slow cooker is ideal
toothpicks

Steps:

  • 1. Cut chicken into bite-sized pieces. Place in the slow cooker.
  • 2. Pour a bottle of Asian sweet chili sauce over the chicken and stir to coat.
  • 3. cover and cook on low for 4 to 6 hrs. (my slow cooker cooks high so check yours at 4 hrs) Serve with toothpicks.

1 lb chicken breast, cut into bite sized pieces
3/4 cup unbleached all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon sea salt, to taste
1/2 teaspoon black pepper, to taste
2 large eggs
1/4 cup milk
4 cups canola oil (for frying, or as needed)
3/4 cup sweet chili sauce (or as needed)
1/2 tablespoon sesame seeds (for garnish)
1/2 tablespoon green onion, chopped (for garnish)

Steps:

  • In a mixing bowl, add flour, cornstarch, baking powder, garlic powder, sea salt and freshly ground black pepper. Whisk until the ingredients are well blended before transferring the flour mixture to a shallow container. In another shallow container, beat eggs and milk together.
  • Working in batches, dredge the chicken pieces in the flour mixture until well coating. Shake off any excess flour and dip them in the egg mixture; toss to coat. Return the chicken pieces back to the flour to dredge them a second time - this will make them crispier.
  • In a skillet over medium high heat, add oil and bring the temperature to 375ºF/190ºC. Working in batches, carefully add the coated chicken pieces and fry them until nicely brown, about 3 to 4 minutes, flipping them a couple times.
  • Transfer them to a plate or baking sheet lined with paper towels to absorb any excess oil; set aside while frying the others.
  • Transfer them to a large bowl and pour sweet chili sauce over; stir until well coated. Sprinkle on the sesame seeds and stir once again until evenly distributed. Before serving, sprinkle on some sliced green onions.

3 tablespoons chili powder
1 lb chicken breast, boneless and skinless
1 lb bacon, cut into thirds

Steps:

  • Preheat the oven to 375°F Mix the brown sugar and chili powder in a bowl until well blended. Cut the chicken into bite-sized pieces and wrap each piece with bacon, using a toothpick to secure the bacon. Dredge the chicken into the chili-sugar mixture.
  • Place the skewered pieces of chicken on an un-greased baking sheet and bake for approximately 30 minutes, until the chicken is done and the bacon is crisp.

1/2 cup water
1/3 cup rice vinegar
1/3 cup granulated sugar
1 tablespoon ketchup
1/2 tablespoon minced ginger
1 teaspoon garlic, pressed
1 1/2 teaspoons sambal oelek
2 drops red food coloring
1 1/2 tablespoons cornstarch (mixed with 1/3 cup cold water)

Steps:

  • In a medium saucepan over medium heat, add water, rice vinegar, granulated sugar, ketchup, minced ginger, pressed garlic, and sambal oelek. Stir until everything is well combined and bring the mixture to a simmer.
  • While it's warming up, add a couple drops of food coloring. When it starts simmering, cook for 5 minutes.
  • When time is up, add the cornstarch mixture and stir very well until the sauce thickens, about 45 seconds. Remove from the heat and let the sauce cool off before proceeding with your recipe.

1/2 cup mayonnaise or salad dressing
18 slices bread, toasted
12 lettuce leaves
6 slices (3 ounces each) cooked chicken
18 slices tomato (3 medium)
12 slices bacon, crisply cooked and drained
Salt and pepper, if desired

Steps:

  • Spread mayonnaise over 1 side of each slice of toast. Place 1 lettuce leaf and 1 chicken slice on each of 6 toast slices.
  • Cover with second toast slice, mayonnaise side up. Top with lettuce leaf, 3 slices tomato and 2 slices bacon. Sprinkle with salt and pepper.
  • Cover with third toast slice, mayonnaise side down; secure with wooden picks. To serve, cut diagonally into triangles.
