CAIPIRINHA
It doesn't get simpler or more refreshing than a classic caipirinha, which is the national cocktail of Brazil. The sweet-tart drink calls for just three ingredients: lime, sugar, and cachaça, a sugarcane liquor that's like a smokier version of rum.

- Cut lime into 6 wedges. Squeeze the wedges into an old-fashioned glass, then add wedges. Add cachaça and sugar; use a spoon to muddle. Fill glass with ice, then stir well to chill.

- Cut each of the lime halves into four chunks. Put in a large mortar with the sugar and squish well with a pestle to break them down - they will release their juices, leaving you with a sweet lime syrup. Remove the lime peel, squeeze to release the last bits of juice, then discard. Transfer the lime syrup to a small plastic container and freeze for at least 4 hrs, ideally overnight.
- When you're ready to make the cocktail, put the ice in a blender suitable for crushing ice, then add the frozen syrup and cachaça. Blend at a high speed until smooth and thick. Transfer to cocktail glasses or tumblers and serve immediately.

- Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
- Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.

- You should be able to pick up a bottle in most supermarkets these days, I’ve seen it made with vodka as well but if you can, use Cachaça to ensure it’s the real deal.Roll the limes on your chopping board with the heel of your hand to get all the lovely juices going, then cut them into wedges and squeeze the juice into a large 1½ litre jug, chucking the wedges in there after you’ve squeezed them.Add the sugar and ginger then spend a couple of minutes bashing and squishing it all up with the end of a wooden rolling pin to really get all those flavours going.
- Pour in the Cachaça and stir well. Have a little taste then tweak the acidity to your liking, adding more sugar if needed.
