LEMON BUTTER BISCUITS

These little lemon biscuits are so delicious and easy - you'll never need to buy biccies again!

125 g butter, at room temperature
100 g caster sugar
1 free-range egg
200 g plain flour
2 lemons, zest of
¼ teaspoon baking powder
1 pinch sea salt
plain flour, for dusting
3 tablespoons demerara sugar

Steps:

  • These biscuits are dead easy to make and perfect for a simple gift. If you fancy jazzing them up for Christmas, try using an orange in place of the lemons and add a pinch of cinnamon to your demerara - lovely and festive!
  • Beat the butter and sugar in a bowl with an electric mixer until creamy. Beat in the egg until the mixture is light and fluffy. Add the flour, lemon zest, baking powder and salt and mix until you have a ball of dough. Cover and place in the fridge for 2 hours, or until firm. Preheat your oven to 180°C/350°F/gas 4. Roll out the dough on a floured surface until ½cm thick. Cut out shapes and place on a greaseproofed tray. Sprinkle with demerara sugar and bake for 10 to 12 minutes until the edges are light brown. Transfer to a wire rack to cool.

2 cups flour
2 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon salt
2 tablespoons butter (or margarine)
1 teaspoon finely shredded orange peel
1/3 cup orange juice
1/4 cup milk
2 tablespoons orange juice
2 tablespoons sugar

Steps:

  • Combine flour, baking powder, 2 teaspoons sugar, and salt in a mixing bowl.
  • Cut in butter until the mixture is crumbly. Make a well in the center and add orange peel, orange juice, and milk. Stir until dough just clings together.
  • Turn dough onto a lightly floured surface and knead 10-12 strokes. Roll or pat dough to 1/2" thickness. Cut with a 2-1/2" biscuit cutter.
  • Put biscuits onto a greased baking sheet. Brush tops with orange juice and sprinkle with sugar.
  • Bake at 450 degrees for 12-15 minutes.

250g plain flour
85g icing sugar , plus extra for dusting
175g butter , cut into small pieces
2 lemons and 1 large orange
4 large eggs
400g caster sugar
50g plain flour

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line the base and sides of a shallow rectangular tin (about 23 x 33cm) with baking parchment, snipping the corners so that it comes up the sides of the tin. Tip the flour, sugar and butter into a food processor and whizz until it forms fine crumbs. Tip into the prepared tin and smoothly level with the back of a metal spoon, pressing it down lightly. Bake for 20-25 mins until pale golden.
  • To make the topping, finely grate the zest from the lemons and orange and squeeze out all the juice. Measure the juice - you need 120ml. Whisk together the eggs and sugar using an electric whisk for 1 min, then add the citrus zest and juices, and whisk again briefly. Sift in the flour and whisk well to mix. Pour over the shortbread and bake for 15-20 mins until the topping has just set. Cool completely in the tin, then lift out of the tin using the lining paper. Dust thickly with icing sugar and cut into 3 down the length and 6 across to make 18 bars.

2 cups all-purpose flour
3/4 cup fine yellow cornmeal
1 1/2 teaspoons baking powder
1 teaspoon salt
1 cup sugar
3 large eggs
1 tablespoon grated orange zest (from about 1 orange)
1 tablespoon grated lemon zest (from about 2 lemons)
1/2 cup coarsely chopped shelled pistachios

Steps:

  • Preheat the oven to 325 degrees F. Line a large baking sheet with parchment paper or a Silpat baking mat. In a large bowl, whisk together the flour, cornmeal, baking powder, and salt. In another large bowl, beat the sugar and eggs with an electric mixer until pale yellow and fluffy, about 3 minutes. Mix in the orange and lemon zests, then the flour mixture, and beat just until blended; the dough will be soft and sticky. Stir in the pistachios. Let stand for 5 minutes.
  • Using a rubber spatula, transfer the dough to the prepared baking sheet, forming two equal mounds spaced evenly apart. Moisten your hands with water and shape the dough into two 11 x 4-inch logs. Bake until the logs are lightly browned, about 35 minutes. Cool for 5 minutes. Using a serrated knife, cut the logs crosswise into 1/2-inch-thick diagonal slices. Arrange the biscotti cut side down on the same baking sheet, and bake until the cookies are pale golden, about 25 minutes. Let cool before serving.

2 teaspoons confectioners' sugar
1/2 cup shortening
1 1/4 cups buttermilk
butter, melted
12 teaspoons salted butter
12 tablespoons orange preserves
12 slices mild cheese

Steps:

  • Preheat oven to 450°F.
  • Mix dry ingredients.
  • Cut in shortening. Stir in buttermilk.
  • Knead & roll out on floured work surface.
  • Cut with biscuit cutter.
  • Score in the middle of each with a knife.
  • Add pat of butter dallop of orange marmalade, and sliver of cheese.
  • Fold over and place on baking sheet. Bake 10-12 minutes until golden.

  • Place biscuits on greased trays,flatten slightly+bake for 10-12 minutes till golden

1/2 cup corn oil
3/4 cup milk

Steps:

  • Preheat oven to 400 degrees F,& coat a baking sheet with cooking spray.
  • Mix flour & baking powder, then stir in corn oil, mixing until coarse crumbs form.
  • Stir in milk to form a soft dough, then stir in cranberries.
  • With floured hands, form dough into a ball, then press dough onto prepared baking sheet before evenly pressing it into a 6"x6" square.
  • Cut dough into 12 biscuits, BUT DO NOT SEPARATE THEM.
  • Mix sugar with cinnamon & sprinkle over the cut dough.
  • Bake 15-20 minutes or until lightly browned.
  • Great served with a flavored butter.
