4 pounds chicken, washed and dried
Vegetable oil
Beer Can Chicken Rub
1 (12-ounce) can beer

Steps:

  • For the chicken rub: In a small bowl mix all the ingredients together and use for the grilled chicken. You can store extra rub mixture in an airtight container for up to 6 months.
  • For the chicken: Preheat your grill to medium-high heat.
  • Rub the chicken and its cavity down with the vegetable oil. Season the chicken with rub mixture, remembering to season the cavity. Pour out 1/4 of the beer and sit the chicken on top of the beer can. Place the chicken in the center of the hot grill and cover. Cook the chicken for 1 to 1 1/2 hours, or until an instant-read thermometer registers 165 degrees F. Once cooked, cover loosely with foil and let rest for 10 minutes before carving.

This odd recipe makes some of the most moist, succulent, flavorful barbecued chicken I've ever tasted. The secret: an open can of beer is inserted into the cavity of the bird, which is cooked upright on the grill. Besides being incredibly tender, the bird makes a great conversation piece. The recipe was inspired by the Bryce Boar Blazers, a barbecue team from Texas I met at the Memphis in May World Championship Barbecue Cooking Contest. The proper beverage? Beer, of course.

1 large whole chicken (4 to 5 pounds)
3 tablespoons Memphis Rub* or your favorite dry barbecue rub
1 can (12 ounces) beer
For the Memphis rub:
1/4 cup paprika
1 tablespoon firmly packed dark brown sugar
1 tablespoon granulated sugar
2 teaspoons salt
2 teaspoons accent (MSG; optional)
1 teaspoon celery salt
1 teaspoon freshly ground black pepper
1 to 3 teaspoons cayenne pepper, or to taste
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder

Steps:

  • If making the rub:
  • Combine all the ingredients in a jar, twist the lid on airtight, and shake to mix. Store away from heat or light for up to six months. Makes about 1/2 cup. Enough for 4 to 6 racks of ribs.
  • Remove and discard the fat just inside the body cavities of the chicken. Remove the package of giblets, and set aside for another use. Rinse the chicken, inside and out, under cold running water, then drain and blot dry, inside and out, with paper towels. Sprinkle 1 tablespoon of the rub inside the body and neck cavities, the rub another 1 tablespoon all over the skin of the bird. If you wish, rub another 1/2 tablespoon of the mixture between the flesh and the skin. Cover and refrigerate the chicken while you preheat the grill.
  • Set up the grill for indirect grilling (see below) placing a drip pan in the center. If using a charcoal grill, preheat it to medium.
  • If using a gas grill, place all the wood chips in the smoker box and preheat the grill to high; then, when smoke appears, lower the heat to medium.
  • Pop the tab on the beer can. Using a "church key" style can opener, make 6 or 7 holes in the top of the can. Pour out the top inch of beer, then spoon the remaining dry rub through the holes into the beer. Holding the chicken upright, with the opening of the body cavity down, insert the beer can into the cavity.
  • When ready to cook, if using charcoal, toss half the wood chips on the coals. Oil the grill grate. Stand the chicken up in the center of the hot grate, over the drip pan. Spread out the legs to form a sort of tripod, to support the bird.
  • Cover the grill and cook the chicken until fall-off-the-bone tender, 2 hours. If using charcoal, add 10 to 12 fresh coals per side and the remaining wood chips after 1 hour.
  • Using tongs, lift the bird to a cutting board or platter, holding the metal spatula underneath the beer can for support. (Have the board or platter right next to the bird to make the move shorter. Be careful not to spill hot beer on yourself.) Let stand for 5 minutes before carving the meat off the upright carcass. (Toss the beer can out along with the carcass.)

