A mayonnaise based dip for raw veggies or steamed asparagus. Try also with cooked prawns. Cooking time is chilling time.

3/4 cup mayonnaise
3/4 cup light sour cream
1 tablespoon distilled vinegar
1 tablespoon orange juice
1 teaspoon orange zest, grated
1 garlic clove, peeled and crushed
1 tablespoon Dijon mustard
1 1/2 tablespoons fresh gingerroot, peeled and grated
1 teaspoon low sodium soy sauce
1/2 teaspoon sugar
salt and pepper

Steps:

  • Combine all ingredients in a medium bowl and whisk well.
  • Cover and chill at least 1 hour or until serving.
  • Transfer to a serving bowl and place on platter; surround with various raw veggies, or steamed asparagus (or peeled, cooked prawns).

4 cups pineapple juice
1 cup orange juice
¼ cup white sugar
¼ cup steak sauce (such as A.1.®)
2 tablespoons Worcestershire sauce
½ teaspoon ground ginger

TURKEY STEAKS WITH CITRUS & GINGER SAUCE



Turkey steaks with citrus & ginger sauce image

Use quick-cook turkey steaks for this recipe as they cook in a few minutes, and make a change from chicken

2 tsp cornflour
4 quick-cook turkey breast steaks, weighing about 300g/10oz total
1 tbsp sunflower oil
3 oranges , juice of 2 and one peeled and cut into segments
1 tsp grated fresh ginger
1 tsp clear honey
1 pink grapefruit , peeled and cut into segments
1 tbsp fresh snipped chives or chopped parsley
wild or long grain rice and steamed broccoli, to serve

Steps:

  • Sprinkle a teaspoon cornflour onto a plate, then press the turkey steaks into the cornflour to dust them lightly. Heat the oil in a large non-stick frying pan, until it is really hot. Add the turkey and fry for 3-4 minutes, turning once until golden on both sides - cook in batches if need be. Transfer to a plate.
  • Add the orange juice, ginger and honey to the pan. Gently bring to the boil. Mix the remaining cornflour with 1 tbsp cold water and stir into the sauce. Keep stirring on a gentle heat until thickened and syrupy, like a sweet and sour sauce. Season.
  • Return the turkey to the pan. Add the orange and grapefruit segments and heat through gently. Scatter over chives or parsley and serve straight away with rice and broccoli.

2/3 cup pineapple-orange juice concentrate, thawed
2 tablespoons hoisin sauce
1 tablespoon dark brown sugar
1 tablespoon gingerroot
1/4 teaspoon crushed red pepper flakes
4 boneless skinless chicken breast halves

Steps:

  • GRILLING: Heat grill. In a 12X8-inch (2-quart) baking dish, combine all of the except the chicken; blend well.
  • Place the chicken in the sauce mixture, turning to coat. Let it stand at room temperature for 15 minutes to marinate.
  • When ready to grill (*broiling directions below), place the chicken on a gas grill over medium heat or on a charcoal grill 4-6 inches from medium coals. Cook 15-20 minutes until the chicken is fork-tender and the juices run clear, turning occasionally and brushing frequently with the sauce mixture. Discard an remaining marinade.
  • * BROILING: Place the marinated chicken on a broiler pan. Broil 4-6 inches from the heat, using the times above as a guide.

1 tablespoon fresh lemon juice
1 tablespoon lime juice
1 tablespoon orange juice
1 tablespoon gingerroot, freshly chopped
1 tablespoon whole grain mustard
1 tablespoon honey
1 tablespoon low sodium soy sauce
1 tablespoon ground coriander
1/4 cup green onion, sliced
2 (4 ounce) boneless skinless chicken breasts

Steps:

  • Combine ingredients for marinade. Remove all visible fat from chicken. Place in shallow bowl and pour marinade over. Cover and marinate for at least 2 hours. (Can also marinate in a ziplock bag).
  • Remove chicken from marinade and reserve marinade. Saute chicken breasts in a nonstick skillet coated with nonstick cooking spray (olive oil one is great). Turn and saute until done. Remove from skillet and keep warm.
  • Add reserved marinade to skillet and bring to a boil for 5 minutes. Spoon sauce over chicken and serve.

1/2 cup olive oil
1/4 cup white wine vinegar
2 tablespoons soy sauce
1 tablespoon lemon juice

Steps:

  • In a bowl, combine the first seven ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add tuna steaks. Seal bag and turn to coat; refrigerate for 2-4 hours. Cover and refrigerate remaining marinade., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. 1/4 cup white wine vinegar
2 tablespoons soy sauce
1 tablespoon lemon juice

  • In a bowl, combine all ingredients for marinade.

  • Refrigerate for 2 hours. (Careful not to over-marinate the fish- the acidity will cook it if marinated too long!).
  • Cover and refrigerate remaining marinade.
  • Coat grill rack with nonstick cooking spray before starting grill. Grill drained tuna, uncovered, for 2-4 minutes per side. (We like our's pink/rare on the inside) If you prefer yours to be flaky, grill for 5-7 minutes per side.
  • Serve with the reserved marinade.
