2 boneless, skinless chicken breasts, cut into bite-sized strips
12-14 ounces linguine
4 strips thick-cut bacon (or pancetta), chopped into 1/2 inch pieces
2 cloves garlic, minced
salt and pepper, to taste
4 eggs
3/4 cup grated Parmesan cheese
1/3 cup heavy cream
1/4 cup chopped fresh basil (plus more for garnish)
salt and pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil and cook linguine al dente. Reserve 1/2 cup of pasta water before straining.
  • Combine eggs, cream, Parmesan cheese, basil, and a pinch of salt and pepper in a medium bowl. Whisk thoroughly and set aside.
  • Meanwhile, cook bacon in a cast iron skillet on medium heat until fully cooked, remove from the skillet and place on a paper towel lined plate to drain. Keep 1-2 tablespoons of bacon grease in the skillet and discard the rest.
  • Add minced garlic and sliced chicken to the skillet. Season with salt and pepper and cook until chicken is fully cooked through, about 5-7 minutes.
  • Return bacon to the skillet, add the warm linguine and toss with chicken and bacon. Turn the burner down to low and let the skillet cool for 2-3 minutes. If the skillet is too hot you run the risk of scrambling the eggs.
  • Add egg mixture to the skillet and toss with the pasta until fully incorporated. Stir in 2-3 tablespoons of reserved pasta water until creamy. Serve immediately with extra Parmesan cheese and garnish with fresh basil.

½ cup white wine

Steps:

  • Cook the bacon in a large skillet over medium heat until crisp, about 10 minutes. Remove bacon from skillet with a slotted spoon and drain on a paper towel-lined plate. Drain fat from skillet, reserving 2 tablespoons of the bacon drippings.
  • Season chicken with salt and pepper. Heat 1 tablespoon bacon drippings in the skillet over medium heat. Cook chicken breast halves in the bacon drippings until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to cutting board and tent with foil. Rest chicken for 5 minutes before slicing; set aside.
  • Heat remaining tablespoon bacon drippings in skillet over medium heat until shimmering. Cook and stir garlic and ground black pepper in skillet until fragrant, about 30 seconds. Pour wine into skillet; cook at a simmer until thickened, about 2 minutes. Remove from heat.
  • Whisk Parmesan cheese and eggs together in a bowl. Slowly stream wine mixture into the Parmesan mixture while whisking continually.

2 ½ cups whipping cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.

500 grams Fettuccine Pasta
1 cup Cooking Cream
1 cup Fresh Milk
1 cup Slice Mushroom
1 cup Parmesan Cheese
1 pc. Onion Diced
4 cloves of Diced Garlic
20 grams of Butter
1 pc. Egg Yolk
2 tbsp. Oil
1 tbsp. Salt
1 tsp. Pepper
100 grams Diced Ham (Fried)
100 grams Diced Bacon (Crispy Fried)
Chopped Parsley (optional)
Water for pasta boiling.

Steps:

  • Put water in a pot with half tbsp of salt and 1 tbsp of oil. Bring to boil
  • When it's boiling add the fettuccine pasta and mix well using tongs to avoid getting sticky.
  • Cooked for 8 to 10 minutes until al dente. Cool down with running water or ice water.
  • Add oil to cooked pasta and mix. Set aside
  • For carbonara sauce.
  • Heat the pan with oil and butter.
  • Add the garlic and saute for 20 seconds then add the diced onion and saute for another 20 seconds.
  • Add the sliced mushroom and stir.
  • Add sliced ham and stir.
  • Add chopped parsley and stir.
  • Add fresh milk and cream then mix well.
  • Add the egg yolk and stir.
  • Add parmesan cheese. Put in low heat to avoid breaking the creamy texture of the sauce.

