1/3 cup mayonnaise
1 teaspoon honey mustard
2 cups shredded cooked chicken breast
1/3 cup finely chopped celery
6 slices whole grain bread, toasted
8 slices tomato
4 slices bacon, cooked, drained
4 leaves Romaine or leaf lettuce
4 tiny dill or sweet gherkins

Steps:

  • In medium bowl, mix mayonnaise and mustard well. Stir in chicken and celery until well mixed.
  • Spread 1/2 cup chicken mixture on one side of 2 bread slices. Layer each with 2 tomato slices, 2 half slices of bacon and 1 lettuce leaf. Top each with another bread slice. Repeat layers, starting with chicken mixture. Top each with third bread slice.
  • Place pickle on each of 4 toothpicks; insert 2 into each sandwich. Cut sandwiches into halves.

For the grilled chicken:
1 Tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp sea salt
Several grinds of pepper
16 oz chicken breast, trimmed of fat
For the creamy avocado dressing:
1 avocado, skin and pit removed
1/4 cup Greek yogurt
1 Tbsp white wine vinegar
1 shallot, chopped
Salt and pepper
1/4 cup buttermilk
For the salad:
1 cup croutons (I love making homemade from 1 ciabatta roll)
4 slices bacon, fried crisp, and crumbled
6 cups leafy greens (like kale, spinach, red leaf lettuce)
4 oz. tiny tomatoes, halved lengthwise
1 avocado, cubed
Grilled chicken (recipe above), cubed

Steps:

  • Preheat grill. Combine rub ingredients for grilled chicken. Rub spice mix into the chicken breast. Grill chicken (be careful not to overcook). When cool, cube and set aside. Preheat oven to 400°, or 375° for a convection bake. Cube bread. Toss with a drizzle of olive oil. Spread on a baking sheet, a single layer. Bake until golden brown, about 10 minutes. Set aside. To make the dressing, combine all ingredients in blender. Pulse until smooth. Check for seasoning and consistency. If the mixture is too thick, add additional buttermilk. Dressing should be thick and creamy, not runny. Set aside. To a large salad bowl, add greens. Toss with a conservative amount of dressing. Add crumbled bacon, tomatoes, cubed avocado, cubed grilled chicken, and croutons. Serve remaining dressing on the side.

1 avocado
Juice of ½ lime
¼ cup mayonnaise
1 medium tomato (seeded and diced)
3 slices bacon (cooked and chopped)
¼ cup shredded cheddar cheese
1 stalk celery (diced)
1 jalapeno (seeded and diced (optional))
2 cooked chicken breasts (finely chopped)
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • In a large bowl, scoop the avocado flesh out and into the bowl and mash with a fork. Mix in the lime juice and mayo until everything is well combined. Add in the tomato, bacon, cheese, celery and jalapeno and stir to coat everything. Then add in the chicken and toss to coat well (depending on the size of your chicken breasts, you may want to add a spoonful more of mayo if it looks a little dry). Taste for seasoning and add in the salt and pepper to taste (it's possible you may want to even add another squeeze of lime). Refrigerate for a couple of hours and serve on a sandwich, lettuce cups, or with crackers. Keeps for 3 days in the fridge.

8 ounces bacon
4 hot-dog buns, split and toasted

100 g of white celery
lettuce
pitted black olives

Steps:

  • To make the chicken salad, start by chopping the meat with a knife: the pieces and the pieces obtained do not necessarily have to be all the same size. Wash and dry the celery, remove any filaments and then cut it into small pieces.
  • Wash and dry the lettuce leaves. Collect the chicken and the chopped celery in a large salad bowl.
  • Cut the lettuce into strips and add it to the chicken with celery. Prepare the mayonnaise with a single egg, and keeping it rather liquid. Spread it over the salad.

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil. Lay bacon in a single layer on prepared sheet; bake until it begins to render its fat, about 10 minutes. Turn bacon over, and slide to one side of sheet. Season chicken with salt and pepper, and place on baking sheet. Bake until bacon is browned and crisp and chicken is cooked through, 15 to 20 minutes.
  • Transfer bacon to a paper-towel-lined plate, and let drain; crumble. Let chicken cool completely. Meanwhile, in a large bowl, combine tomatoes, onion, celery, celery leaves (if using), mayonnaise, and vinegar.