Steps:

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 375ºF.
  • Mix first 5 ingredients; rub onto chicken.
  • Open beer can; discard half the beer. Place can on work surface; lower chicken over can, inserting can into tail end of chicken. Stand chicken on grate over unlit area, using the legs to help the chicken stand upright; cover. (Can should remain in chicken on grill.)
  • Grill chicken 1 hour; brush with 1/4 cup sauce. Grill, uncovered, 15 min. or until chicken is done (165ºF), monitoring for consistent grill temperature and brushing chicken frequently with remaining sauce. 1 (3-pound) frying chicken, giblets removed and reserved
1 tablespoon olive oil
12 small onions, peeled
3 garlic cloves, peeled
6 sprigs parsley, plus extra for garnish
1/4 pound prosciutto, small dice
2 whole bay leaves
3 large tomatoes, peeled, seeded and chopped
1/2 cup dry white wine
1/3 cup tawny or ruby Port
2 tablespoons brandy
1 tablespoon Dijon mustard
Freshly ground pepper

Steps:

  • Preheat an oven to 350 degrees F. Rub the chicken all over with the oil, and loosely stuff the cavity with 3 onions, 1 garlic clove and 1 sprig of parsley. Set aside. On the bottom of a 3-quart terra-cotta jug or deep heavy casserole, spread half the prosciutto, 2 sprigs parsley, 4 onions, 1 garlic clove, 1 bay leaf and all of the giblets. Place the chicken head-first in the pot, or breast-side up in a casserole. Scatter the remaining onions, garlic, 3 sprigs parsley, prosciutto and bay leaf around and on top of the chicken. In a small bowl, combine the tomatoes, wine, Port, brandy, mustard, and pepper, and pour over the chicken. Cover the pot or casserole and bake for 1 1/2-2 hours, or until chicken is cooked through.
  • Remove pot from the oven, and carefully remove the onions and reserve. Drain the liquid from the pot into a large skillet. Lift out the chicken and transfer to a roasting pan fitted with a rack.
  • Use a slotted spoon to lift out the giblets from the pot, along with any remaining whole onions and add them to the reserved onions.
  • Set the skillet of liquid over high heat, bring to a boil, reduce to a simmer and cook for 10 minutes, or until liquid is reduced by half, stirring often. Preheat a broiler. Place the chicken under the broiler for 3 to 4 minutes, or until browned. To serve, cut the chicken into pieces and arrange on a large platter. Scatter the onions and giblets around the chicken, and spoon some of the warm sauce over the top. Garnish with parsley sprigs and pass extra sauce.

¼ cup firmly packed brown sugar
¼ cup sweet paprika
1 ½ tablespoons black pepper
3 tablespoons kosher salt
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cayenne pepper
1 whole chicken (4 to 5 pounds, neck, and giblets removed)
1 can beer or another carbonated beverage (12 oz can)
1 cup apple juice (or apple cider)
2 tablespoons olive oil
2 tablespoons balsamic vinegar

Steps:

  • To make the rub, combine all ingredients in a small bowl and mix well.
  • Apply the rub all over the bird, even inside the cavity. Work the mixture under the skin wherever possible. Cover it and let it marinate for at least 30 minutes at room temperature.
  • Prepare your Green Egg or Kamado type grill for direct grilling and heat to 375 degrees F. You will not need the plate setter. If using another type of grill, follow the manufacturer's directions for direct grilling and preheat the grill to 375 degrees. F.
  • When the grill is ready, pour half of the beer or other carbonated beverage into a spray bottle. Add the apple juice, olive oil, and balsamic vinegar and shake well.
  • Spray the can with non-stick cooking spray and slide the bird over the beer can. If you are using a vertical beer can chicken roaster, place the can into the holder and slide the bird over the can and holder.
  • Carefully place the bird and the can on a pie plate or cake pan in the center of the grill. Spray the bird with the mixture in the spray bottle and close the grill lid. Cook for about 15 minutes or until it starts to brown all over. Respray and close the lid.
  • Cook for approximately 45-60 more minutes, spraying the bird every 15 minutes or so until the internal temperature of the thighs reaches between 160-165 degrees F. Use an instant-read meat thermometer and insert it into the thickest part of the thigh between the leg and the breast but not touching the bone.
  • This is the hard part and works best if you have two people. Use extreme caution, the can and liquid inside are very hot; do this step outside in case any liquid spills. Have one person grab the beer can with kitchen tongs to hold it in place while the second person grabs the chicken in the neck cavity with another pair of tongs and pulls it off. You can also grab it with heavy-duty oven mitts or a clean kitchen towel.
  • Spray the bird once more, cover loosely with foil, and let it rest for approximately 10 minutes before carving and serving.

