110g softened butter
110g golden caster sugar
2 large eggs
½ tsp vanilla extract
110g self-raising flour
150g softened butter
300g icing sugar
1 tsp vanilla extract
3 tbsp milk
food colouring paste of your choice (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and fill a 12 cupcake tray with cases.
  • Using an electric whisk beat 110g softened butter and 110g golden caster sugar together until pale and fluffy then whisk in 2 large eggs, one at a time, scraping down the sides of the bowl after each addition.
  • Add ½ tsp vanilla extract, 110g self-raising flour and a pinch of salt, whisk until just combined then spoon the mixture into the cupcake cases.
  • Bake for 15 mins until golden brown and a skewer inserted into the middle of each cake comes out clean. Leave to cool completely on a wire rack.
  • To make the buttercream, whisk 150g softened butter until super soft then add 300g icing sugar, 1 tsp vanilla extract and a pinch of salt.
  • Whisk together until smooth (start off slowly to avoid an icing sugar cloud) then beat in 3 tbsp milk.
  • If wanting to colour, stir in the food colouring now. Spoon or pipe onto the cooled cupcakes.

Sometimes there's nothing better than a classic chocolate cupcake! This recipe will give you a soft and fluffy chocolate cupcake base and a delightfully creamy chocolate buttercream frosting. A must make for chocolate lovers!

1 cup all-purpose flour, not packed
1 cup granulated sugar
1/2 cup cocoa powder
3/4 tsp baking soda
3/4 baking powder
1 tsp instant espresso powder
1/2 tsp salt
1/4 cup vegetable oil
1 large egg (at room temperature)
1/2 cup boiling water
1/2 cup milk (I used whole, but reduced fat or even skim should work!)
1 tsp vanilla extract
2 sticks (8 ounces) unsalted butter, very soft
1 1/2 cups cocoa powder, sifted
3 cups confectioners' sugar, sifted (more only if needed)
1/3 cup heavy cream
1 teaspoon vanilla extract
1/4 teaspoon finely ground sea salt (table salt will work, too)

Steps:

  • Preeat oven to 350 degrees (F). Line a 12 mold cupcake tin with paper liners; lightly grease cupcake liners with non-stick spray; set aside.
  • In a large bowl stir together the flour, sugar, cocoa powder, baking powder, espresso powder, baking soda and salt; mix well to combine; set aside.
  • In a separate bowl combine the eggs, milk, oil and vanilla; beat until well combined. Pour liquid mixture into the dry mixture and gently stir until just combined. Stir in boiling water (batter will be thin); mix until combined.
  • Fill each prepared muffin tin 2/3 full with batter. Bake for 16-18 minutes, or until the tops are puffed up and a cake-tester inserted in the center comes out clean. Allow the cupcakes to cool a few minutes in the pan before transferring to a cooling wrack to cool completely. Once cool, frost with chocolate buttercream and decorate as desired.
  • In a large bowl using a handheld mixer or in the body of a stand-mixer fitted with the paddle attachment, beat the butter until smooth and creamy; about 2 minutes. On low speed, stir in cocoa powder. Alternately add powdered sugar and heavy cream, beating until smooth, and scraping down the sides of the bowl with a rubber spatula as needed. Add in vanilla and salt. Once smooth, beat on medium-high speed for two minutes.

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line the muffin tin with cupcake liners.
  • Whisk the flour, baking powder, and salt together in a medium bowl.
  • In another medium bowl, beat the eggs and sugar with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the butter and then the vanilla.
  • While mixing slowly, add half the dry ingredients, then add all the milk, and follow with the rest of the dry ingredients. Take care not to over mix the batter. Divide the batter evenly in the prepared tin (about 1/3 cup batter per cup cake).
  • Bake until a tester inserted in the center of the cakes comes out clean, 20 to 25 minutes. Cool cupcakes on a rack in the tin for 10 minutes, then remove. Cool on the rack completely.
  • For icing:
  • Put the chocolates in a medium heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl over, but not touching, the water. Stir the chocolate occasionally until melted and smooth. (Alternatively, put the chocolate in a medium microwave-safe bowl. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue heat until completely melted, about 1 to 2 minutes more.)
  • Add the confectioners' sugar, milk, butter, vanilla extract, and salt and beat with an electric mixer until smooth and creamy. Divide icing evenly between cupcakes and swirl with the back of a spoon or an offset spatula. Top with a sugar cookie or marshmallow candies. Serve.

140g butter, softened
275g icing sugar
1-2 tbsp milk

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with paper cases.
  • Cream the butter and sugar together in a bowl until pale. Beat the eggs in a separate bowl and mix into the butter mixture along with the vanilla extract.
  • Fold in the flour, adding a little milk until the mixture is of a dropping consistency. Spoon the mixture into the paper cases until they are three quarters full.
  • Bake in the oven for 10-15 minutes, or until golden-brown on top and a skewer inserted into one of the cakes comes out clean. Set aside to cool for 5-10 minutes. Then place on a wire rack.
  • For the buttercream icing, beat the butter until soft. Add half the icing sugar and beat until smooth.
  • Add the remaining icing sugar with 1 tbsp milk, adding more milk if necessary, until the mixture is smooth and creamy. Add food colouring (optional) and mix well.
  • Spoon the buttercream into a piping bag and add a nozzle of your choice. Pipe in a swirl motion and then enjoy!

  • Pre-heat the oven to 180°c/350ºF and line a 12-hole muffin pan with cupcake liners.

  • Add the flour, baking powder and salt and mix through then add the milk, yogurt and vanilla.
  • Mix until everything is combined then spoon the batter into the cupcake liners.
  • Place into the oven and allow to bake for 12-15 minutes until the cupcakes are golden brown and a skewer inserted comes out clean.
  • Remove from the oven and allow to cool completely.
  • To make the buttercream, whip the butter until pale then add the icing sugar and vanilla extract and whip until soft and fluffy. Add a little milk if your buttercream is too stiff.
  • Transfer the whipped buttercream to a piping bag and pipe swirls of frosting onto the cooled cupcakes.
  • Top with sprinkles and serve. (These cupcakes can be made the day before you intend to serving them.)

1 1/4 teaspoon baking powder
1/4 teaspoon salt
Strawberry Cream Cheese Frosting

Steps:

  • Preheat the oven to 350 degrees F and line a muffin tin with paper cupcake liners.
  • Add the butter and sugar to a medium bowl. Beat with a hand-held electric mixer on medium-high speed until light, fluffy, and thick or about 3-5 minutes.
  • Add in the eggs one at a time, beating in between to fully incorporate each egg. Add in the vanilla.
  • Add the baking powder, salt, and half of the flour to the bowl. Beat on the lowest speed. Add half of the milk. Beat on the lowest speed. Add the remaining flour and milk and beat on the lowest speed to just combine the batter.
  • Divide the batter among the paper liners, filling each cup with about 1/4 cup batter.
  • Bake for 20-22 minutes or until just golden brown around the edges and a cake tester inserted into the center comes out clean.
  • Remove from the oven. Transfer cupcakes to a wire rack and let cool completely.
  • Frost as desired.

Steps:

  • Preheat oven to 350F/180C. Line muffin tin with cupcake liners. Set aside.

  • In a standing mixer fitted with the paddle attachment, beat together butter and sugar on medium speed until light and fluffy, about 3 minutes. Allow cupcakes to sit for 10 minutes, then remove from pan and allow to cool completely on a wire rack.
  • Unfrosted cupcakes can be kept tightly covered at room temperature for up to 3 days, or in the freezer for up to 2 months. Thaw, still covered, on the counter or overnight in the fridge.
