I love apple pie! But I've never found one with enough apples in it. I think this one will have enough. It's packed!

6-8 granny smith apples, peeled and sliced
1 1/2 Tbsp cinnamon sugar
3 large eggs
1 1/2 c super fine white sugar (see tip below)
1 1/2 c vegetable or canola oil
3 tsp vanilla extract
1 1/2 c all purpose flour
more cinnamon sugar to sprinkle on top (same as above)

Steps:

  • 1. Preheat the oven to 350 degrees F. Spray a 9 1/2 to 10-inch springform pan with nonstick spray. Line the bottom with a round of parchment paper and then spray again.
  • 2. Layer the apple slices in the pan until they come about 2/3 of the way up the side. (I went a little higher than that and it worked out fine). Sprinkle the cinnamon-sugar over the apples.
  • 3. Prepare the batter by beating the eggs and sugar until light and fluffy. Add the oil and the vanilla and beat well, then stir in the flour. Pour the batter on top of the apples, and sprinkle with additional cinnamon-sugar. Tap the pan on the counter a few times to allow the batter to sink down and around the apples.
  • 4. Bake for 1 hour and 20 minutes, or until a skewer inserted into the center of the cake comes out clean. Cool *completely* in the pan. If you try to remove the cake from the pan while it is still warm, it will tend to break apart. I refrigerated my cake before slicing, and that worked out well. Serve slices with ice cream (warm individual slices in the microwave, if desired).
  • 5. Tip: You want "caster sugar" for this recipe: It is a finer grind than table sugar, but not as fine as powdered. Look for "Baker's Sugar" at the store, or simply put regular white sugar in your food processor and give it a few whirls to create superfine sugar.

1 teaspoon vanilla extract
2 cups all-purpose flour

TOPPING:
2 tablespoons butter, softened
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup sweetened shredded coconut
1/3 cup chopped walnuts

Steps:

  • In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, cinnamon, baking soda and salt; gradually beat into sugar mixture (batter will be thick). Fold in apples. Spread into a greased and floured 13-in. x 9-in. baking pan. , For topping, beat the butter, sugar and cinnamon in a small bowl. Stir in coconut and walnuts; mix well. Sprinkle over the batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in center comes out clean.

Steps:

  • To make cake: Preheat oven to 350°F. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. In a separate mixing bowl, combine eggs, apples, oil and vanilla. Add mixture to the dry ingredients, and stir just until well mixed. Batter will be thick. Pour cake batter into greased 13 x 9-inch pan. Sprinkle with brown sugar and cinnamon. Bake 50 to 60 minutes, or until a toothpick inserted in center comes out clean. To make Caramel Sauce: Combine butter, sugars, and evaporated milk in medium saucepan over medium high heat. Stirring constantly, bring to a boil for 1 minute. Add cinnamon and vanilla. Cool. Cut cake and serve with caramel sauce. If desired, top with ice cream or whipped topping.

All-purpose flour, for dusting
2 tablespoons unsalted butter, at room temperature
1/2 cup granulated sugar
1 1/8 teaspoons ground cinnamon
5 assorted apples, such as McIntosh, Granny Smith and Pink Lady (about 2 pounds)
Juice of 1 lemon
1 teaspoon vanilla extract
1 large egg, lightly beaten
2/3 cup confectioners' sugar
2 tablespoons milk, plus more if needed

Steps:

  • Place a baking sheet in the oven and preheat to 400 degrees F. Line a 9-inch pie plate with 1 piece of dough; refrigerate until ready to assemble.
  • Make the cinnamon-roll crust: Lay the remaining piece of dough on a lightly floured surface and spread the butter evenly on top. Combine 1/4 cup granulated sugar and 1 teaspoon cinnamon in a small bowl; sprinkle evenly over the butter, then gently press with your fingers to help the mixture adhere. Roll the pie dough into a tight log. Trim and discard about 1 1/2 inches from both ends; cut the remaining log crosswise into 1/2-inch-thick pieces. Arrange the pieces cut-side down in a snug circle on floured parchment paper. Lightly dust with more flour, then gently roll out into a 10-inch round. Slide the parchment onto a baking sheet and refrigerate until ready to assemble the pie.

2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
150 grams (3/4 cup) caster sugar or granulated sugar
1 cup (approximately 1 large) red apple, peeled and roughly chopped
2 large eggs
1 teaspoon vanilla extract
120 ml (1/2 cup) vegetable oil
120 ml (1/2 cup) Greek yogurt
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon ground cinnamon
1 tablespoon butter, melted
30 grams (1/4 cup) icing sugar or powdered sugar, sifted
1-2 tablespoons milk

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  • In a large mixing bowl, add flour, baking powder, baking soda, salt and sugar. Add chopped apple and stir briefly to combine.
  • In a separate bowl, add eggs, vanilla, oil and yoghurt. Whisk briefly just to break up the egg yolks.
  • Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined - but be careful not to over mix. Spoon batter into prepared tin.
  • To make cinnamon topping, combine cinnamon, sugar and butter. Mix together until lumpy and wet. Sprinkle over cake batter.
  • Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.
  • To make the glaze, mix together sugar and 1 tablespoon of milk. Stir until smooth. If the glaze is too thick, add an extra tablespoon of milk. Drizzle glaze all over the cake.

