Steps:
- In your mixer add the yeast, sugar and the milk, let bloom for 5-10 mins
- Add the salt and oil and mix
- Add 2 C flour and mix until smooth
- add 1/2 C at a time only adding until the dough cleans the bowl as it mixes. Don't add it all if you don't need it all
- Now knead it with the dough hook until the dough is quite smooth and springy and stretches without ripping
- Oil a bowl and place the dough inside, cover it with a towel, and let rise in a warm place until it's more or less doubled in size, about an hour.
- roll out the dough and cut into strips
- twist the strips and set on parchment paper, let it get poofy - about 10 mins
- preheat the oven to 425 F
- in a wide pot, bring the water to a boil and add the baking soda
- Drop 3 or 4 pretzels at a time into the boiling water, boil for 30 seconds, then fish them with a slotted spoon or skimmer and lay them on the baking sheet (on parchment paper or silpat mats).
- mix the egg and water together and brush over the pretzels
- bake them for around 12 minutes, they should be deeply golden and dry to the touch when they're done.
- mix the sugar and cinnamon together
- roll in the melted butter then the cinnamon sugar
- beat the cream cheese, butter and vanilla
- slowly add the powdered sugar until it's the thickness you want. Add a Tbsp of milk if the dip is too thick

Steps:
- Arrange racks in upper and lower thirds of oven; preheat to 400°F. Line 2 rimmed baking sheets with parchment. Mix sugar, cinnamon, and salt on a large plate. Fill a small bowl or glass with cold water.
- Roll out pastry between 2 sheets of parchment until short side is 10" long and dough is about 1/8" thick. Freeze dough 5 minutes. Using a pizza cutter or sharp knife, cut dough crosswise into 1" strips. Transfer half of strips to refrigerator. Working one at a time, brush strip lightly with water (or use your fingertips), then immediately transfer to sugar mixture and turn to coat.
- Starting from the middle, use both hands to twist dough to the ends. Transfer to prepared sheet, arranging twists vertically. Repeat with remaining dough. Freeze 10 minutes.
- Bake twists, rotating sheets front to back and top to bottom halfway through, until golden brown and beginning to caramelize, 18-20 minutes. Using tongs, immediately lift twists from parchment and let cool with 1 end on rim of baking sheet (work carefully, sugar coating will be very hot).

- Add It To Mulled Wine. This Christmas, you can surprise your family by bringing a delicious, homemade mulled wine to the party! Put a cinnamon stick into a cheesecloth with the peel from an orange, one star anise, two crushed black cardamoms, and six black cloves.
- Use It As a Coffee or Tea Stirrers. Cinnamon sticks are a great way to add some flavor to a hot cup of coffee or tea. In order to do so, simply swirl your beverage around with a cinnamon stick to your heart’s content.
- Flavor Your Broth. If you make your own vegetable broth or meat stock at home, a cinnamon stick can be an excellent addition! In fact, the broth in Vietnamese pho is typically flavored with cinnamon, which gives the broth-based dish its well-rounded flavor.
- Add It To Your Roast or Slow Cooker. Next time you’re a slow-cooking lamb, beef, chicken, or pork, throw a cinnamon stick or two into the mix. As it cooks, the wonderful, savory taste and aroma will fill the dish (and your kitchen!)
