WHITE WINE-STEAMED CLAMS

White Wine-Steamed Clams image

Provided by Marc Murphy

Time 25m

Yield 10 servings

Number Of Ingredients 8

10 to 12 pounds (about 100) littleneck or Manila clams, scrubbed
4 shallots, thinly sliced
8 cloves garlic, thinly sliced
1/2 cup chopped fresh parsley
2 cups white wine
2 1/2 sticks unsalted butter, sliced
Kosher salt and freshly ground pepper
Thyme sprigs, for garnish

  • Divide the shallots, garlic and parsley among the packets. Drizzle each with about 3 tablespoons wine and top with 2 tablespoons butter; season with salt and pepper. Gather the edges of the foil at the top and crimp to seal.
  • Place the packets on the grill and cook 10 to 12 minutes, or until the clams open. (Discard any unopened clams.) Serve straight from the packet; garnish with thyme.

PASTA WITH CLAMS IN WHITE WINE GARLIC SAUCE

Pasta with Clams in White Wine Garlic Sauce image

Pasta with Clams in White Wine Garlic Sauce, a twist on the classic Spaghetti alle Vongole made with bucatini and littleneck clams in a white wine garlic sauce.

Provided by Kristina Todini, RDN

Categories     Main Dishes

Time 35m

Number Of Ingredients 10

8 ounces pasta (bucatini, fettuccine, etc.)
1 generous pinch salt (for pasta boiling water)
2 tablespoons olive oil
2 whole garlic cloves
1 pinch red pepper flakes (to taste)
1/2 cup dry white wine
1 pound clams (soaked and cleaned)
1 cup chopped parsley
2 tablespoons fresh lemon juice (from 1 lemon)
1 pinch salt and pepper (to taste)

Steps:

  • Boil pasta: Boil pasta in lightly salted water until al dente (slightly firm), about 8 minutes (or according to package instructions).
  • Make white wine sauce: Meanwhile, heat olive oil in a large pan over medium-high heat. Add garlic cloves and cook 1-2 minutes, or until garlic gives off its strong aroma. Add white wine and cook until the liquid starts to boil, then add clams to the pan and sprinkle with red pepper flakes. Cook over medium heat until all of the clams open wide. If any clams do not open after 5-7 minutes, remove them to the trash.
  • Add pasta and season: When pasta is done, reserve about 1/2 cup of pasta water and set aside. Then drain pasta and add to the pan with the clams and white whine sauce. Mix the pasta with the white wine and clams, adding a small amount of pasta water to the pan to help thicken the sauce. Cook 1-2 minutes and remove from heat. Sprinkle with salt and pepper (to taste), add fresh chopped parsley, and a squeeze of fresh lemon before serving.

1 tablespoon plus 1/2 cup extra virgin olive oil
3 shallots, peeled and sliced
3 cloves garlic, peeled and thinly sliced
2 sprigs fresh thyme
5 sprigs Italian parsley
1 bay leaf
1 1/2 pounds Maine butter clams (or littlenecks or mussels)
1 cup dry white wine

  • Rinse clams and discard any that are open. Clams will nearly always have some dirt, sand, or mud in them even if you rinse them with great care. The sand will stay at the bottom of your pot when cooking. When pouring your broth into a bowl, leave ~ 1/4 to 1/3 of the liquid (and all of the sand) in the pan. This prevents a sandy broth.
  • Bring a large pan to medium high heat and add butter, chorizo, onions. Cook ~ 8 minutes or until chorizo is cooked through and add garlic. Cook 1-2 minutes or until fragrant and add white wine and clam juice or water. Bring to a boil and add clams.
  • Cover and cook an additional 5-7 minutes or until the clams have opened. Trash any clams that have not opened (they are bad). Remove clams to a large bowl as they open. Remove sausage with a slotted spoon (place in clam bowl) and pour most of the broth into your bowl, careful to leave any sand in the pan and not in your dinner.
  • Zest lemon first and then juice. Add 2 Tbsp lemon juice and garnish with lemon zest and parsley.
