4 egg yolks
3 tablespoons sugar
2 cups heavy cream
1 1/2 tablespoons sour cream
1 vanilla bean, split lengthwise

Steps:

  • In a medium mixing bowl, using a whip, whisk together the egg yolks and sugar until they are very pale yellow and smooth.
  • In a medium saucepan, bring to a boil the heavy cream, sour cream, and vanilla bean with its scrapings. Whisk about half into the egg yolk mixture until well combined, then pour back into the saucepan. Over medium heat, stirring constantly with a wooden spoon, cook until the mixture heavily coats the back of the spoon. Don't scramble the eggs.
  • Strain into a clean bowl and set the bowl over ice cubes and cold water until chilled, stirring occasionally. Refrigerate, covered, until needed.
  • Note: To make coffee Creme Anglaise, substitute 1/4 cup crushed coffee beans (with or without caffeine) for the vanilla bean. Bring to a boil and let steep in the cream mixture, covered for about 10 minutes. When well flavored, whisk into the egg yolks. then continue with recipe
  • To crush coffee beans, place in a plastic bag, close the bag, and heavily press a rolling pin over the beans. Do not grind the beans because this will darken the Creme Anglaise.

4 egg yolks
1/2 cup sugar
1 teaspoon cornstarch
1 3/4 cups scalded milk
1 teaspoon pure vanilla extract
1 1/2 teaspoons Cognac
Seeds of 1/2 vanilla bean, optional

Steps:

  • Beat the egg yolks and sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed for 3 minutes, or until very thick. Reduce to low speed, and add the cornstarch.
  • With the mixer still on low, slowly pour the hot milk into the eggs. Pour the custard mixture into a saucepan and cook over low heat, stirring constantly with a wooden spoon, until thickened. The custard will coat the spoon like heavy cream. Don't cook it above 180 degrees or the eggs will scramble!
  • Pour the sauce through a fine strainer, add the vanilla extract, Cognac, and vanilla seeds, if using. Freeze the mixture in an ice cream freezer according to the manufacturer's directions. Transfer to a plastic container and store in the freezer until ready to serve.

2 cups whole milk
1/4 cup granulated sugar
1 vanilla bean, scraped
4 large egg yolks
2 tablespoons Jamaican rum

Steps:

  • In a 2-quart heavy saucepan bring 2 cups of the milk, 2 tablespoons of the sugar, and the scraped vanilla bean to a boil over medium heat.
  • In a large bowl, whisk together the egg yolks and remaining 2 tablespoons of sugar. Slowly pour 1 cup of the hot milk mixture, whisking constantly, into the egg yolk-sugar mixture. (Do not pour the entire yolk-sugar mixture into the boiling milk mixture, as it will curdle the eggs.) Whisk in the remaining milk. Pour the milk-yolk mixture into the saucepan and cook over medium heat, stirring constantly, until the mixture coats the back of a spoon. Do not boil.
  • Remove from the heat and stir in the rum. Strain the mixture through a fine wire sieve into a heat--proof bowl. Place the sauce in an ice bath. When cool, transfer the sauce to a bowl. Cover the surface with plastic wrap and chill in the refrigerator, until ready to use. Sauce will keep in the refrigerator for 4 to 5 days if well sealed.

1 quart milk
1/2 lb sugar
9 egg yolks
1 fluid ounce cognac
1 1/2 ounces dark rum (2 shots)
2 teaspoons vanilla

Steps:

  • Bring milk and sugar to boil. Stir.
  • In a separate bowl, separate eggs: keep stirring yolks, vanilla and a little milk. When milk boils, stir with egg mixture (don't whip).
  • Stir constantly with a wooden spoon.
  • The Creme Anglaise is done when it coats the spoon - do not overcook.
  • Add rum and brandy.
  • Let cool to room temperature before you refrigerate.

