MEXICAN CHICKEN MARINADE
Make this fresh Mexican chicken marinade to season all of your favorite cuts of chicken. Made with lime, garlic, olive oil, oregano, and warm spices to give your chicken an amazing flavor!

Steps:
- To a Ziploc bag, add the chicken followed by the wet ingredients and the spices.
- Seal the bag, and toss the chicken so that the chicken is well coated in the marinade.
- Place in the fridge and allow to marinate for 2-24 hours.
- Remove the chicken from the bag, and grill it or bake it until the internal temperature of the chicken reaches 165°F/74°C with an Instant read thermometer.

Steps:
- In a food processor or blender, combine 1/3 cup of the orange juice, the jalapeños, garlic, peppercorns and salt.
- Puree until the peppercorns are completely crushed.
- Add the cilantro and the remaining 1/3 cup orange juice and puree until smooth.
- In a frying pan oil pan and cook chicken breasts until thoroughly cooked, add mixture from food processor/blender.
- Dice chicken and stir in back in frying pan with juices and marinade until browned.
- Warm tortillas in damp dish towel in microwave for 2 minutes.
- Add diced chicken, salsa and guacamole.

- Marinate chicken in soy sauce, lime juice & zest, cilantro and ginger for 30 minutes.
- Prepare rice according to package directions.
- Heat 2 tablespoons sesame oil in saute pan over medium-high heat and cook chicken.
- Remove chicken and set aside.
- Add remaining 1 tablespoon of sesame oil and saute red pepper and green onions.
- Serve Chicken with Rice, top Chicken with pepper and onions.