6 medium Braeburn or McIntosh apples (about 2 1/2 pounds), peeled, cored, and cut into 1/4-inch-thick rings

Steps:

  • Preheat oven to 375 degrees. Butter a 12-by-1-inch round pizza pan. Line bottom with parchment paper, and butter parchment; set aside. Put 1/2 cup butter, the brown sugar, brandy, and a pinch of salt into the bowl of an electric mixer fitted with the paddle attachment; mix on medium-high speed until pale and fluffy, 2 to 3 minutes.   • Preheat the oven to 200c/ gas 5
  • Add the sugar and butter together in a bowl and mix together until both are combined and nice and fluffy
  • Add the flour to the butter/sugar mix and combined together until it forms a gooey mixture
  • Add the one egg and stir into the mixture. Add the other egg and stir all together. The mixture should be slight runny but still have a slight stiffness
  • Add the cinnamon to the mix and stir well then add the peeled and chopped apple to the mix and stir together
  • Put the mixture into the cake tin and place in the over for 30- 40 minuets until golden brown.
  • Once cooked place onto a wire rack and leave to cool. Serve slightly warm for a better taste

2-1/2 cups all-purpose flour
1/2 teaspoon salt
1-1/4 cups cold lard
6 to 8 tablespoons cold 2% milk
FILLING:
2-1/2 cups sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
9 cups thinly sliced peeled tart apples (about 9 medium)
1 tablespoon bourbon, optional
2 tablespoons all-purpose flour
Dash salt
3 tablespoons cold butter, cubed
TOPPING:
1 tablespoon 2% milk
2 teaspoons coarse sugar

  • In a large bowl, mix flour and salt; cut in lard until crumbly. Gradually add milk, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or overnight., For filling, in a large bowl, mix sugar, cinnamon and ginger. Add apples and toss to coat. Cut slits in top. Brush milk over pastry; sprinkle with coarse sugar. Place on a foil-lined baking sheet. Bake 20 minutes., Reduce oven setting to 350°. Bake 45-55 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.

It has taken me a while to find a good recipe, but finally with some different trials I find this has a great balance of cinnamon and nutmeg. Not to mention it is so much easier than apple pie and I think it tastes better. You can arrange the top crust lattice-style if desired.

1 (15 ounce) package pastry for a 9-inch double crust pie
1 cup white sugar
⅓ cup all-purpose flour
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
3 Granny Smith apples, peeled and sliced, or more to taste
3 gala apples, peeled and sliced, or more to taste
1 cup confectioners' sugar
2 tablespoons milk, or as needed
1 dash vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll 1 pie crust pastry onto a work surface; lightly roll with a rolling pin until crust is a 9x13-inch rectangle, cutting crust if needed. Press crust into the bottom of a 9x13-inch baking dish, placing leftover crust pieces in the corners.
  • Whisk white sugar, flour, cinnamon, and nutmeg together in a large bowl. Toss Granny Smith apples and gala apples in sugar mixture until evenly coated. Spread apple mixture evenly over pie crust; pour remaining juices over apples.
  • Roll the remaining pie crust to 9x13-inch rectangle and place over apple layer, folding edges over apples to completely cover.
  • Bake in the preheated oven until crust is lightly browned, 45 to 50 minutes. Cool apple bars slightly, about 20 minutes.
  • Whisk confectioners' sugar, milk, and vanilla extract together in a bowl until topping is smooth and desired consistency; drizzle over bars.

1/4 cup (60 mL) melted apple jelly

Steps:

  • Preheat the oven to 350°F / 180°C.In the crust, arrange apples in a circle and sprinkle with lemon juice.In a bowl, mix sugar, flour and cinnamon. Steps:

  • Preheat oven to 350° F
  • Layer the 3 cups of cereal in the bottom of a 9X13 inch baking dish that's been sprayed with non-stick cooking spray.
  • Add the canned apple pie filling in an even layer over the cereal.
  • Spread the vanilla cake mix on top of the apples in an even layer.
  • Finally add the sliced butter and evenly space on top of the cake mix layer.
  • Bake the cake for 45 to 55 minutes or until the cake is bubbling.

My inspiration for this cake? Apple pie, defiantly a favorite in every house, and I try to bring this flavors and make something very similar, delicious and different. You notice by reading the recipe the it is simple but pack in flavor and the texture is just perfect. Apple and cinnamon is like a good marriage, go well, you fell good and taste delicious. 1/2 cup butter
1 1/2 cups brown sugar
1 cup buttermilk
1 teaspoon vanilla extract

1 lemon, zest of
1/2 lemon, juice of
2 apples, peeled and dice

Steps:

  • Preheat the oven to 350°F.
  • In a bowl sift flour, baking powder, baking soda and salt, set aside.
  • In a bowl mix the apples with lemon zest, lemon juice and cinnamon.
  • Cream sugar with butter for 5 minutes, add eggs one by one and vanilla extract, add dry ingredients alternating with the buttermilk, and mix just to combine, add by hand the apple mixture.
  • Place in a grease bundt pan, and bake for 1 hour, remember to check the center of the cake with a toothpick to make sure is completely cook.

  • Preheat oven to 375°F. Spray 1 jelly roll pan (15x10x1-inch) with baking spray. Line only bottom of pan with waxed paper; generously spray with additional baking spray. Set aside. Sprinkle clean kitchen towel with 1/2 cup confectioner’s sugar; set aside. Combine flour, baking powder, 1 teaspoon cinnamon, ginger, nutmeg and salt in small bowl; set aside.
  • Beat eggs in large bowl with electric mixer on high speed about 5 minutes or until very thick; gradually beat in granulated sugar. On low speed, blend in water and 1 teaspoon vanilla. Gradually add flour mixture, beating just until batter is smooth. Pour into pan, spreading batter to corners.
  • Bake 12 to 15 minutes or until wooden pick inserted in centers comes out clean. Run knife or small spatula around rims of pan to loosen cake. Immediately invert cake onto prepared towel; remove pan. Carefully peel off paper. Starting at one of the short sides, roll up cake and towel. Cool completely on wire rack, about 1 hour.

Pour the batter on top of the apples, and sprinkle with additional cinnamon-sugar on top. Tap the pan on the counter a few times to allow the batter to sink down and around the apples.
