Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart baking dish.
- Place the sweet potatoes and their liquid in a medium saucepan, and bring to a boil. Cook 15 minutes, or until tender. Remove from heat, drain, and mash.
- In a medium bowl, mix the mashed sweet potatoes, white sugar, eggs, 1/3 cup butter, milk, and vanilla extract. Spread evenly into the prepared baking dish.
- In a separate bowl, mix the brown sugar, chopped pecans, flour, and 1/3 cup melted butter. Sprinkle over the sweet potato mixture.
- Bake 35 minutes in the preheated oven, or until a knife inserted near the center comes out clean.

- In a skillet, brown beef; drain.
- Add taco seasoning; prepare according to package directions.
- With a sharp knife, cut an X in the top of each potato; fluff pulp with a fork.
- Top with taco meat, cheese and onions.
- Serve with salsa and/or sour cream, if desired.

Steps:
- 1. Preheat oven to 400°. Bake sweet potatoes at 400° for 1 hour or until tender. Let stand until cool to touch (about 20 minutes); peel and mash sweet potatoes. Reduce oven temperature to 350°.
- 2. Beat mashed sweet potatoes, granulated sugar, and next 5 ingredients at medium speed with an electric mixer until smooth. Spoon potato mixture into a greased 11- x 7-inch baking dish.
- 3. Combine cornflakes cereal and next 3 ingredients in a small bowl. Sprinkle over casserole in diagonal rows 2 inches apart.
- 4. Bake at 350° for 30 minutes. Remove from oven; let stand 10 minutes. Sprinkle marshmallows in alternate rows between cornflake mixture; bake 10 minutes. Let stand 10 minutes before serving.

Let cool and remove skin from the sweet potatoes and discard. Place flesh into medium bowl, mash with a fork and measure 6 cups. Save any extra for another use.
- Combine: Place mashed sweet potatoes in a large bowl. Add sugar, softened butter, salt and vanilla. Stir to combine. You can do this in a stand mixer if you'd like.
