ASIAN SLAW
You'll love taking this Asian slaw to summer picnics or BBQs! It's easy to make ahead, so it's also one of my favorite choices for a quick weekday lunch. Vegan and gluten-free.

- Make the dressing: In a small bowl, whisk together the cashew butter, miso paste, lime juice, sesame oil, and ginger. Whisk in enough water to create a drizzable consistency. Set aside.
- In a dry cast-iron skillet over medium heat, char the peppers whole, rotating until the edges have a little char, about 2 minutes per side. Remove. When cool to the touch, slice in half lengthwise, remove the stem, ribbing, and seeds and slice horizontally into thin strips.
- In a large bowl, combine the cabbage, peppers, scallions, cilantro, basil, chiles, and ¾ of the dressing. Toss until combined. Add the remaining dressing, if desired, and season to taste with a few pinches of sea salt. Serve topped with the toasted nuts, seeds, and sliced peaches.
CITRUS ASIAN COLESLAW

- In a large mixing bowl with lid, add in coleslaw mix, cilantro, green onion and orange slices.
- In a mason jar or container with an airtight lid combine vinegar, oil, maple syrup, salt, and pepper. Secure lid and shake up well. Pour over coleslaw and toss with tongs until all the cabbage is well coated. Cover slaw with a lid and store in refrigerator for at least 6 hours to allow flavors to combine.
- Before serving, in a medium non-stick pan, toast sunflower seeds and almonds on medium heat until lightly brown and fragrant, about 3-4 minutes (shake pan every ~20 seconds to prevent burning). Garnish coleslaw with seeds, almonds and addition chopped cilantro.
CITRUS ASIAN SLAW

- Use a mandolin or thin shred setting on food processor to grate the cabbage. Julienne the daikon, chop parsley and cut the green onion on the bias. Set a small bit of green onion on the side for garnish, then add all items to a large mixing bowl.
- Get a tall jar for the dressing. Juice the orange and lemon together, use a 1/3 of a cup of the juice. Make a cocktail with the rest! Add the aminos, salt, oil and date all together and pulse with an immersion blender until smooth.
- Pour the dressing over the salad mixture add 1 T sesame seeds and mix all together with two spoons. Sprinkle the remaining seeds and green onion on top and serve.

RED CABBAGE-CITRUS SLAW

- Put the lemon juice, orange juice, honey, mustard, basil and some salt and pepper in a blender and blend until smooth. With the motor running, drizzle in the canola oil until emulsified.
- Combine the Napa cabbage, red cabbage and carrot in a large bowl; add half of the dressing and toss to coat. Season with salt and pepper, and add more dressing if needed.
ASIAN STYLE SLAW
I always like to have a few salads at my BBQ to balance out the heavier stuff. Cole slaw is one of the classics, and I love it, but I like to make it my own by mixing in a few Asian flavors. I use the pre-shredded coleslaw mix that comes in bags at the supermarket or for red and green shredded cabbage packaged separately. And then I dress it up with some other fresh ingredients to make an outstanding and different kind of slaw.

- Rough up the scallion slices a little with your fingers so all the little layers of the scallion whites separate. Toss the coleslaw mix or both kinds of cabbage, the red onion and scallions together in a large bowl until everything is thoroughly mixed. You can make the slaw up to this point up to a day in advance as long as you keep it refrigerated. Before serving, simply bring the slaw back to room temperature, make the dressing and toss.
- Stir the remaining ingredients together in a small bowl until blended, then pour over the vegetables. Serve within 1 hour of dressing or the cabbage will get wilty and sad.

- Mix together the sesame oil and lime juice with some seasoning, then toss with the red cabbage, chilli, yellow pepper, beansprouts and peanuts.
- Heat a non-stick frying pan until searing hot. Season the tuna steaks on both sides and turn them in the sesame seeds to coat. Fry for 3 mins each side until the tuna is browned and a sesame crust has formed, but the fish is still pink in the middle.
