THE BEST PUMPKIN WAFFLES
Homemade Pumpkin Waffles are made with basic pantry ingredients, fall spices, and canned pumpkin with a from scratch cinnamon cream syrup.

Steps:
- Heat waffle iron.
- Combine brown sugar and cornstarch in a large bowl. Whisk together to break apart the cornstarch.
- Add flour, baking powder, salt, cinnamon, ground cloves, and ground nutmeg and stir to combine.
- Separate the egg yolks and white into two separate bowls. Add the pumpkin and milk to the egg yolks; whisk to blend well. Add the oil; whisk to blend and set aside.
- Whip the egg whites with a hand mixer on high until stiff peaks form, 1-1 1/2 minutes. Set aside.
- Add the pumpkin mixture to the dry ingredients and mix them together until just combined. Gently fold in the egg whites until blended.
- Pour the batter on the heated and sprayed waffle iron and cook

WONDERFUL PUMPKIN WAFFLES
My family loves these waffles! --- serve with maple syrup, honey or just with butter, cooking time will depend on your waffle maker.

Steps:
- Prepare an electric waffle maker.
- In a large bowl whisk together pumpkin puree, sour cream, milk, 2 egg yolks, melted butter and brown sugar.
- In another bowl combine 3/4 cups plus 2 tablespoons flour, baking powder, baking soda, salt, cinnamon and nutmeg.
- Add the dry ingredients to the pumpkin mixture; mix well until combined.
- In another bowl beat the egg whites until stiff peaks form; fold into the waffle mixture until combined.
- Bake in a preheated waffle mixture.
- Delicious!

SPICED PUMPKIN WAFFLES
These waffles are my kids new favorite waffles. They're delicious! They have a light texture and the pumpkin flavor is not overpowering. The serving size is for Belgian waffles, but they will work fine in a regular waffle iron also.

Steps:
- Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
- In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
- Gently fold in the flour mixture.
- Cook according to your waffle iron directions.
- I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.
- They come out a nice deep, golden brown.
- These are great with a little bit of syrup, but would also be great with honey butter.
CINNAMON PUMPKIN WAFFLES
These were designed to be a great way to use up some extra pumpkin. Serve with honey butter and maple syrup.

- Preheat a waffle iron according to manufacturer's instructions. Combine flour, wheat germ, sugar, cinnamon, pumpkin pie spice, nutmeg, salt, and baking powder in a bowl. Set aside.
- Beat together milk, pumpkin puree, butter, oil, applesauce, whole egg, and egg white. Stir flour mixture into the pumpkin mixture along with the pecans.
- Ladle the batter onto the preheated waffle iron. Cook the waffles until golden and crisp, 5 to 7 minutes.
