World's Best Steak Sauce image

This is the best steak sauce I have ever found. We love it and use it even on the baked potatoes that I serve with the steak.

1/4 cup butter
2 1/2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon catsup
1 teaspoon Kitchen Bouquet
3 chopped green onions
1 (4 ounce) can of drained mushrooms
any left over meat drippings (optional)

Steps:

  • Melt butter in sauce pan.
  • Add lemon juice, Worcestershire, catsup and kitchen bouquet.
  • When the sauce starts to sizzle, add green onions and mushrooms.
  • Sizzle again and serve over grilled steak, or even slices of roast beef.

CLASSIC FRENCH BEARNAISE SAUCE

Number Of Ingredients 8

1 tablespoon black peppercorns
5 sprigs fresh tarragon, 2 whole, 3 chopped
1/2 cup white wine vinegar
3 shallots, finely minced
4 large egg yolks
1/2 lemon, juiced
2 sticks (1 cup) butter, clarified (see Cook's Note) and kept warm over low heat
Kosher salt and freshly ground black pepper

Steps:

  • Tie the peppercorns and 2 tarragon sprigs in cheesecloth and secure with butcher's twine to make a sachet. In a medium saucepan, combine the vinegar, shallots and sachet and simmer over low heat until the liquid is evaporated, 10 to 15 minutes. Let cool; discard the sachet.
  • In a medium bowl set over a double boiler, whisk together the egg yolks and lemon juice. Heat, whisking constantly, until the yolks are pale and slightly thickened. Slowly ladle in the clarified butter, whisking constantly, until the sauce is emulsified. If sauce looks like it is getting too thick, add water by the tablespoon until you reach the desired consistency. Remove from the heat and add the chopped tarragon and 1 tablespoon of the shallots. Season with salt and pepper.

Classic creamy peppercorn steak sauce

1/4 cup brandy or cognac
1/2 cup no sodium beef broth
1/3 cup heavy cream
1-2 tsp crushed whole black peppercorns
salt (to taste)

Steps:

  • In the same pan that you browned the steak, deglaze with the brandy/cognac over medium heat, scraping up any brown bits in the pan. When the brandy/cognac has reduced a bit, stir in the beef broth and cream. Add the peppercorns and bring to a gentle simmer, stirring occasionally, until thickened to your liking. Season with salt to taste.

2 cups balsamic vinegar
2 tablespoons red wine vinegar
1 onion, chopped
1 cup raisins
6 cloves garlic
2 anchovies
1/4 cup brown sugar
1 tablespoon toasted cumin seed
1 tablespoon whole cloves
1 tablespoon celery seed
Serving suggestion: Serve with grilled skirt steak garnished with pickled red Fresno chiles, fresh parsley leaves, and sea salt.

Steps:

  • Add the balsamic vinegar, red wine vinegar, onion, raisins, garlic, anchovies, brown sugar, cumin seed, cloves, and celery seed to a large saucepan and bring to a simmer. Cook until reduced by two-thirds. Strain the mixture, pressing on the solids to get maximum flavor. Discard the solids. The sauce will hold for 1 month in the refrigerator.
  • Serve with grilled skirt steak garnished with pickled red Fresno chiles, fresh parsley leaves, and sea salt.

1/4 cup ketchup
3 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
2 tablespoons white vinegar

  • Combine raisins and water in a bowl and let sit, covered, until raisins are plump, about 5 minutes.
  • Puree raisin mixture with rest of ingredients in blender until smooth.
  • Season with salt and pepper to taste.
