CLASSIC ICED SUN TEA

Classic Iced Sun Tea image

Bright sunlight helps slow-brew Ceylon orange pekoe tea and cold water into a deeply flavored beverage strong enough to withstand abundant ice, yet without bitterness, making it a favorite for a summer day.

Provided by Martha Stewart

Categories     Food & Cooking     Drink Recipes

Yield Makes about 12 cups

Number Of Ingredients 4

12 cups cold water
4 tablespoons loose Ceylon orange pekoe tea (or 12 tea bags)
Ice, for serving
Mint sprigs or lemon slices, for garnish

Steps:

  • Pour water over tea, and steep in bright sunlight until rich brown and translucent but not cloudy, 2 1/2 to 3 hours. Strain. Serve over ice with garnish.

ICED SUN TEA

Iced Sun Tea image

I find most recipes for sun tea to be weak and tasteless. I like this recipe and usually drink tons of it in warm weather.

Provided by PalatablePastime

Categories     Beverages

Time 3h5m

Yield 4-5 serving(s)

Number Of Ingredients 5

6 small orange pekoe and black tea bags
3 small flavored herbal tea bags (fruit, rose hip or hibiscus flower are great)
1/2 fresh lemon (optional)
1/2 fresh lime (optional)
honey, amount to taste (optional)

Steps:

  • Remove any tags from the tea bags (prevents dye from leeching into the tea) and place them in the bottom of a clear, glass, 1/2 gallon pitcher.
  • Fill with cold water , add lemon and lime and cover with plastic wrap or lid (keeps gnats and other creepies out).
  • Place outdoors in the sun (can do out of the sun as well, but takes just a bit longer).
  • Allow to brew for 5-6 hours or until it is as dark as you like (warmer weather brews it faster).
  • Remove tea bags and fruit and serve tea over ice, sweetened with honey if desired (mix it in while tea is warm).
  • Tea will keep about 6 hours, after which the quality decreases rapidly.