2 tablespoons paprika
2 tablespoons light brown sugar
1 tablespoon chili powder
1 tablespoon kosher salt
1 tablespoon cracked black pepper
2 teaspoons granulated garlic
2 teaspoons granulated onion
1 teaspoon ground cumin
1 (4 -5 lb) whole chickens
2 teaspoons vegetable oil
1 sprig fresh rosemary leaf
1 large shallot, minced
1 lemon, juice of
1 (16 ounce) can beer (and 1 beer can chicken can holder) (optional)

Steps:

  • In a small bowl combine the rub ingredients.
  • Remove and discard the neck, giblets, and any excess fat from the chicken. Rinse the chicken, inside and out, under cold water and pat dry with paper towels. Lightly spray or brush all over with the vegetable oil and season, inside and out, with the rub. Let rest at room temperature while you preheat your grill.
  • Open the beer can an pour off half of the beer. (Or drink it if you don't want to waste it.) Set the half-full can of beer in can holder (or if you don't have a can holder, just be extra careful and place the can on a flat smooth surface), and add fresh rosemary leaves, minced shallot and lemon juice. This will help add moisture and flavor from the inside as your chicken cooks. You may need to use a funnel, to help add the ingredients to the can.
  • Slide the chicken over the top so the can fits inside the cavity. Transfer the bird to your preheated grill, while carefully keeping the can upright. Carefully balance the bird on its two legs and the can holder. (If can holder is not used just use the can and use the legs like a tripod.) Grill over Indirect Medium heat until the juices run clear and the internal temperature reaches 170 F in the breast and 180 F in the thickest part of the thigh. 1 - 1/4 to 1 - 1/2 hours. Wearing barbecue mitts, carefully remove the chicken and the can (holder) from the grill. Do not spill the beer, it will be HOT. Let the chicken rest for about 10 minutes before lifting it from the can (holder). Discard the beer. Cut the chicken into serving pieces. Serve warm.

  • Place shiitakes and peppercorns in an 8-quart stockpot over medium, and cook, stirring often, until fragrant and peppercorns start to pop, about 8 minutes. Add soy sauce, Shaoxing, soy paste, tea, ginger, salt, 4 cups water, 1/2 cup garlic cloves, and 2 teaspoons cumin seeds to pot; bring to a boil over high. Reduce heat to medium-low, and simmer, uncovered, until flavors are infused, about 30 minutes. Remove pot from heat, and add scallions. Add ice; let stand, stirring occasionally, until ice is melted. Submerge chickens in brine, weighing them down if needed. Cover and chill at least 2 hours or up to overnight.
  • Remove chickens from brine, scraping off any solids stuck to skin, and set chickens aside. Pour 2 cups brine through a fine wire-mesh strainer into a small saucepan; discard solids and remaining brine. Bring reserved brine to a boil over medium, and cook until reduced to about 1/2 cup, about 20 minutes.
  • Open vents of a kamado-style grill completely. Light 2 charcoal chimney starters filled with lump charcoal. When charcoal is covered with gray ash, pour on grill’s fire grate. Insert cooking grate; close grill lid, and bring internal temperature to 250°F to 275°F. Maintain temperature 10 to 15 minutes.
  • Tuck wings under chickens. Place chickens, wing ends up, on vertical roasters with drip pans removed. Place roasters in a 16- x 12-inch aluminum roasting pan with handles; fill pan with remaining 5 cups water and remaining 1/4 cup garlic cloves. Brush chickens with 1/4 cup reduced brine, allowing excess to drip into pan. Transfer pan to center of grill. Close grill lid, and smoke, basting with pan drippings and remaining 1/4 cup reduced brine every 30 minutes, until a thermometer inserted in thickest portion registers 150°F, 1 hour and 30 minutes to 2 hours.
