This marinara sauce tastes like it's been simmering all day, but you'll have a savory, rich dish on the table in under an hour.

2 tablespoons olive oil
1 cup diced onion
1 tablespoon minced garlic
¼ cup dry red wine
1 (28 ounce) can diced tomatoes
1 (28 ounce) can whole peeled tomatoes
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon dried parsley
¾ teaspoon sea salt
freshly ground black pepper to taste
1 pinch red pepper flakes
1 bay leaf

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function to heat the pot. Add olive oil and onion; cook until onion is translucent, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Pour in red wine and simmer until reduced by half.
  • Pour diced tomatoes and whole tomatoes into the pot. Bring to a simmer. Stir in basil, oregano, parsley, salt, pepper, red pepper flakes, and bay leaf. Press Keep Warm. Close and lock the lid. Seal the vent. Select Manual function and set timer for 10 minutes. Allow 10 to 15 minutes for the pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Discard bay leaf. Use an immersion blender to puree the sauce.

A tasty and quick Marinara sauce for pasta, and all sorts of other foods calling for a marinara sauce...can also be turned into a pizza sauce by adding more spices. Takes a little over a 1/2 hour to make.

Number Of Ingredients 11

1 (28 ounce) can crushed plum tomatoes (I use Scaflani, Pastene or Hunts)
1 tablespoon extra virgin olive oil (use one that tastes good as some are bitter and have weird taste)
4 medium garlic cloves
1 small shallots or 1 small onion
1 teaspoon dried basil (can use 3 tbsp fresh basil)
1/2 teaspoon oregano
1/2 teaspoon thyme
red pepper flakes (to taste 1/4 tsp or so)
black pepper
sea salt
1 medium carrot

Steps:

  • Heat Pressure Cooker on medium heat and add olive oil.
  • Chop onion and garlic however fine you like and add to hot oil.
  • Cook for a minute do not brown!
  • Throw in the rest of your spices except salt.
  • Throw in the carrot( I leave it in large chunks and remove it but you may keep it in sauce if you like so you can cut it to whatever size you like or even mince it).
  • Add the can of Tomatoes and some water--I use about 1/4 of the tomato can full of water -- it gets thick so you need to add enough or it could stick and burn.
  • Put lid on cooker and bring to pressure. Turn down enough to keep it low but still have pressure in pot. Cook for 1/2 Hour. Turn off and bring pressure down by either quick release method or take off burner and let it naturally release.
  • Take of lid and taste --add salt, maybe a pinch of sugar if you want. You can also stir in some more EVOO at this point remove carrot (or not), Voila! Done!
  • *** I like it on Penne pasta with some grated Pecorino Romano and Parmesan cheese but you can use it on whatever you like. Lasagana, Veal Cutlet. Makes a good base for Clam Zuppa sauce or Tuna sauce.

  • Open can and combine ingredients and stir until completely mixed.
  • If using Toppings on your pizza, you can go lighter on the sauce, but I can typically get two (2) 9" round pizzas or one (1) large rectangular sheet tray when making a Red Pizza.

Entered for safe-keeping, from Modernist Cuisine. I like how pressure cookers keep the flavor in, and wasn't completely satisfied with other P.C. recipe I found on the site. For a zestier sauce, try adding chili flakes, pureed anchovies or fresh basil. I like to toss in a parmesan cheese rind for flavor, then remove it after cooking. If you don't include the optional anchovies, this is vegetarian/vegan.

1/4 cup garlic, chopped (50g)
1/2 cup olive oil (100g)
28 ounces crushed tomatoes (794g of San Marzano or 6-in-1 Tomato Sauce)
extra virgin olive oil, to taste
salt, to taste
1/4 teaspoon red pepper flakes (optional)
2 anchovies, pureed (optional)
3 tablespoons fresh basil, chopped (optional)

Steps:

  • Mince garlic in a food processor for best results.
  • Fry garlic in olive oil until the garlic turns golden brown, but do not let get medium brown or burn. Might take about 5 minutes. (The Italians like to saute garlic on low to prevent browning.).
  • Add sautéed garlic and oil and canned tomatoes to pressure cooker. If using optional ingredients, add them here.
  • Pressure cook at a gauge pressure of 1 bar/15 psi for 45 minutes. Start timing when full pressure is reached. (For electric pressure cooker, use low pressure.).
  • Depressurize the cooker naturally. (Relax, it doesn't take very long to come down from low pressure.).
  • Season the sauce to taste with extra-virgin olive oil and/or salt.
  • This keeps for up to 5 days when refrigerated or up to 6 months when frozen.

1 fryer, cut up
2 tablespoons peanut oil
1 cup celery, diced
1 cup onion, chopped
1/2 cup bell pepper, diced
4 garlic cloves, finely chopped
1 cup rhine wine
4 cups tomatoes, canned whole with juices
louisiana hot sauce, to taste
1 teaspoon salt
2 bay leaves, whole

Steps:

  • Add the peanut oil to a very hot pressure cooker pot. Brown the cut up chicken pieces nicely on all sides.
  • Add all the rest of the ingredients to the pot and stir to blend.
  • The amount of Louisiana Hot Sauce you add determines how "piquante" your dish will be. Start off with a little, you can always add more at the table when the meal is served.
  • Place lid on pressure cooker tightly. Put pressure regulator weight in place. Leave heat under cooker on high until the weight begins to jiggle. Lower heat immediately to a level that keeps the weight just barely moving. Time from this point on for 12 minutes. Remove pot from heat and cool.
  • When the pressure has been reduced, open the pot and place back on the burner. Stir the ingredients very gently to distribute and check the consistency of the sauce. If it is too thin, turn the fire up high and reduce the liquid. If it is too thick, add a little water.
  • Serve the Sauce Piquante over hot fluffy rice with extra Louisiana Hot Sauce on the side for those who like it fiery hot.
