CITRUS ENDIVE AVOCADO SALAD

A colorful and refreshing salad featuring crisp endive leaves, juicy citrus, creamy avocado and crunchy almonds dressed with a honeyed vinaigrette.

1 teaspoon raw orange blossom honey (or any other fragrant honey, for vegan substitute the liquid sweeter of your choice)
2 Tablespoons/30ml freshly squeezed tangerine juice
1 Tablespoon/15ml white wine vinegar
1/4 cup/60ml extra virgin olive oil or avocado oil
1/4 teaspoon fine sea salt
freshly ground black pepper to taste
2 small ripe Hass avocados
1 large red grapefruit
2 medium tangerines (plus more for juice for the vinaigrette)
4 medium endives, trimmed, leaves separated
2 Tablespoons fresh mint leaves, finely chopped
¼ cup/28g roasted almonds, chopped

Steps:

  • Place the honey, tangerine juice, salt, and pepper in a small bowl . Slowly whisk in the oil until emulsified.
  • Cut the avocados in 1/2, removing the seed and carefully cut each half into thick slices in the shell. Carefully peel the shell and remove the slices.
  • Toss the avocado slices in the vinaigrette to prevent them from browning while you prepare the rest of the salad.
  • Using a sharp knife , peel the grapefruit and tangerines removing all the white pith, then cut into segments by cutting between the membranes to release the wedges or cut crosswise into rounds.
  • Arrange the avocado slices, endive leaves and citrus segments on a large platter. Spoon the remaining vinaigrette on top, sprinkling with the chopped mint, chopped almonds and additional salt and pepper to taste if desired.

2 medium grapefruit, peeled and sectioned
2 medium navel oranges, peeled and sectioned
2 medium ripe avocados, peeled, pitted and cut into chunks
1 small red onion, thinly sliced and separated into rings
DRESSING:
1/2 cup canola oil
1/4 cup sugar
3 tablespoons lemon juice
1-1/2 teaspoons poppy seeds
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon grated onion

Steps:

  • Gently toss the first five ingredients. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle over salad; toss to coat.

4 -5 tablespoons olive oil
3/4 teaspoon kosher salt
1/2 teaspoon black pepper, freshly ground
4 heads endive
4 ripe Hass avocadoes, peeled and seeded

Steps:

  • Whisk together the mustard, lemon juice, olive oil, salt and pepper to make a vinaigrette.
  • Remove a half inch from the stem of each endive, discard the core, and cut the rest across into 1" chunks. Cut the avocados into large pieces. Toss the avocados and endive with the vinaigrette. Season to taste and serve at room temperature.

Late winter really is the time for the best citrus. Produce markets have piles of blood oranges, as well as navel and cara cara oranges and grapefruit, the flesh of each in different vivid brilliant colors. For this salad, use as many kinds of citrus as possible. If you can find pomelos, they add their own kind of sweet tanginess. The combined flavor of sweet and sour citrus, fruity olive oil and coarse salt is seductive.

1 blood orange
1 cara cara or navel orange
1 grapefruit
1 small shallot, finely diced
1 tablespoon red wine vinegar
2 tablespoons extra virgin olive oil
Salt and pepper
2 Belgian endives, trimmed
Coarse sea salt for garnishing, such as fleur de sel

Steps:

  • Peel the citrus: With a serrated knife, cut off top and bottom of the fruit, so it sits solidly on the cutting board. Cut top to bottom following fruit's curve to remove peel and white pith. Slice the oranges and grapefruit horizontally into 1/8-inch rounds and place them in a bowl. Save the accumulated juice in the bowl for the vinaigrette.
  • Make the vinaigrette: Combine the shallots with red wine vinegar in a small bowl. Let stand for 10 minutes, then whisk in the olive oil and 2 tablespoons of the reserved citrus juice. Season with salt and pepper to taste.
  • Slice the endives crosswise into 1-inch thick ribbons (but slice the dense core thinner) and place in the center of a salad plate.
  • Surround the endive with citrus slices. Drizzle the vinaigrette over the salad and sprinkle lightly with coarse sea salt.

1/2 cup vegetable oil
3 tablespoons cider vinegar
2 tablespoons sugar
1/2 teaspoon salt

  • Slice off the end of each orange. Squeeze the juice from each end into a large bowl. Working with one orange at a time, stand it on its flat end. Use your knife to slice down around the orange to remove the skin. Hug the flesh as you slice—it’s better to lose some flesh in the rind than to have pith clinging to the flesh. Squeeze the rinds into the large bowl. Turn the orange on its side and slice down crosswise to create 1/2-inch thick slices. Repeat with remaining orange. Place orange slices in the bowl with the squeezed juice.
  • Peel the grapefruit in the same fashion, but instead of slicing it into rounds, remove each segment by running a knife along the white membrane holding each segment in place. Drop each segment into the bowl with the oranges and juice. Once the segments have all been released, squeeze what’s left of the grapefruit over top.
  • Slice each endive in half through its core; then cut crosswise to create 1-inch wide pieces. Place the endive in the bowl with the citrus.
  • Halve the avocado, remove the pit, cut the flesh into slices, then add to the bowl with the citrus. Season with sea salt and the 1 tablespoon of white balsamic vinegar. Toss gently with your hands. Add the Boston lettuce and toss gently again with your hands.
