1 (9 inch) pie crust, baked
1 ¼ cups white sugar
2 tablespoons all-purpose flour
2 tablespoons cornstarch
¼ teaspoon salt
1 ½ cups milk
4 egg yolks
2 (1 ounce) squares unsweetened chocolate, chopped
1 tablespoon butter
1 teaspoon vanilla extract

Steps:

  • In medium saucepan, combine sugar, flour, cornstarch and salt and whisk to combine. In a medium bowl, whisk milk and egg yolks until smooth. Gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and comes to a full boil. Boil and stir for one minute.
  • Remove from heat and stir in chocolate, butter, and vanilla. Stir until melted.
  • Pour into pie shell. Place plastic wrap over filling to prevent skin from forming and chill for several hours. Top with meringue or whipped cream and chocolate curls if so desired.

1 cup white sugar
½ cup unsweetened cocoa powder
2 cups milk
6 tablespoons all-purpose flour
1 pinch salt
2 egg yolks
½ tablespoon butter flavored extract
1 teaspoon vanilla extract

1 (9 inch) pie shell, baked

Steps:

  • Mix in a medium saucepan and cook until thick the white sugar, cocoa, milk, flour, dash, salt, egg yolks, and butter flavoring. Add in the vanilla and margarine and remove from heat. Let cool.
  • Put into baked pie crust and top with your favorite meringue recipe. Cool in refrigerator.

2 eggs, beaten
½ cup butter, melted
1 cup white sugar
1 teaspoon vanilla extract
¼ cup all-purpose flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl combine eggs, melted butter or margarine, and sugar. Stir in vanilla extract. Set mixture aside.
  • In a separate bowl mix together flour and cocoa powder. Pour egg mixture into flour mixture and stir until thoroughly combined. Fold in chocolate chips if desired. Pour into pastry shell.
  • Bake in preheated oven for 30 to 40 minutes. Serve hot.

1 recipe pastry for a 9 inch single crust pie
1 cup white sugar
¼ cup all-purpose flour
3 tablespoons unsweetened cocoa powder
½ cup butter
2 eggs
1 teaspoon vanilla extract

Steps:

  • Unfold piecrust; fit into 9 inch pie pan. Prebake crust according to package directions. Remove from oven.
  • Lower the oven temperature to 325 degrees F (165 degrees C).
  • Beat together sugar, flour, cocoa powder, butter or margarine, eggs and vanilla in a medium-size bowl. Spoon into pie shell.
  • Bake for 25 to 30 minutes or until set. Allow to cool to room temperature. Serve with whipped topping or a scoop of vanilla ice cream.

1 baked 9 inch pie shell
1 1/3 c sugar
1/4 c flour
1/4 c cocoa
1 2/3 c evaporated milk
3 egg yolks, slightly beaten save whites for meringue topping)
2 Tbsp butter
1 1/2 tsp vanilla extract
MERINGUE
1/4 tsp cream of tartar
1/2 tsp vanilla
3 egg whites
1/2 c sugar

Steps:

  • 1. Sift together sugar, flour and cocoa. Gradually stir in evaporated milk. Pour this into a medium saucepan and heat over medium heat until mixture comes to a boil and thickens.
  • 2. Reduce heat, cook and stir for about 4 minutes. Add small amounts of hot mixture to combined egg yolks, stirring well after each addition. Return egg mixture back to pan stirring the whole time.
  • 3. Cook over medium heat 1 to 3 minutes, mixture will become very thick. Remove from heat and stir in butter and vanilla. Cool for about 5 minutes and then pour into pie shell. Cover with meringue and bake at 350 for 12-15 minutes.
  • 4. For meringue, In a mixing bowl, combine egg whites with the cream of tartar and vanilla. Beat at high speed with an electric mixer until soft peaks form.
  • 5. Gradually add sugar and continue beating at high speed until stiff peaks form and sugar is dissolved. Cover pie with meringue and bake to lightly brown.