2 large eggs
2 large egg yolks
1 ½ cups Parmesan cheese (freshly grated)

6 ounce bacon (sliced - use guanciale or pancetta instead if you want more authentic carbonara)
1 pound chicken (cooked and shredded)
4 cloves garlic (minced)

Steps:

  • Pasta: Cook the spaghetti in a large pot of salted boiling water until al dente according to package instructions. Reserve 1 1/4 cup of the pasta cooking water.
  • Eggs: Whisk the 2 whole eggs and 2 egg yolks with 1 1/4 cup of the parmesan cheese, salt, and pepper. Set aside.
  • Meats: Cook the bacon in a skillet over medium high heat. When almost crisped, add the chicken and cook for another 2-3 minutes, until the bacon is done. Remove the bacon and chicken with a slotted spoon and set aside.
  • Start the sauce: Reduce the heat in the skillet to medium. Add the garlic and cook for 30 seconds to 1 minute. Add the pasta cooking water into the skillet along with the spaghetti. Toss the spaghetti until the sauce starts to become thickened and glossy. Turn off the heat.
  • Finish the sauce: Pour the egg and Parmesan mixture into the skillet, and toss the pasta. Continue to toss the pasta until the sauce is thick and the eggs are fully cooked. Add the bacon and chicken back to the skillet and stir to combine.

100g Grana Padano, finely grated, plus extra to serve (wrap the rest tightly and it will keep for several weeks)

  • Cook the spaghetti following pack instructions. 6 slices thick-cut bacon (chopped)
6 chicken tenders
3 garlic cloves (minced)
1 lb spaghetti
6 egg yolks
¼ cup heavy cream
½ cup pasta water
1 cup grated parmesan cheese
½ teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Bring a large pot of water to a rolling boil. Season liberally with salt.
  • Heat a large skillet to a medium heat. Add bacon. Cook bacon until is crisp. Use a slotted spoon to remove. Drain on a paper towel.
  • While the bacon cooks, add egg yolks, parmesan cheese, cream, salt, and pepper to a medium bowl. Whisk to combine.
  • Season chicken tenders with salt and pepper on both sides. Add to the rendered bacon fat and cook until golden brown on both sides, about 2-3 minutes per side. Set aside and slice.
  • While the chicken cooks, drop the pasta into the water. Cook until just under aldente (it will continue to cook when you toss the pasta with the sauce.)
  • Remove the chicken from the pan and set aside. Lower the heat to medium and add garlic. Cook for 1-2 minutes until fragrant.
  • Use the tongs to transfer the pasta to the garlic and bacon fat. Toss to combine. Reserve starchy cooking liquid.
  • Remove the pan from the heat and while tossing the pasta, pour in the egg, cream, and cheese mixture. Toss together and place back over a low flame. Continue to toss the pasta until the cheese melts and the sauce is thick, about 2-3 minutes. Do not turn the heat up too high or you could curdle the eggs, a very low heat works great. Add the bacon back in and toss again. If needed, add pasta water ¼ cup at a time to reach desired consistency of sauce.
  • Season to taste with salt and pepper. Arrange chicken on top. Serve!

50g/2oz pancetta cubes, or smoked streaky bacon, chopped finely
125g/4½oz chicken breast, cut into strips
200g/7oz dried spaghetti
2 free-range eggs, beaten
2 free-range egg yolks, beaten
75ml/2¾fl oz double cream
75g/2¾oz Parmesan, grated, plus extra to serve
freshly ground black pepper

Steps:

  • Heat the oil in a pan over a medium heat. Add the pancetta and fry until crisp and golden-brown. Remove from the pan with a slotted spoon and set aside.
  • Add the chicken to the same pan and fry for 4-5 minutes, or until completely cooked through.
  • Bring a large pan of salted water to the boil and cook the spaghetti according to packet instructions. Drain, reserving a little of the cooking water.
  • Put the beaten eggs in a large bowl. Add the spaghetti to the eggs and a little of the reserved cooking water and mix well. Add the cream, Parmesan, cooked chicken and cooked pancetta cubes and stir to combine.
  • To serve, divide the pasta and sauce between two bowls. Top with extra Parmesan and freshly ground black pepper.

