4 slices bacon (cut into medium dice)
2 tablespoons butter
2 garlic cloves, (minced)
1 small onion, (diced)
3 stalks celery, (diced)
2 tablespoons all-purpose flour
¼ cup white wine

  • Melt the butter in the stockpot with the bacon fat. Add the garlic, onion and celery, and cook, stirring frequently, until the onions become soft but not brown, about 5-6 minutes.
  • Whisk in the flour and stir for about a minute trying to get rid of any lumps. Gradually, stir in the white wine and reduce for about 1 minute.

Thick and creamy Clam Chowder is one of my favorite easy soup recipes, and this one has all the traditional elements we love, like diced potatoes, veggies and plenty of delicious clams.

1/2 teaspoon freshly ground black pepper
1 Tablespoon red wine vinegar

MINORCAN CLAM CHOWDER

Minorcan Clam Chowder image

The datil pepper's fruity, spicy heat is the secret ingredient in Minorcan clam chowder and, once you try it, you'll have a new appreciation for red chowder.

Provided by Priscilla

Categories     Appetizer     Main     Soup

Number Of Ingredients 17

2 dozen Florida clams*
4 ounces salt pork or bacon
1 datil pepper, minced (use half a pepper if you're heat shy)
1 medium onion, diced
1 green bell pepper, diced
2 medium carrots, diced
1 cup small red potatoes, peeled and diced
1 15-ounce can chopped tomatoes
3 tablespoons tomato paste
1 teaspoon fresh garlic, minced (1-2 cloves)
1 teaspoon oregano
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon salt
3 bay leaves
1 8 ounce bottle clam juice
2 cups fish stock**

Steps:

  • Take 4 ounces of salt pork and cut into small pieces. If using bacon, cut crosswise into 1/2 inch pieces. Plase in a soup pot and cook for 10 minutes. When the salt pork (or bacon) is browned, remove and place on a paper towel, leaving the rendered fat in the pot. Add the diced onion, green pepper, and carrots to the rendered fat and cook 5-10 minutes until the onions are translucent.
  • Stir in one 15-ounce can of chopped tomatoes, 3 tablespoons of tomato paste, all the seasonings (use fresh or dried) and bay leaves. Add one minced datil pepper or 2-3 teaspoons of datil hot sauce (to taste).
  • Next, add the 8-ounce bottle of clam juice and 2 cups of fish stock. Simmer on low heat for 1 hour.
  • Meanwhile, place the 2 dozen fresh clams in a colander in the sink. Lightly scrub the outside of the clams and rinse to remove any dirt or sand. Place the clams in a large pan over medium-high heat with 1/3 cup of water. Cover the pan and cook the clams for approximately 10 minutes until the clams open. Remove from stove.
  • Using a slotted spoon, place the clams in a colander, let drain. Throw away any unopened clams. When the clams cool, remove the meat from the shells. Chop the clam meat into bite-size pieces. Set aside. Discard clam shells.
  • Next, add one cup of the diced potatoes to the soup and cook approximately 20 minutes or until the potatoes are tender, but not mushy. Add the chopped clams and cooked salt pork. Cook just long enough for the clams and pork to be heated through - approx. 5 minutes. Taste and adjust seasonings if necessary. This soup tastes even better the next day because the flavors have had more time to meld.

NEW ENGLAND CLAM CHOWDER RECIPE

New England Clam Chowder Recipe image

Rich, creamy, and filling, yet also delicate and mild, the sweetness of the pork complementing the faint bitterness of the clams, accented by bits of celery and onion.

Provided by J. Kenji López-Alt

Categories     Appetizer     Entree     Lunch     Dinner     Mains     Soups and Stews     Soup

Time 1h

Yield 6

Number Of Ingredients 12

1/2 pound salt pork or bacon, cut into 1/2-inch cubes
2 tablespoons butter
1 medium onion, finely chopped (about 1 cup)
2 stalks celery, finely chopped (about 1 cup)
1 cup water or clam juice
2 1/2 pounds live cherrystone or littleneck clams (see note)
1 quart whole milk
1 1/2 pounds russet or yukon gold potatoes, peeled and cut into 1/2-inch cubes
2 bay leaves
Kosher salt and freshly ground black pepper
1 cup heavy cream
Oyster crackers, for serving

Steps:

  • Combine salt pork and 1/4 cup water in a heavy-bottomed stock pot or Dutch oven over medium heat, stirring occasionally, until water has evaporated and pork has begun to brown and crisp in spots, about 8 minutes. Add butter, onion, and celery. Continue to cook, stirring occasionally, until onions are softened but not browned, about 4 minutes longer. Add clam juice or water and stir to combine.
  • Add clams or quohogs and increase heat to high. Cover and cook, opening lid to stir occasionally, until clams begin to open, about 3 minutes. As clams open, remove them with tongs and transfer to a large bowl, keeping as many juices in the pot as possible and keeping the lid shut as much as possible. After 8 minutes, discard any clams that have not yet begun to open.
  • Add milk, potatoes, bay leaves, and a pinch of salt and pepper to the pot. Bring to a boil, reduce to a bare simmer, and cook, stirring occasionally, until potatoes are tender and starting to break down, about 15 minutes.
  • Meanwhile, remove meat from inside the clams and roughly chop it. Discard empty shells. Transfer chopped clams and as much juice as possible to a fine-mesh strainer set over a large bowl. Let clams drain, then transfer chopped clams to a separate bowl. Set both bowls aside.
  • Once potatoes are tender, pour the entire mixture through the fine-mesh strainer into the bowl with the clam juice rapping the strainer with the back of a knife or a honing steel to get the liquids to pass through. Transfer strained solids to the bowl with the chopped clams. You should end up with a white, semi-broken broth in the bowl underneath, and the chopped clams, potatoes, salt pork, and aromatics in the separate bowl.
  • Transfer liquid to a blender and blend on high speed until smooth and emulsified, about 2 minutes. Return liquid and solids back to Dutch oven. Add heavy cream and stir to combine. Reheat until simmering. Season well with salt and pepper. Serve immediately with oyster crackers.