1/3 cup chopped pecans
2 tablespoons sugar
2/3 cup vanilla wafer cookie crumbs (from about 32 cookies)
1/2 teaspoon ground cinnamon
2 tablespoons (1/4 stick) unsalted butter, melted
Sauce
2 tablespoons boiling water
1 tablespoon instant espresso powder or instant coffee powder
1 cup sugar
2 tablespoons unsweetened cocoa powder
1 cup whipping cream
1/4 cup light corn syrup
2 ounces unsweetened chocolate, finely chopped
2 tablespoons (1/4 stick) unsalted butter
1 1/2 teaspoons vanilla extract
2 pints caramel ice cream (such as dulce de leche)
1/2 cup chilled whipping cream
1 tablespoon powdered sugar
2 tablespoons chopped pecans

Steps:

  • For crust:
  • Preheat oven to 350°F. Blend pecans and sugar in processor until pecans are finely ground. Add cookie crumbs and cinnamon and process to combine. Add butter and blend until moist clumps form. Press crust onto bottom and up sides of 9-inch glass pie dish. Bake until crust is lightly toasted, about 10 minutes. Cool completely.
  • For sauce:
  • Stir 2 tablespoons boiling water and coffee powder in small bowl until powder is dissolved. Whisk sugar and cocoa in heavy medium saucepan. Whisk in 1 cup cream, corn syrup, and coffee mixture. Add chocolate and butter. Bring to boil over high heat, stirring constantly. Reduce heat to medium and simmer until slightly thickened, stirring occasionally, about 4 minutes. Cool 30 minutes. Stir in 1 teaspoon vanilla.
  • Soften 1 pint ice cream at room temperature 15 minutes. Spread evenly over bottom of crust. Drizzle 3 tablespoons sauce over ice cream. Freeze until sauce sets, about 15 minutes.
  • Meanwhile, soften remaining 1 pint ice cream at room temperature 15 minutes. Spread evenly atop sauce. Drizzle with 3 tablespoons sauce. Freeze pie until frozen, at least 4 hours. (Sauce and pie can be made 1 day ahead. Cover and refrigerate sauce. Keep pie frozen.)
  • Rewarm mocha fudge sauce over low heat, stirring often. Whip 1/2 cup chilled cream, powdered sugar, and remaining 1/2 teaspoon vanilla in medium bowl until peaks form. Transfer to pastry bag fitted with star tip. Pipe rosettes of cream around top edge of pie. Sprinkle with chopped pecans. Cut pie into wedges and serve with sauce.

  • In a large saucepan, combine 1/4 cup corn syrup, butter and brown sugar. Bring to a boil; cook and stir for 1 minute., Remove from the heat; stir in cereal until blended. Press into a greased 9-in. pie plate., In a small bowl, combine the peanut butter, hot fudge topping and remaining corn syrup. Set aside 1/3 cup for topping. A delicious pie recipe from my mother-in-law. You can make a graham cracker crust instead of the macaroon cookie crust, if desired. Prep time does not include chilling time.

1 cup sweetened flaked coconut, divided
1 (13 ounce) package macaroons, crushed and mixed with
2 tablespoons melted butter
1 quart heavy cream, divided
1/4 cup sugar, plus

3 (3 1/2 ounce) packages instant vanilla pudding
2 1/4 cups cold milk (I use 2 cups to have it set up better)
1 1/2 teaspoons coconut extract
1 (11 3/4 ounce) jar hot fudge

  • Preheat oven to 350 degrees.
  • Spread 1/2 cup coconut on cookie sheet (ungreased). Bake 8 minutes, stirring occasionally.
  • Lightly grease a 9-inch pie pan and either press macaroons into pan forming a crust or make a graham cracker crust.
  • Bake crust at 350 degrees for about 10 minutes. Cool.
  • In mixing bowl, at high speed, beat 2 1/2 cups cream with 1/4 cup plus 1 T sugar until almost stiff. Reserve.
  • In large bowl, mix dry pudding with milk and extract. Stir in toasted coconut. Fold whipped cream into pudding mixture.

1/2 teaspoon salt
1 teaspoon sugar
1/2 cup unsalted butter (cold and cut into half inch cubes)

1 cup half and half

8 ounces bittersweet chocolate-chopped
1 1/2 cups sugar
3/4 cup cocoa powder
1/4 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • In a large bowl whisk together flour, sugar and salt.
  • Add butter and mix with a fork until it starts to look like a coarse meal.
  • Add 1 tablespoon of water at the time and continue mixing until a dough forms.
  • Wrap the dough with the plastic wrap and refrigerate for 2 hours.
  • Lightly greased 9-inch pie plate and preheat oven to 350 F.
  • Take the dough from refrigerator and roll out on a lightly floured work surface into a circle about 1/8 inch thick.
  • Transfer the dough to a pie plate and trim excess of a dough from edges.
  • In a bowl whisk together sugar, cocoa powder, flour, and salt.
  • Combine in a sauce pan half and half, butter, and chocolate and stir over a medium-low heat until it become smooth.( Let it cool a few minutes before you add it over dry ingredients and eggs)
  • Add eggs, egg yolks and chocolate mixture into dry ingredients and stir until well-combined
  • Transfer filling to pie crust in pan.

