SLOW-COOKED CORNED BEEF DINNER

Slow-Cooked Corned Beef Dinner image

Corned beef, potatoes and carrots are a delicious combo often served up on St. Patrick's Day. However, this recipe is so good we think you should make it any day of the year. Who wouldn't enjoy tender, spiced beef with steamed root vegetables in a flavorful broth? It's perfect as a cozy dinner in the winter, and corned beef leftovers are perfect for a Rebuen sandwich the next day. This corned beef and potato recipe is perfectly made in the slow cooker because brisket (the cut from which corned beef is made) needs a low and slow cook time to come out meltingly tender. With just 20 minutes of prep, it's easy to come home to slow-cooker corned beef with potatoes and carrots.

SLOW COOKER CORNED BEEF AND CABBAGE

Slow Cooker Corned Beef and Cabbage image

Brisket comes in two different cuts: point and the leaner flat. Depending on which you get, your corned beef may be tender and sliceable (flat cut) or very tender and falling apart (point cut). If your meat isn't labeled, speak with the butcher about which variety your grocery store stocks.

Categories     main-dish

Time 9h20m

Yield 8 to 10 servings

Number Of Ingredients 15

1 1/2 pounds small redskin potatoes, halved
4 carrots, cut into 2-inch pieces
1 large onion, cut into 1/2-inch wedges
2 stalks celery, peeled and cut into 2-inch pieces
2 or 3 sprigs fresh thyme
One 4-pound piece corned beef brisket, rinsed
12 ounces stout beer
2 tablespoons pickling spice
1/2 small head green cabbage, core intact and cut into thick wedges
1/2 cup sour cream
1/4 cup prepared horseradish
2 tablespoons whole-grain mustard
3 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Layer the potatoes, carrots, onions, celery and thyme in the insert of a 6-quart slow cooker. Put the brisket on top of the vegetables and add the beer and pickling spice. Add enough water to just cover the brisket. Cover and cook on low until the meat and vegetables are tender, about 8 hours.
  • Arrange the cabbage over the brisket (it's OK if the cooker seems crowded), cover and cook until soft and wilted, 45 minutes to 1 hour more.
  • Whisk together the sour cream, horseradish and mustard in a small bowl.
  • Remove the cabbage and toss with 1 tablespoon of the butter and pepper to taste in a large bowl. Remove the meat and let rest. Strain the remaining vegetables (reserve some of the cooking broth to serve on the side if you like) and toss with the parsley, the remaining 2 tablespoons butter and salt and pepper to taste.
  • Slice the corned beef against the grain and serve with the vegetables, horseradish sauce and broth if using.

SLOW COOKER CORNED BEEF

Hubby gave it 5 stars out of 5 and even my fussy 2-year-old ate it all. Hope you enjoy it! We ate this with roasted vegetables, and I topped mine with pickled mustard; my husband used gravy.

Provided by Sonya01

Time 4h15m

Yield 4 serving(s)

Number Of Ingredients 11

1 1/2 tablespoons vegetable oil
1 kg chicken thigh fillet, trimmed, cut in half crossways
114 g Thai red curry paste (see note)
1 cup continental real chicken stock
150 g fresh shiitake mushrooms, stems trimmed, halved
230 g sliced bamboo shoots, drained

ORANGE GLAZED CORNED BEEF

Orange Glazed Corned Beef image

Kind of sweet and kind of spicy full meal recipe for corned beef. I found this recipe in the local newpaper, and although I did not care for corned beef before, I love it made this way. Adjust the vegetable quantites as to what is on hand and personal preferences! This recipe sounds more complicated than it really is, but the result has been worth it every time!

Categories     One Dish Meal

Time 3h30m

Yield 10-12 serving(s)

Number Of Ingredients 12

3 -4 lbs corned beef
1 green cabbage, cut into serving size wedges
3 -4 small red potatoes, halved
1 large onion, quartered
2 stalks celery, cut into bite size pieces
1 1/2 tablespoons pickling spices
2 -3 carrots, sliced in thick slices on an angle
1/4 cup frozen orange juice concentrate
1/4 cup brown sugar
1 1/2 tablespoons Dijon mustard
1/4 cup orange marmalade
1/8 teaspoon Tabasco sauce, more to taste

Steps:

  • Bring brisket to a boil, adding the seasoning package and pickling spice, simmer for about 40 minutes per pound.
  • Remove brisket from water, reserving the liquid, and place on a broiler pan. Cover with foil as you make the sauce and cook the vegetables.
  • In a small sauce pan, add the frozen orange juice concentrate, orange marmalade, dijon mustard, brown sugar, and tabasco sauce (this helps in cutting the sweet of the orange juice and marmalade). Stir over medium heat until the marmalade and juice concentrante melts and the sauce begins to thicken.
  • Add the cabbage and potatoes to the water used to cook the brisket and bring back to a boil, simmer just until the cabbage and potatoes are fork tender. Add the celery and 1/4 of the onion.
  • In a seperate sauce pan, cook the rest of the onion and carrots in a small about of water, adding salt if you wish.
  • Score the top of the brisket with a criss-cross pattern several times, about 1/2 inch deep. Spoon the sauce over the corned beef and place under the broiler until the sauce bubbles, about 7 to 10 minutes,.
  • Add the half of the remaining sauce to the carrot and onion, toss to cover, and continue to cook over low heat while the brisket glazes.
  • Cut the brisket against the grain. Drain cabbage, potatoes, celery and onions, arrange on a platter. Place brisket slices on top of veggies, garnish with carrot and onion, with the remaining sauce for dipping!

1 1/2 lbs chicken breasts (cut thinly, into pieces)
1 red bell pepper
1 small onion (cut thin)
1 tablespoon fresh ginger paste
1 tablespoon lime juice
2 (400 ml) cans coconut milk (Chaokoh brand)

6 leaves Thai basil
4 ounces bamboo shoots
15 ounces baby corn
2 cups fresh green beans or 2 cups other vegetables

  • cook on high for 3 hours or until chicken is thoroughly cooked.
  • add fresh vegetables and cook for an additional hour or until vegetables are done.
  • add coconut milk and stir (coconut milk goes last because it can separate if heated too high).