Yield Makes 8 to 10 main-course servings

Number Of Ingredients 18

3 medium leeks (white and pale green parts only), quartered lengthwise and cut crosswise into 1/3-inch-thick slices
1 cup water
40 small (2-inch) hard-shelled clams (4 pounds) such as littlenecks, scrubbed well
30 medium or large oysters, shucked and liquor reserved
3 bacon slices, cut crosswise into 1/2-inch-wide strips
2 tablespoons unsalted butter
1 large onion, chopped
5 celery ribs, cut into 1/3-inch dice
1 Turkish or 1/2 California bay leaf
2 pounds russet (baking) potatoes (4 medium)
1/2 cup dry white wine
2 1/2 cups bottled clam juice or water
1 cup heavy cream
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Old Bay seasoning
1/8 teaspoon cayenne, or to taste
1/2 cup chopped fresh parsley

Steps:

  • Wash leeks well in a bowl of cold water, then lift out and drain well.
  • Bring 1 cup fresh water to a boil in a 5-quart heavy pot, then add clams and cook over moderately high heat, covered, until clams are fully open, checking every minute after 5 minutes and transferring clams with a slotted spoon to a bowl as they fully open. (Discard any clams that have not opened after 8 minutes.) Pour cooking liquid through a fine-mesh sieve into another bowl.
  • Remove cooked clams from shells, discarding shells. Coarsely chop clams and transfer to a bowl, then coarsely chop raw oysters and transfer to another bowl. Pour reserved oyster liquor through sieve into bowl with clam cooking liquid.
  • Cook bacon in cleaned pot over moderate heat, stirring, until crisp, about 6 minutes, then transfer bacon with a slotted spoon to paper towels to drain. Add butter to pot and when foam subsides, cook onion, leeks, celery, and bay leaf, stirring occasionally, until vegetables are softened, 12 to 15 minutes.
  • While vegetables are cooking, peel potatoes and cut into 1/2-inch cubes. Add wine to softened vegetables and boil until reduced by half, 1 to 2 minutes. Add potatoes, clam cooking liquid, and bottled clam juice. (If potatoes aren't fully covered with liquid, add more clam juice or water.) Simmer, covered, until potatoes are tender, 20 to 25 minutes.
  • Purée 2 cups soup in a blender until very smooth (use caution when blending hot liquids) and return to pot. Add cream, salt, pepper, Old Bay, and cayenne and cook at a bare simmer, stirring, until soup is heated through (do not let boil). Add clams and oysters and cook, stirring, just until oyster pieces begin to curl, 1 to 2 minutes. Remove from heat and discard bay leaf, then stir in parsley. Serve topped with crumbled bacon.

CLAM BROTH

Clam Broth image

Making clam broth is as easy as steaming clams in water. This recipe will yield one quart of broth.

Provided by Craig Fear

Categories     Broth

Number Of Ingredients 2

7-8 pounds cherrystone or quahog clams
3 cups water

Steps:

  • Clean clam shells of any grit by rinsing and scrubbing in cold, running water. Wild-caught quahogs may need a little further cleaning. If there's a lot of dirt on the shells, soak them in cold water for 5-10 minutes then rinse and scrub them thoroughly with a sturdy brush.
  • Bring the 3 cups of water to a boil in a large, wide stockpot.
  • Add clams and cover pot. Boil for five to ten minutes, or until the shells open. The shells will open at different times. Remove the clams with tongs as they open and set aside to prevent the meats from overcooking.
  • Let the broth sit for about 10 minutes to allow any grit or pieces of shell to settle to the bottom.
  • While the broth sits, remove the meats from their shells and refrigerate if not using them right away. You'll get about 2 cups or 1 pound of clam meats.
  • Slowly strain the broth through a fine mesh colander but don't pour off the last few ounces which contains the grit.
  • Chill whatever you won't be immediately using. Store in the fridge for up to 3 days or in the freezer for up to 3 months.

  • In a large soup pot, add the clams and 4 cups of water. Bring to a simmer over moderately high heat, cover and cook until the clams start to open, about 4 minutes. As the clams open, transfer them to a large bowl to cool; discard any clams that do not open. Strain the clam liquid into a large measuring cup (there should be 5 1/2 cups of liquid). Add enough chicken broth to make 7 1/2 cups. Remove the clams from their shells and coarsely chop them.
  • Wipe out the soup pot and place over moderate heat. Add the bacon and cook, stirring occasionally, until crisp, about 12 minutes. Add the onions, carrots, celery, 2 teaspoons of salt, cayenne and the bay leaf. Cook until the vegetables are soft, about 10 minutes. Stir in the flour and cook until it begins to stick to the bottom of the pan, about 2 minutes. Stir in the clam-broth mixture and bring to a boil. Add the potatoes, corn and Old Bay and simmer over moderately low heat until the potatoes are tender, about 15 minutes. Stir in the half-and-half, parsley, Worcestershire sauce and Tabasco. Remove from the heat and stir in the clams. Discard the bay leaf and season the chowder with salt and pepper. Ladle the chowder into bowls and serve.