APPLE CHARLOTTES WITH CALVADOS CREME ANGLAISE

2 large Bramley, Braeburn, or Golden Delicious apples (about 1 pound)
1/2 cup sugar
1/2 cup Calvados (French apple brandy)
1 whole clove
1/4 cup golden raisins
1 stick (1/2 cup) unsalted butter, softened
12 slices firm white sandwich bread

Steps:

  • Peel and core apples and cut into 1/2-inch cubes. In a heavy saucepan simmer apples, sugar, Calavdos, and clove for 5 minutes, or until apples are tender but still hold their shape. Stir in raisins.
  • Preheat oven to 375 degrees.
  • Butter bread on 1 side. Cut out 4 bread rounds to fit in bottoms of four 1/2 to 3/4-cup charlotte molds or ramekins. Cut 4 rounds the same size as tops of molds or ramekins. Cut remaining 4 bread slices into 1-inch strips. Put bottom rounds, buttered side down, in molds. Arrange strips vertically, buttered sides against inside of molds, slightly overlapping. Press them gently to adhere and trim any overhang flush with rims. Divide apple mixture among molds and top with remaining rounds, buttered sides up, pressing gently. Charlottes may be prepared up to this point 3 hours ahead and chilled, covered.
  • Bake charlottes on a baking sheet in upper third of oven 20 minutes, or until bread is golden.
  • Spoon a few tablespoons creme anglaise (recipe follows) onto each of 4 dessert plates and invert apple charlottes onto sauce

CALVADOS CRèME ANGLAISE

2 cups light cream or 2 cups half-and-half
1 vanilla bean, cut lengthwise and scraped out
2 eggs
1/2 cup granulated sugar
1 tablespoon calvados
2 teaspoons calvados

Steps:

  • In a medium saucepan, heat the half-and-half and the vanilla bean to just a simmer, and then immediately remove the pan from the heat.
  • In a separate bowl, whisk the eggs and the sugar until they are smooth and add a small bit of the hot vanilla cream, stirring constantly.
  • Immediately transfer the warmed egg mixture back into the hot cream and continue whisking until they are completely incorporated.
  • Heat the mixture over low-medium heat, stirring constantly, until it reads 170 degrees on a digital candy thermometer or is thick enough to coat the back of a spoon.
  • Remove from heat, stir in the Calvados, and chill the custard completely before serving it.

2 cups milk or 2 cups 10% cream
6 egg yolks
1/4 cup sugar
1 tablespoon cornstarch
1 teaspoon vanilla

Steps:

  • Heat milk in pot over medium heat until hot- but not boiling.
  • In a large bowl, beat yolks, sugar& cornstarch together until well combined.
  • Slowly beat in milk.
  • Transfer back to pot& cook over medium low heat, stirring constantly, until mixture thickens enough to coat the back of a spoon (about 5- 7 minutes).
  • Add vanilla.
  • Pour mixture through a fine msh sieve into a clean bowl.
  • Sprinkle sugar lightly over the top to prevent a skin from forming.
  • Cool, then chill.

1 teaspoon vanilla
3/4 cup 2% low-fat milk

Steps:

  • In a bowl, whisk together sugar, egg and vanilla.
  • In a small saucepan, heat the milk over medium heat until it is steaming. Gradually add a bit to the egg mixture, stir to combine, then add to the saucepan. (By adding a bit to the egg mixture first, it will help prevent getting scrambled eggs).
  • Stir over low heat, stirrig constantly, for 5 - 8 minutes or until slightly thickened. Do not boil.
  • Pour the sauce into a bowl. Place a piece of plastic wrap on the surface of the sauce. Chill.

  • To make the meringues, beat the egg whites, salt, and cream of tartar in a stand mixer fitted with the whisk attachment, for about a minute until frothy. Bump the speed up to high and slowly pour in 1 cup of sugar. Beat to stiff glossy peaks. Whisk in the remaining teaspoon of vanilla. With dessert spoons place small mounds of meringue on the parchment paper and if desired (this is untraditional, but I like to do it), flick little peaks up. Bake for 20 minutes, until a toothpick comes out clean.
