This Wassail recipe makes a delicious Wassail mix to add to water for a quick hot citrus drink on cold days. You will love the orange and lemon flavors with a hint of cinnamon.

20 oz dry Tang powder
2 pkgs lemonade Kool-Aid (dry, the kind you add sugar to)
2 cups sugar
2 tsp. vanilla
3 tsp. cinnamon
1 1/2 tsp. cloves

Steps:

  • In a large bowl, add 1/2 cup of the Tang and the 2 tsp vanilla. Mix well.
  • Add the rest of the ingredients and mix until everything is evenly distributed. Store in an airtight container.
  • To serve: Mix 2-3 heaping spoonfuls into a mug of hot water and stir.

BOOZY HOT WASSAIL

A semi-traditional wassail recipe made with baked apples, hard cider, wine and brandy. See notes to make non-alcoholic!

4 small apples
4 tablespoons brown sugar or demerara sugar ((55 grams))
1 medium orange
1 teaspoon whole cloves
1/2 cup water ((125 ml))
1 quart hard cider ((1 liter))
2 cups port or sweet madeira wine ((500 ml))
1 cup brandy ((250 ml))
1/2 lemon (, halved)
2 cinnamon sticks
1 teaspoon whole allspice

Steps:

  • Preheat oven to 350 degrees F.
  • Remove core of apples with a small knife or melon baller. Place in a 4-quart or larger dutch oven or other oven-proof pot. Fill the cavity of each apple with 1 tablespoon of brown or demerara sugar. Stud the orange with the whole cloves and place in the pot. Add the water.
  • Bake until apples are tender but still maintain their shape, 35-45 minutes.
  • Remove pot from the oven and place on the stove. Cut orange into quarters and return to the pot. Add hard cider, wine, brandy, lemon, cinnamon sticks, and whole allspice.
  • Barely bring to a boil over medium high heat, then reduce heat and simmer for about 20 minutes, stirring occasionally. Serve immediately or keep warm until ready to serve.

2 cups grape juice
1 (355 ml) can frozen orange juice concentrate
2 cups water
cinnamon
ginger
allspice
4 whole cloves

Steps:

  • Mix and heat everything together in a pot on the stove, or use a Crockpot for convenience.
  • Add as much spices as you think is necessary. I like my wassail with lots of cinnamon.
  • You may choose to use ground cloves instead of whole cloves.
  • Add a splash of rum if alcohol is desired.

2 quarts apple cider
1-1/2 cups orange juice
3/4 cup pineapple juice
1 tablespoon brown sugar
1/2 teaspoon lemon juice
2 cinnamon sticks (3 inches)
Dash ground cinnamon
Dash ground cloves

Steps:

  • In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.
