Steps:
- Cook the butter and brown sugar over low heat, in a sauce pan, until it comes to a boil. Remove from heat and let cool.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 12x18 inch jelly roll pan.
- In a medium bowl, stir together the butter mixture, and the eggs and vanilla. Sift together the flour, baking powder, salt, and cinnamon; stir into the egg mixture until well blended. Then stir in pecans. Spread the batter onto the prepared jelly roll pan. Bake in the preheated oven for 25 minutes. Immediately sprinkle chocolate chips over the whole sheet. Let stand for 5 minutes, then spread chocolate evenly over the entire surface. Cut into squares.

An excellent winter dessert for a big party or just a cozy evening with friends. Creamy and very rich. This dessert is best eaten the same day it is prepared.

Steps:
- Preheat oven to 350°F.
- Grease 13"x9"x2" baking pan.
- In a large bowl, whisk together the milk, eggs, sugar, cinnamon, coffee, vanilla and salt.
- Stir in bread cubes, coating completely with liquid.
- Let soak for 10 minutes.
- Stir in 1/2 cup toffee bits.
- Pour into greased pan.
- Sprinkle remaining toffee bits on top.
- Bake until surface is set (40-45 minutes).
- Let cool 30 minutes.
- Combine sauce ingredients in a medium saucepan, and cook over low heat, stirring constantly, until toffee melts and mixture is well blended (makes about 2/3 cup sauce).
- Cut pudding into squares, top with sauce and serve with ice cream.

TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.
CINNAMON RAISIN-NUT TOFFEE

- Combine the nuts, vanilla, cinnamon and cloves in a bowl. Lightly butter a rimmed baking sheet.
- Heat the sugar in a saucepan over medium heat, stirring until it just begins to melt. Cook, swirling the pan but not stirring, until most of the sugar has melted, about 10 minutes. Add the butter and cook, swirling the pan, until the mixture is deep amber and a candy thermometer registers 300 degrees F, about 7 more minutes. Remove from the heat; stir in the nut mixture, then the raisins. Pour onto the prepared baking sheet and spread with a rubber spatula. Let cool completely, then break into pieces.

- Preheat oven to 350 degrees F.
- Grease a 13 x 9 x 2 inch baking pan; set aside.
- In a large mixing bowl, beat together brown sugar, butter, and egg until blended.
- Mix together instant coffee with water until dissolved; stir into mixture in bowl.
- Sift together flour, baking powder, cinnamon, salt, and baking soda.
- Stir into bowl a little at a time, stirring, until batter is smooth.
- Fold in raisins and nuts.
- Spread batter in prepared baking pan and bake in preheated oven for 20-22 minutes or until top springs back when touched in center.
- Meanwhile, prepare glaze: mix powdered sugar, cinnamon, vanilla, in a small bowl, adding enough coffee to make a glaze of pouring consistency.
- When bars are removed from oven, drizzle them with glaze while warm, and allow to cool before cutting into serving pieces.

- Combine cinnamon and ¼ cup of sugar, keep aside.
- Combine remaining ingredients (except peanut bars and melted butter).
- Blend at low speed until moistened, beat at a medium speed for 3 minutes.
- Spoon half the batter into a well greased and floured 25cm Bundt, Kuglehopf or ring tin.
- Sprinkle with 2 tablespoons of the cinnamon and sugar mixture.
- Spoon remaining batter into tin.
- Top with remaining cinnamon and sugar mix and broken peanut bars.
- Pour melted butter over the top.
- Bake at 160°C for 40minutes.
- Cool for 10min and remove from tin.
- You will now see that the peanut bars have melted and slowly migrated through the cake, leaving delicious trails of toffee and chocolate, and have settled to form a caramel/toffee crust on top.
- The secret is in preparing the tin well before you start to avoid sticking.
- Timing when you remove the cake is also important, but not critical.
- If you remove it too soon, the toffee is still liquid and will ooze over the cake (not necessarily a bad thing), or if you let it cool too much the toffee may set and stick to the tin and break away from the top.
- This is not a big problem either, if this happens simply put the cake tin back into your oven with the toffee still stuck inside, and heat it up for a minute or so.
- It will then be a simple job to remove the softened toffee from the tin and place it back on top of your cake, no one will ever know.

- 1. in a large bowl, combine cookie mix, quick oats and cinnamon. mix well.
- 2. combine cottage cheese, eggs and vanilla. add to dry ingredients and mix until well combined.
- 3. stir in cinnamon chips, toffee chips and walnuts or pecans. pour batter into a well greased 9x13 inch baking dish.
- 4. bake at 375 for 20-30 minutes. place on a rack and let cool.
- 5. combine melted sugar and cinnamon. add milk until a glaze consistency.
- 6. brush over the top of the bars. let cool and cut into bars. store in a zip top bag.

- Preheat oven to 300°F (149°C) degrees. Line a large baking sheet with parchment paper or a silicone baking mat. Spread the almonds onto the sheet and bake for 15 minutes, stirring them around twice during that time. Toasting the almonds brings so much flavor to the toffee. Remove from the oven, allow to cool, and give them a rough chop– a very rough chop; I like to keep a few of them whole. They will go into your toffee soon.
- Melt the cubed butter over medium heat in a 3-quart heavy duty saucepan. Stir occasionally (about every 2 minutes) with a wooden spoon as it melts. Once melted, add the water, sugar, salt, and corn syrup. Stir constantly until the sugar dissolves, then brush down the sides of the pan with a water-moistened pastry brush. Attach a candy thermometer to the pan. Do not let it touch the bottom of the pan.
- Once dissolved, stir occasionally as you bring the mixture to a boil. Once boiling, stop stirring. Rapid bubbles, a thicker consistency, as well as a slightly darker color forms around 235°F (113°C). At the 265°F (129°C, hard ball stage) point, stir in the toasted whole almonds. The mixture may separate when you add the nuts. If it does, temporarily remove the candy thermometer and stir vigorously until it all comes back together. Carefully reattach the thermometer and brush off any candy on the side of the pan with the pasty brush. Cook and stir the candy until it reaches 290°F (143°C, soft crack stage).