3 Chicken Breasts Sliced Thin
2 Tbs Butter
1 Tbs Garlic
3 1/2 Cup Chicken Broth or Water
1 Cup Heavy Cream
1 Tbs Lawrey's Seasoning
1 lb Bowtie Pasta
6-8 Slices of cooked bacon
1/2 Cup Red Onion
1/2 Cup Diced Roma Tomatos
3/4 Cup Parmesan Cheese
Salt and Pepper to Taste
For Stove Top - Adjust the following measurements
2 Cups Heavy Cream
1 Cup Chicken Broth
4 Tbs Butter *Divided

Steps:

  • Instant Pot Directions:
  • Slice Chicken Breasts thin.
  • Heat Instant Pot to Saute and wait until it reads "Hot"
  • Add Butter and Garlic and Stir until butter is melted
  • Add Chicken and stir. Watch Pot and stir occasionally to saute. Saute until chicken is no longer pink. Press Cancel on Instant Pot

  • Add 2 Tbs butter, 2 Cups Heavy Cream, and 1 Cup Chicken Broth to pan and allow to come to a slow boil.

2 large boneless and skinless chicken breasts (, halved horizontally to make 4 filets)
2 heaping tablespoons flour ((all purpose or plain))
3 tablespoons finely grated fresh Parmesan cheese
1 teaspoon salt
Cracked pepper
1 tablespoon olive oil
2 teaspoons butter ((or sub with oil))
8- ounces | 250 grams bacon (, trimmed of fat and cut into strips (I use shortcut bacon in Australia))
1 small onion (, chopped)
6 large cloves garlic (, minced or finely chopped)
1-1/2 cups half and half ((or use reduced fat cream or evaporated milk)*)
1/2 cup finely grated fresh Parmesan cheese
1/2 teaspoon cornstarch ((cornflour) mixed with 2 teaspoons of water)

Steps:

  • Season the chicken with salt and pepper. In a shallow bowl, combine the flour and parmesan cheese. Dredge seasoned chicken in the flour mixture; shake off excess and set aside.
  • Heat the oil and butter in a large non stick pan or well-seasoned cast iron skillet over medium-high heat until butter has melted and pan is hot. Fry the chicken until golden on each side, cooked through and no longer pink (about 4-5 minutes per side, depending on the thickness of your chicken). Transfer onto a warm plate.
  • Add the bacon strips to the pan and fry until crispy. Drain off some excess fat, keeping about 1 teaspoons worth in the pan. Add the onion and garlic and fry until onion is transparent (about 1 minute). Reduce heat to low heat, and add the half and half (or cream). Bring the sauce to a gentle simmer; season with a little salt and pepper to your taste. Add in the parmesan cheese, and allow the sauce to simmer until the parmesan cheese has melted slightly. (If the sauce is too runny for your liking, add the cornstarch/water mixture into the centre of the pan and mix through fast to combine into the sauce. It will begin to thicken immediately).
  • Add the chicken back into the pan to serve.
  • Serve with steamed vegetables (broccoli and/or cauliflower work best), over zucchini noodles, your favourite pasta, or rice.

1 lb diced white meat chicken
10 slices bacon (cut in small pieces)
2 -3 cloves of minced garlic
1 medium onion, diced
1 large red bell pepper, diced
1 lb sliced mushrooms
4 -5 tablespoons butter or 4 -5 tablespoons margarine
2 -3 tablespoons liquid smoke
2 jars of ragu creamy alfredo sauce
1 box angel hair pasta
salt and pepper

Steps:

  • Marinate chicken with minced garlic, salt, pepper and liquid smoke for about an hour or two in the fridge.
  • Melt 3 Tbs.
  • of butter in frying pan and add your marinated chicken and cook until done.
  • Set aside in a dish.
  • Melt 2 Tbs.
  • butter in the same frying pan and add in the onions and cook until halfway done.
  • Add in your mushrooms next and cook the liquid out of them.
  • When the mushrooms are halfway done add in your red bellpepper.
  • Set this mixture aside in a bowl.
  • Fry your bacon until done.
  • Drain on a paper towel.
  • Meanwhile, boil your noodles in salted water.
  • Remove the drippings from the pan but do not wipe it clean.
  • Pour both jars of the alfredo sauce and add a little water.
  • I normally add it to the jar and swish it around to get the rest of the sauce from the jar.
  • Once sauce starts to simmer pour all of your veggies from the bowl into the sauce and add in your chicken.
  • Stir well.
  • Let simmer for about 10- 15 minutes or until chicken is heated to desire temperature.
  • Drain your noodles and add your sauce together or pour your sauce on top of your noodles.
  • Whichever you prefer or is easier for you!

