This is the most delicious cinnamon yeast bread ever. It makes yummy toast and you'll have more than one piece. If you want a Cinnamon Swirl Orange Bread (which is also good) see the note at the end of the recipe.

Number Of Ingredients 11

1 (1/4 ounce) package dry yeast
1/4 cup water
2 cups scalded milk
1/2 cup sugar
1/2 cup butter
2 teaspoons salt
2 eggs (slightly beaten)
7 1/2-8 cups flour
3/4 cup sugar
1 1/2 tablespoons cinnamon
soft butter

Steps:

  • In a small bowl soften and proof the yeast in the warm water.
  • In a saucepan combine the milk, sugar, butter, and salt; cool to lukewarm.
  • Add 3 cups flour and mix well.
  • Stir in the yeast and eggs; beat well.
  • Add enough of the remaining flour to make a soft dough.
  • Turn out on lightly floured surface and knead 100 times.
  • Place in lightly grease bowl; cover with cloth or plastic wrap and let rise till double (about 1 1/2 to 2 hours).
  • Punch down and divide dough in half; cover and let rest for 10 minutes.
  • Roll each half into a 15x7 rectangle, about 1/2" thick.
  • Mix the sugar and cinnamon for the filling together.
  • Spread each rectangle with soft butter and then sprinkle the filling on each.
  • Sprinkle 1 teaspoon of water over each and spread with spatula.
  • Roll up as for a jelly roll beginning with narrow side; seal the long edge.
  • Place sealed side down in two greased pans.
  • Rise till almost double (45-60 minutes).
  • Bake in a 375 degree oven for 35-40 minutes or till done.
  • If it browns too much, cover with foil the last 15 minutes or so.
  • NOTE: If you want an Orange bread substitute the following--1 1/4 cups milk and 3/4 cup orange juice for the 2 cups milk; and add 1 tablespoon grated orange rind.

1/2 cup milk, room temperature
1 large large egg, lightly beaten
2 1/2 cups all-purpose flour (plus extra as needed)

1 1/4 oz. package or 2 1/4 teaspoons instant/rapid rise yeast
2 tablespoons butter, softened
3 tablespoons granulated sugar
1/2 cup raisins (optional)
oil or non-stick spray for greasing

1/3 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
1 cup sugar, divided
2 large eggs, room temperature
6 tablespoons butter, softened
1-1/2 teaspoons salt
5-1/2 to 6 cups all-purpose flour
2 tablespoons ground cinnamon

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, 1/2 cup sugar, eggs, butter, salt and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. , Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Mix cinnamon and remaining sugar. Punch down dough. Turn onto a lightly floured surface; divide in half. Roll each portion into an 18x8-in. rectangle; sprinkle each with about 1/4 cup cinnamon sugar to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Soft, buttery and perfectly scented with cinnamon sugar, this cinnamon swirl bread is the perfect easy baking project and just delicious.

½ cup warm milk
½ cup warm water
1 tbsp sugar
10 g (2 tsp) instant yeast
1 egg
3-4 cups flour
1 tsp salt
1/3 cup softened butter
1 tbsp cinnamon
1/3 cup sugar
1 egg (beaten (for egg wash) )
1 tbsp melted butter

Steps:

  • In the bowl of a stand mixer, combine the warm milk, warm water, sugar and yeast. The milk and water should be comfortably warm, not hot. Allow to stand for 5 minutes.
  • Beat in the egg then add the flour, starting with 3 cups, and the salt. Knead in the flour then add the butter, one tablespoon at a time, kneading in well before adding more.
  • If the dough is very soft and sticky, add the remaining flour and allow to knead at medium speed for 3 minutes. The dough should be soft, slightly tacky and smooth.
  • Transfer to a large bowl and cover well with plastic then place in the fridge for up to 18-24 hours.
  • Remove the dough from the fridge two hours before baking. Tip the dough out onto a very lightly floured surface.
  • Roll into a rectangle as wide as your loaf pan (the one I used was 22x12cm (9x5in)) and approximately 1cm thick.
  • Mix together the sugar and cinnamon then sprinkle over the dough.
  • Roll the dough up into a tight roll then transfer to a greased and lined loaf pan.
  • Cover loosely with a damp tea towel and allow to proof for 30 minutes while you preheat the oven to 180°C/350°F.
  • Brush the loaf with beaten egg then place in the oven and allow to bake for 30-40 minutes until golden brown and risen.
  • To know if the bread is fully cooked, tap it on the bottom and if it sounds hollow, it's done.
  • Once removed from the oven, brush with melted butter (for a soft crust) and allow to cool for at least 30 minutes before slicing and serving.

I love the flavors of orange and cinnamon infused in this special bread. The first time I made this, everybody gobbled it up. This year I'm making them for Christmas morning and maybe adding an orange glaze for an extra fancy treat. Sounds like a plan. ????

Number Of Ingredients 11

1 cup warm water
1 cup sourdough starter (bubbly)
¼ cup olive oil
¼ cup honey
2 teaspoons Celtic Sea Salt
4 cups Bread Flour
¼ cup coconut sugar
1 tablespoon cinnamon
1 large orange (zested)
1 egg
1 tablespoon water

Steps:

  • Using a stand mixer with a bread hook combine water, sourdough starter, olive oil, honey, and salt.
  • Slowly add in flour 1 cup at a time beating until well incorporated and the dough begins to pull away from the bowl and form a ball. Keep mixing for an additional 5 minutes. You can also mix by hand in a large bowl and knead for 7 minutes.
  • Place dough in a greased bowl and cover with plastic wrap and let double in size. This can take 5-8 hours or longer depending on the temperature in your kitchen and how bubbly your starter is. Let it go till it doubles even if it takes longer than 8 hours.
  • Once doubled, place dough on a floured board and cut dough into 3 equal pieces.
  • Using a rolling pin, roll your first piece of dough into a large 15" X 6" rectangle.
  • Whisk together your egg and water to create an egg wash, and in a separate bowl mix together your cinnamon and coconut sugar.
  • Brush your egg wash on the dough using a pastry brush.
  • Sprinkle on cinnamon sugar and orange zest where you applied the egg wash.
  • Roll up your dough from the long angle and pinch the open ends together.
  • Using a pizza cutter or sharp knife, cut the dough down the center (gently) leaving an inch of dough connected at the top.
  • Gently braid your two strands one over top of the other until you get to the end.
  • Pinch together ends to form into a mini wreath.
  • Repeat with the remaining dough pieces. Put onto a greased or parchment-lined baking sheet, leaving a good amount of room in between to allow for rising. Cover loosely with plastic wrap and allow to rise for 1 hour.
  • Preheat oven to 425°F. Gently coat with an egg wash and bake for 20 minutes. Allow to cool for ten minutes before serving.

2 teaspoons ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder

1 egg, beaten

⅓ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
  • In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
  • Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.
  • Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely. Wrap in foil and let sit overnight before slicing.
