2 hearts romaine lettuce
2 cups jarred citrus salad of orange and grapefruit sections, drained - fresh oranges and grapefruits may also be used but to supreme fruit (method below*) takes extra time
2 tablespoons marmalade
2 tablespoons white wine or cider vinegar
1/3 cup extra-virgin olive oil
Salt and pepper
2 tablespoons chopped or snipped chives

Steps:

  • Chop lettuce. Arrange lettuce on platter and top with pieces of grapefruit and orange.
  • *To supreme fresh oranges and/or grapefruits instead, cut off ends then remove skin in strips working all the way around the fruit from top to bottom. Cut along the side of the membrane to remove the sections of the citrus fruit.
  • Combine marmalade with 2 splashes of vinegar and stream in extra-virgin olive oil. Pour dressing over the salad and season with salt and pepper. Garnish platter with chopped or snipped chives.

3 navel oranges
3 small pink or red grapefruits
3 blood oranges
Juice of 2 lemons (preferably Meyer lemons)
1/4 cup sugar
1 vanilla bean, split lengthwise, seeds scraped out

Steps:

  • Trim the bottoms and tops of the navel oranges, grapefruits and blood oranges, then cut away the peel and pith with a paring knife. Slice the fruit crosswise and arrange on a rimmed platter.
  • Combine the lemon juice, sugar, 1/4 cup water and the vanilla seeds in a small saucepan over medium heat. Bring to a simmer, then remove from the heat and let cool to room temperature.
  • Pour the syrup over the fruit, cover and refrigerate at least 2 hours or overnight.

2 tablespoons fresh squeezed orange juice
1 teaspoon Dijon mustard
2 tablespoons apple cider vinegar
2 tablespoons honey
2 tablespoons extra virgin olive oil

Steps:

  • combine all ingredients together and whisk until well incorporated.
  • Drizzle 2-3 tsp of dressing over your salads.
  • Note: this is a great dressing to go with any green salad that is combined with some sort of fruit (pear, orange segments, grapes, strawberries, dried sweet cranberries), add some type of nut (almonds, walnuts), and cheese (crumbled bleu, feta, gorgonzola). MAKE IT YOUR OWN!

Summer is the perfect time for this healthy dessert salad! Choose ripe and heavy fruit for the best results. Salad needs to marinate for at least two hours for best results, so plan accordingly.

4 navel oranges
2 pink grapefruit
3/4 cup fresh orange juice
3 tablespoons orange flower water
2 tablespoons honey
1 vanilla bean, halved lengthwise and seeds scraped
1/2 teaspoon cinnamon
1 small mint leaf, garnish

Steps:

  • Peel oranges and grapefruits and remove pith. Cut in between membranes to release fruit sections into a bowl.
  • Squeeze juice from leftover membranes into a small bowl.
  • Add orange juice, orange flower water, honey, vanilla bean seeds and cinnamon to the bowl of membrane juice and whisk.
  • Strain juice over fruit and refrigerate for at least 2 hours or overnight.
  • Garnish with mint leaves and serve.