2 teaspoons minced garlic
2 1/2 cups whipping cream
1 cup freshly grated Parmesan
8 large egg yolks

1 pound spaghetti
4 cups coarsely shredded chicken (from 1 roasted chicken)
Freshly ground black pepper
1/2 cup chopped walnuts, toasted
1 tablespoon finely grated lemon peel

Steps:

  • Heat the oil in a heavy large frying pan over medium heat. Add the pancetta and garlic and saute until it is brown and crisp, about 8 minutes. Cool slightly.
  • In a large bowl, whisk together the cream, cheese, yolks, basil, and parsley to blend.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the spaghetti and cook until it is just tender but still firm to the bite, stirring occasionally, about 10 minutes. Drain.
  • Add the chicken to the pan with the pancetta and stir to combine. Next, add the spaghetti and the cream mixture and toss over medium-low heat until the chicken is heated through and the sauce coats the spaghetti thickly, about 4 minutes (do not boil or you might end up scrambling the eggs). Season the pasta, to taste, with pepper and salt if needed (the pancetta will likely add all the salt you need). Transfer the pasta to a large wide serving bowl. Sprinkle the walnuts and lemon zest over, and serve.

Steps:

  • Heat olive oil in 12-inch nonstick skillet over medium-high heat and brown chicken. Remove chicken and set aside.
  • Cook onion and bacon in same skillet, stirring occasionally, 6 minutes or until bacon is cooked and onion is tender. Add wine and cook 1 minute. Stir in Sauce and peas. Bring to a boil over high heat. Reduce heat to low, then return chicken to skillet. Simmer covered 5 minutes or until chicken is thoroughly cooked. Sprinkle, if desired, with cracked black pepper.

  • Preheat oven to 180 degrees. In a pan of boiling water cook the pasta according to instructions. In the mean time, Heat the oil in a pan, fry the chicken, bacon, onion, garlic and basil for about 3-5 mins until the onion softens and the meat browns
  • Turn the heat down to simmer and add the creme fraich, cream, and chicken stock. Ensure it isn't too hot or it may curdle. Simmer for 1-2 mins
  • Remove from the heat and stir in 1/2 of the cheese. Drain the pasta leaving a small amount of water to keep it moist. Mix it all together and put in an oven proof dish. Sprinkle remaining cheese on top
  • Bake in preheated oven until cheese has melted, serve with garlic bread

1 lb boneless, skinless chicken thighs, cut in quarters
½ lb bacon, sliced
1 cup onion, diced
6 cloves garlic, minced
3 eggs, medium
½ tsp salt
1 tsp pepper
1 tsp hot red chili pepper flakes
½ cup Parmesan cheese, grated
1 cup parsley, fresh
1 pkg whole wheat spaghetti

Steps:

  • Have all ingredients at room temperature before starting.
  • Cut the sliced bacon crosswise into smaller pieces. Sauté bacon, onion, garlic and chicken in a medium sauce pan until nicely browned and chicken is fully cooked. Drain fat from pan.
  • Time this so the mixture finishes cooking just when the pasta is done and you are ready for the final steps of putting together the whole dish. It is critical that the pasta and the chicken mixture are very hot for the dish to be a success.
  • Cook the spaghetti according to package directions using plenty of boiling unsalted water until al dente. Drain well.
  • Meanwhile, whisk the eggs with the salt, pepper, red pepper flakes, grated Parmesan cheese and the fresh minced parsley (or basil or other fresh herb of your choice).
  • Drain the pasta and pour it into a large bowl. Add the hot bacon mixture and toss to coat. Then toss again with the egg mixture. The heat of the spaghetti will cook the eggs. Serve with more Parmesan or Romano cheeses.
