This recipe allows me to combine two things abundant in Florida-fresh fish and orange juice. The orange juice gives the fish a wonderful, tangy flavor.

1/4 cup thawed orange juice concentrate
1 tablespoon canola oil
1 teaspoon snipped fresh dill or 1/4 teaspoon dill weed
4 red snapper or tilapia fillets (6 ounces each)
2 orange slices, halved
Paprika

Steps:

  • In a large resealable plastic bag, combine the orange juice concentrate, oil and dill; add fish. Seal bag and turn to coat; refrigerate for at least 15 minutes. , Drain and discard marinade. Place the fillets in a greased 15x10x1-in. baking pan. Cover and bake at 350° for 15-20 minutes or until fish flakes easily with a fork. , Dip cut edges of orange slices in paprika; serve with fish.

¼ cup lemon juice
¼ cup orange juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish lightly with cooking spray.
  • Place salmon fillets in the baking dish.
  • Mix lemon juice, orange juice, lime juice, butter, parsley, paprika, salt, and pepper together until well blended. Drizzle over salmon in the baking dish.
  • Bake salmon in the preheated oven until easily flaked with a fork, 10 to 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

3 to 4 green onions, thinly sliced

8 ounces string beans, trimmed
8 ounces cremini mushrooms, thinly sliced

2 to 3 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: In a small bowl, combine the orange juice, lemon juice, green onions, garlic, olive oil and red pepper flakes.
  • For the fish packets: Cut four 12-by-17-inch pieces of aluminum foil; place one piece of fish in the center of each. Sprinkle the fish with salt and pepper. Divide the marinade evenly among the packets (about 1/2 cup for each).
  • In a large bowl, toss the string beans, mushrooms, onions and tomatoes with the olive oil. Season the vegetables with salt and pepper, then divide evenly among the packets. For each packet, fold the foil over at the top to close, and then close up the sides to seal completely. Chill in the refrigerator for 30 minutes before cooking, to give the fish time to marinate.
  • Preheat the oven to 400 degrees F.
  • Transfer the packets to a baking sheet. Bake until the fish flakes, 12 to 15 minutes. Serve immediately.

2 limes
6 fish fillets or steaks, preferably grouper
3 teaspoons chopped fresh flat-leaf parsley
1 clove garlic, minced
3 teaspoons olive oil
Salt and ground pepper
1 teaspoon sherry vinegar
1 teaspoon honey

Steps:

  • Preheat the oven to 425 degrees F.
  • Zest half a lemon. Juice the lemon and 1 lime. Slice the remaining lemon and lime into very thin slices.
  • Place a few lemon and lime slices in the center of each parchment square. Place a fish fillet on top. (The citrus will help to keep the fish from burning on the bottom.)
  • In a bowl, whisk together the olive oil, 1 teaspoon salt, 1/2 teaspoon pepper and 1 teaspoon each lemon and lime juices, and drizzle over the fish. Top each piece of fish with a few slices of lemon and lime. Tightly fold the parchment paper into packages and make sure they are sealed well.
  • Put the packages on a baking sheet and bake for 10 to 12 minutes, depending on the thickness of the fish. Put the remaining citrus juices in a saucepan and bring to a boil over medium heat. Reduce by half, stirring frequently. Add the sherry vinegar, honey and 1 teaspoon salt.
  • Mix the parsley, garlic and lemon zest together with a slight pinch of salt and pepper for the garnish.
  • Place each parchment packet on a plate with a rim. Carefully tear or cut open the parchment packets and drizzle the fish with a teaspoon of the citrus reduction and garnish with the parsley and lemon zest mixture.

4 (5-6-oz.) skin-on, boneless salmon fillets
2 Belgian endive, leaves separated, cut into large pieces
¼ cup fresh grapefruit juice
3 Tbsp. unseasoned rice vinegar
Toasted sesame seeds (for serving)

Steps:

  • Pulse jalapeños, garlic, and a pinch of salt in a food processor to a coarse paste (you can also smash with a mortar and pestle or finely chop jalapeños and garlic on a cutting board, sprinkle with a pinch of salt, and crush with the side of a chef's knife).
  • Transfer paste to a small bowl and add grapefruit zest, honey, and 2 Tbsp. oil; toss to combine. Set sauce aside.
  • Heat 2 Tbsp. oil in a large nonstick skillet over medium-high. Add broccolini and cook, tossing occasionally, until crisp-tender and charred in spots, about 5 minutes. Divide among plates.
  • Heat remaining 2 Tbsp. oil in same skillet over medium. Season salmon with salt and cook, skin side down, until skin is browned and crisp, 6-8 minutes. Turn and cook on flesh side just until cooked through, about 1 minute.

1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh thyme
1 scallion, chopped
1 clove garlic, whole
1/4 Scotch bonnet pepper, chopped with seeds, or more to taste
1 teaspoon chopped fresh ginger
1/2 teaspoon ground allspice
1 teaspoon whole black peppercorns
2 tablespoons orange juice
1 tablespoon fresh lemon juice
1 teaspoon finely grated lemon zest
1 tablespoon finely grated lime zest
1/2 teaspoon kosher salt
1 teaspoon brown sugar
2 tablespoons vegetable oil
6 (4-ounce) bass fillets, skin on and descaled
2 tablespoons olive oil
1 teaspoon minced ginger
1 teaspoon minced garlic
1/4 cup small-diced shallots
1/2 cup sliced okra
1/2 cup grape tomatoes
1 cup fonio, rinsed
1/4 cup torn Thai basil

Steps:

  • Combine all the ingredients except the fish and fonio in a blender and puree until smooth and completely combined.
  • Take the fish and lightly score the skin diagonally in four places with a sharp knife, making sure not to cut too deeply. Place the fish in a nonreactive container with a lid and cover with the jerk marinade. Cover and refrigerate for at least 2 hours and up to 12 hours.
  • Preheat the oven to 350°F and put a cast-iron grill pan in the oven to heat until it's very hot (test by sprinkling a drop of water on the pan to see if it sizzles).
  • Remove the fish from the marinade and pat dry. Place in the hot pan skin side down and cook for 5 to 6 minutes. Turn the fish over and cook for 5 more minutes, until the fish flakes easily with a fork.
  • Remove from the pan and serve over fonio.
  • In a 2-quart saucepan, heat the oil over medium heat. Sweat the ginger, garlic, and shallots and cook for 3 minutes, until the onion becomes translucent. Add the okra and tomatoes.
  • When the tomatoes burst, add the fonio and stir with the vegetables to coat. Add 1 1/2 cups of water, bring to a simmer, cover tightly with the lid, and turn the heat to low. Cook for about 20 minutes.
  • Fluff with a fork and let it steam for 5 minutes. Stir in the torn Thai basil.

2 avocados - peeled, pitted, and cubed

Steps:

  • In a medium non-reactive bowl combine the lemon juice, lime juice, ginger and olive oil. Add the bass and toss to coat. Cover and marinate in the refrigerator for about 2 hours. The flesh of the fish should be white and opaque.
  • Add the cilantro, onion and avocado. Season to taste with salt and pepper, toss and serve with hard cooked egg wedges.
