Ingredients

4 slices fresh lemon
4 slices fresh orange
4 (6 to 8-ounce) skinless salmon fillets
Sea salt and freshly ground black pepper
2 tablespoons freshly chopped dill
2 tablespoons sun-dried tomatoes in oil, plus 1 tablespoon oil from jar
2/3 cup white wine

Steps:

Preheat the oven to 375 degrees F.
In a large 9 by 13 shallow baking dish place 1 lemon slice with 1 orange slice side by side so you'll end up with 4 groups. Each salmon fillet will have its own bed of citrus. Season each fillet with salt and pepper then place each salmon fillet over the 2 slices of lemon and orange. In a small bowl mix the dill, sun-dried tomatoes and tomato oil. Divide mixture on top of the salmon fillet, then drizzle with the wine. Place the baking dish in the oven and cook for 8 to 10 minutes.

1 1/2 cups flour
3/4 cup caster sugar
150 g butter, cut in to cubes
4 eggs
1 3/4 cups caster sugar
2 grated lemons, rind of
2 grated oranges, rind of
1/2 cup lemon juice
1/4 cup orange juice
1/3 cup flour
icing sugar, to dust

Steps:

Preheat oven to 180C.
Spray a 20x30 cm slice tin with non stick spray and line with baking paper.
Place the first 3 ingredients in a food processor and mix until the pastry clumps around the blade.
Press this mixture into the prepared tin and bake 15 minutes until dry and golden brown.
Without washing the food processor , whiz the eggs, caster sugar and lemon and orange rind until really frothy.
Add the juices and flour and pulse to just combine.
Carefully pour over the hot base and return to the oven for 35-40 minutes, until topping is set.
Let cool and dust with sifted icing sugar.

Twelve 3.5-inch round soft-baked sugar cookies
4 ounces ready-made pink cookie icing
2 ounces ready-made white cookie icing
4 ounces ready-made orange cookie icing
4 ounces ready-made green cookie icing
4 ounces ready-made yellow cookie icing

Steps:

Lay the sugar cookies on a work surface. Pipe a line of pink icing around the edge of each of 4 cookies, then flood the centers with the pink icing. Immediately pipe a circle of white icing just inside each pink icing line. Pipe a dot of white icing in the center of each cookie. Drag a toothpick through the white icing traveling toward the center of the cookie. Repeat the process in 1-inch intervals, creating citrus segments. Repeat this process using the orange, green and yellow icings on the remaining cookies. Let stand until set, about 1 hour.

When lemons are plentiful this is perfect. Be careful not to overcook. My cooking times are a little loose because I've never actually written down how long it takes to bake!!

250 g butter
1/2 cup caster sugar
2 cups plain flour
1 teaspoon baking powder
2 teaspoons lemon zest, finely chopped
4 eggs
1/2 cup sugar
1 lemon, rind of
2 tablespoons flour
1/2 cup lemon juice
1/2 cup cream

Steps:

For the base, cream the butter and sugar. Add flour, baking powder and zest and mix well. Press into base of lined slice tray (30cmx20cm).
Bake in 180C oven until base is slightly browned. (about 15-20 minutes).
Meanwhile beat the eggs, sugar, rind and flour together. Add the juice and cream, beating together well. Pour over base and bake in 160C oven until set. Maybe another 15-20 minutes.
Leave to cool then dust with icing sugar and cut into fingers or squares.