6 tablespoons unsalted butter, melted, plus more for the pie dish
30 creme-filled chocolate sandwich cookies
1 teaspoon instant espresso powder
2 pinches kosher salt
1/2 cup (1 stick) unsalted butter
1 cup unsweetened cocoa powder
1 cup granulated sugar
1 teaspoon instant espresso powder
Pinch kosher salt
1/2 cup heavy cream
4 ounces cream cheese, at room temperature
1 1/2 cups tahini
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Kosher salt
1 1/2 cups heavy cream
Flaky salt, optional

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Grease or butter a 9- to 9 1/2-inch pie pan.
  • Combine the cookies, espresso powder and salt in a food processor until very finely ground. With the food processor running, drizzle in the butter and blend until combined. Transfer the mixture to the pie pan and pack it very firmly on the bottom and sides. Bake for 6 minutes.
  • For the fudge: Meanwhile, melt the butter in a medium saucepan over medium heat, then add the cocoa powder, granulated sugar, espresso powder, salt and heavy cream and whisk to combine. Continue to cook, whisking, until smooth and glossy, about 5 minutes. Remove from the heat.
  • When the crust is done baking, pour most of the fudge into the crust and spread it evenly around the bottom. Reserve a few spoonfuls to drizzle on top. Stick the crust in the fridge to cool completely while you make the filling.
  • For the filling: Combine the cream cheese and tahini in a stand mixer fitted with the whisk attachment and whip until smooth. Mix in the powdered sugar, vanilla, cinnamon and a pinch or two of salt (if there's salt in the tahini already, you'll just need a little bit or none-you can add salt to taste!), and beat until combined. With the mixer on low, drizzle in the heavy cream, then gradually increase the speed to high and mix until pale and fluffy. Pour the mixture into the cooled crust, then drizzle with the reserved fudge (if it's firmed up by now, you can reheat it gently until it's drizzly), swirl it around, sprinkle with flaky salt if desired, then let set in the fridge for 4 hours or up to overnight. 1 1/2 cups semi-sweet chocolate chips
3 tablespoons butter
1/2 cup heavy cream (whipping cream)
1 tablespoon coffee-flavored liqueur
1 pint cookies & cream ice cream, softened
1 pint chocolate ice cream, softened (I used double chocolate with fudge chunks)
2 tablespoons coffee-flavored liqueur, divided

Steps:

  • Over a double boiler on low heat, combine chocolate chips, heavy cream, and butter. Stir until chips are melted and mixture is smooth. Remove from heat, stir in coffee liqueur. Let cool for 10 minutes.
  • Spread 1/2 C sauce on bottom and up the sides of the chocolate cookie crust, letting it pool in the bottom. Shake gently to level out. Freeze for 15 minutes.
  • In a small bowl, combine cookies and cream ice cream and 1 Tbsp coffee liqueur. Pour over fudge sauce layer in pie pan. Freeze 2 1/2-3 hours.
  • Once the first layer is mostly frozen, combine remaining Tbsp coffee liqueur with chocolate ice cream. Pour over first layer of ice cream.
  • Freeze several hours or overnight until firm.
  • Serve with remaining warm fudge sauce (if you haven't eaten it all already! yum!).

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Spread 1/2 cup fudge topping onto bottom of crust. Freeze 10 min.
  • Beat peanut butter and milk in large bowl with whisk until blended. Add dry pudding mixes; beat 2 min. (Pudding will be thick.) Stir in half the COOL WHIP; spoon into crust. Cover with remaining COOL WHIP.
  • Refrigerate 3 hours or until firm.

7 tablespoons butter, melted
3/4 cup purchased butterscotch caramel sauce
1/2 gallon mocha almond fudge ice cream, slightly softened
1 16-ounce jar hot fudge topping, slightly warmed
1 cup chopped chocolate-covered English toffee (such as Almond Roca or Heath bars; about 5 ounces)

Steps:

  • Preheat oven to 325°F. Finely grind chocolate cookies in food processor. Add butter and process until crumbs are moist and stick together. Using plastic wrap as aid, firmly press crumbs onto bottom and up sides of 9-inch-diameter deep-dish glass pie plate. Bake crust 10 minutes. Freeze until cold, about 15 minutes.
  • Spread butterscotch sauce over bottom of crust; freeze until firm, about 15 minutes. Spoon ice cream into crust, pressing to compact and mounding slightly in center. Freeze 15 minutes. Spread fudge topping over ice cream; freeze 5 minutes. Press chopped toffee onto topping. Cover and freeze until very firm, at least 6 hours. (Can be prepared 3 days ahead. Keep frozen.)
