1/3 cup orange juice
2 tablespoons lemon juice
4-1/2 teaspoons honey
2 teaspoons cornstarch
1-1/2 teaspoons grated lemon zest
1/4 teaspoon ground allspice
24 fresh strawberries
16 cubes fresh pineapple
2 small bananas, cut into 1-inch pieces
2 teaspoons minced fresh mint

Steps:

  • In a small saucepan, combine the first six ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool to room temperature., Thread fruit onto eight metal or soaked wooden skewers. Brush with half of glaze. Lightly oil grill rack., Grill, covered, over medium heat until lightly browned, 5-7 minutes, turning occasionally and basting frequently with remaining glaze. Just before serving, sprinkle with mint. Serve warm.

1 medium orange
1/4 cup chopped fresh cilantro
1 tablespoon smoked paprika
1/4 teaspoon ground red pepper (optional)
4 cups cubed mango, watermelon, peaches and/or plums
Salt

Steps:

  • 1)Grate peel and squeeze 2 tablespoons juice from orange; reserve juice. Combine orange peel, cilantro, paprika, and ground red pepper, if desired, in small bowl. Cut beef Steak into 1-1/4-inch pieces. Place beef and 2-1/2 tablespoons cilantro mixture in food-safe plastic bag; turn to coat. Place remaining cilantro mixture and fruit in separate food-safe plastic bag; turn to coat. Close bags securely. Marinate beef and fruit in refrigerator 15 minutes to 2 hours. 2)Soak eight 9-inch bamboo skewers in water 10 minutes; drain. Thread beef evenly onto four skewers leaving small space between pieces. Thread fruit onto remaining four separate skewers. 3)Place kabobs on grid over medium, ash-covered coals. ½ cup margarine
¼ cup honey
3 fresh peaches, pitted and quartered
3 fresh plums, pitted and quartered
3 bananas, cut into 4 pieces each
12 strawberries, hulled
12 skewers

Steps:

  • Preheat an outdoor grill for medium heat and place a large sheet of foil onto the grate.
  • Melt the margarine and honey together in a small saucepan over medium heat. Reduce heat to low and cook gently, stirring occasionally, until slightly thickened, about 5 minutes. Do not let the sauce boil.
  • Thread a peach quarter, a plum quarter, a banana piece, and a strawberry onto each skewer. Place the skewers onto the foil on the preheated grill; spoon margarine-honey mixture over each skewer.

1/2 pineapple, peeled, cored and cut into 1-inch pieces
8 kiwi fruits, peeled and cu in half widthwise

Steps:

  • Puree first 5 ingredients in food processor until smooth and set aside.
  • Brush grill with oil.
  • Preheat grill to medium heat.
  • Place fruit in large bowl.

  • Arrange mixed fruits on skewers.
