Homemade Pumpkin Waffles are made with basic pantry ingredients, fall spices, and canned pumpkin with a from scratch cinnamon cream syrup.

1/4 cup light brown sugar
3 tablespoons cornstarch
1 1/4 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
2 egg yolks
2 egg whites (, beaten to stiff peaks)
1 cup milk
1/4 cup oil
1 cup canned pumpkin
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
5 oz can evaporated milk
1 teaspoon vanilla
1/2 teaspoon ground cinnamon

Steps:

  • Heat waffle iron.
  • Combine brown sugar and cornstarch in a large bowl. Whisk together to break apart the cornstarch.
  • Add flour, baking powder, salt, cinnamon, ground cloves, and ground nutmeg and stir to combine.
  • Separate the egg yolks and white into two separate bowls. Add the pumpkin and milk to the egg yolks; whisk to blend well. Add the oil; whisk to blend and set aside.
  • Whip the egg whites with a hand mixer on high until stiff peaks form, 1-1 1/2 minutes. Set aside.
  • Add the pumpkin mixture to the dry ingredients and mix them together until just combined. Gently fold in the egg whites until blended.
  • Pour the batter on the heated and sprayed waffle iron and cook

My family loves these waffles! --- serve with maple syrup, honey or just with butter, cooking time will depend on your waffle maker.

Number Of Ingredients 13

1/2 cup canned pumpkin puree
1/2 cup sour cream
1/2 cup milk
2 eggs, separated
1/2 cup melted butter
2 tablespoons brown sugar (can use 3 tablespoons for a sweeter waffle)
3/4 cup all-purpose flour
2 tablespoons all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Prepare an electric waffle maker.
  • In a large bowl whisk together pumpkin puree, sour cream, milk, 2 egg yolks, melted butter and brown sugar.
  • In another bowl combine 3/4 cups plus 2 tablespoons flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  • Add the dry ingredients to the pumpkin mixture; mix well until combined.
  • In another bowl beat the egg whites until stiff peaks form; fold into the waffle mixture until combined.
  • Bake in a preheated waffle mixture.
  • Delicious!

These waffles are my kids new favorite waffles. They're delicious! They have a light texture and the pumpkin flavor is not overpowering. The serving size is for Belgian waffles, but they will work fine in a regular waffle iron also.

Number Of Ingredients 12

1 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1 pinch salt
2 eggs
1/4 cup firmly packed brown sugar
1 cup canned pumpkin puree
1 2/3 cups milk
4 tablespoons butter, melted and cooled

Steps:

  • Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
  • In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
  • Gently fold in the flour mixture.
  • Cook according to your waffle iron directions.
  • I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.
  • They come out a nice deep, golden brown.
  • These are great with a little bit of syrup, but would also be great with honey butter.

¼ cup wheat germ
⅓ cup white sugar
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
½ teaspoon ground nutmeg
½ teaspoon salt
1 tablespoon baking powder
¾ cup milk
½ cup pumpkin puree
2 tablespoons melted butter
2 tablespoons olive oil
½ cup unsweetened applesauce
1 egg
1 egg white
½ cup chopped pecans

Steps:

  • Preheat a waffle iron according to manufacturer's instructions. Combine flour, wheat germ, sugar, cinnamon, pumpkin pie spice, nutmeg, salt, and baking powder in a bowl. Set aside.
  • Beat together milk, pumpkin puree, butter, oil, applesauce, whole egg, and egg white. Stir flour mixture into the pumpkin mixture along with the pecans.
  • Ladle the batter onto the preheated waffle iron. Cook the waffles until golden and crisp, 5 to 7 minutes.
