- Heat oven to 180C/fan 160C/gas 4. Grease a 20cm loose-bottomed cake tin and line the bottom with baking parchment. Mix the flour, caster sugar and cinnamon together with a pinch of salt in a bowl. Whisk the butter, egg yolks and milk together and combine with the dry ingredients to make a soft dough. Turn out onto a floured surface and roll out to a rectangle, about 30 x 25cm.
- Mix the filling ingredients together. Spread evenly over the dough then roll it up lengthways, like a Swiss roll, to form a log. Using a sharp knife, cut the dough into 8 even-sized slices and pack into the prepared tin. Brush gently with extra milk and bake for 30-35 mins or until golden brown. Remove from the oven and cool for 5 mins before removing from the tin.
- Sift the icing sugar into a large bowl and make a well in the centre. Place the cream cheese and butter in the centre, pour over 2 tbsp boiling water, and stir to mix. Add a little more water until you have a drizzly consistency. Stir in the vanilla essence, then drizzle the icing over the rolls. Serve warm or cold.

- Warm milk in the microwave milk for 45-60 seconds. It should be warm but not hot to the touch (about 105 degrees F).
- Place milk into the bowl of your standing mixer, then add 1 TBS sugar and 1 TBS yeast to the warm milk. Stir and let it sit (proof) for five minutes or until it becomes foamy.
- Add the ½ cup sugar, butter, eggs, and vanilla to the mixture in the bowl of your standing mixer. Use a dough hook to stir until combined
- Add 4 cups flour, salt and cinnamon and stir the dough hook, starting on low and increasing to high.
- Knead dough in the standing mixer until a large ball is formed. The dough should be smooth and only slightly tacky to the touch. If the dough seems too sticky and is not forming a ball, add more flour 1 TBS at a time until a smooth ball is formed.
- Transfer dough to a floured surface and knead with your hands until it is smooth and elastic (about 3-5 minutes). Form it into a ball.
- Grease a large bowl and place the dough inside.
- Cover the bowl with a warm, damp towel and put the bowl in a warm place to rise.
- Let the dough rise in a warm place about 1 hour or until dough has doubled in size.
- While the dough is rising, make the filing. In a small bowl, combine butter, brown sugar and cinnamon until mixture is homogenous (uniform throughout). Set aside.
- Alternately, you can combine the cinnamon and sugar. Then melt the butter and brush it on the rolled dough, then sprinkle the cinnamon sugar on the butter-brushed dough. (I think this way is easier)!
- Assemble Cinnamon Rolls
- Sprinkle a large work surface with flour.
- Gently press the gas out of the dough and form it into a rectangle.
- Roll the dough into a 24x12" rectangle, about 1/4 inch thick.
- Spread the filling all over the dough using greased hands or a greased spatula. This process can seem difficult but it gets easier as you spread it. (Alternately: if you only combined the cinnamon and sugar, then melt the butter and use a pastry brush to spread the melted butter all over the dough. Then sprinkle the dough with cinnamon sugar and pat it down gently to insure it sticks).
- Roll up dough cut into 12 equal sized rolls (feel free to measure and cut each roll to be 2" long).
- Line a 9x13 inch glass baking dish with parchment paper and lightly grease. Then place rolls in 4 rows of three, evenly spaced.
- Cover and let rise until nearly doubled, about 30 minutes and preheat the oven to 350 degrees F
- Bake Cinnamon Rolls
- Once rolls are doubled in size, bake them in the preheated oven until golden brown, about 18-20 minutes. They will rise more in the oven. (NOTE: Check the center cinnamon rolls and make sure they are baked through. If your oven bakes cool or unevenly you may need to increase the baking time up to 10 minutes longer. If the top starts to brown before the center is baked, tent the baking pan with foil to prevent further browning).
- While rolls are baking, beat together cream cheese, butter, powdered sugar, vanilla extract and salt. Do NOT chill the frosting. Keep it at room temperature until the cinnamon rolls are baked.
- Once the cinnamon rolls have bene removed from the oven, spread the cream cheese frosting on them while they are still warm.
- Cool & Serve!
- Let cool and serve warm.

- In a large bowl, combine 2-1/4 cups of the flour and the yeast. In a small saucepan, combine milk, the 1/3 cup butter, the granulated sugar, and salt. Cook and stir just until warm (120°F to 130°F) and butter is nearly melted. Add to flour mixture. Add eggs.
- Beat with an electric mixer on low speed for 30 seconds, scraping side of bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining 2-1/4 to 2-3/4 cups flour as you can.
- Turn dough out onto a lightly floured surface. Knead in enough of the remaining 2-1/4 to 2-3/4 cups flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total). Shape into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover and let rise in a warm place until double in size (1-1/2 to 1 3/4 hours).
- Punch down dough. Turn out onto a lightly floured surface. Cover and let rest for 10 minutes. Meanwhile, lightly grease a 13x9x2-inch baking pan; set aside. For filling:
- In a small bowl, combine brown sugar, the 1/4 cup flour, and the cinnamon. Using a pastry blender, cut in the 1/2 cup butter until crumbly.
- Roll dough into an 18x12-inch rectangle. Sprinkle filling over dough, leaving 1 inch unfilled along a long side. Sprinkle with raisins and pecans. Starting from the filled long side, roll up rectangle. Pinch dough to seal seam. Cut into 12 slices. Arrange in the prepared baking pan.

- soften yeast in warm water according to directions on package.
- in a medium saucepan melt the shortening then add milk 1/2 cup sugar 2 tsp cinnamon and salt and scald( cook untill just boiling) then take off and move to mixing bowl.

Very nice to have on a weekend when there is the time to bake in the morning. This recipe is from one of my mom's cookbooks, possibly an old Canadian Living one. Prep time includes rise time.

- Dissolve yeast in warm water.
- Combine dissolved yeast with milk, sugar, shortening, salt, egg and 2 cups of flour. Beat until smooth.
- Mix in enough remaining flour until dough is easy to handle.
- Knead until smooth and elastic. Let rise in warm place until double (1 1/2 hours).
- Divide dough in half and roll each half into a 15X9" rectangle.
- Spread half of margarine over each rectangle of dough. Sprinkle 1/4 cup sugar and 2 tsp cinnamon over each rectangle of dough.
- Roll both rectangles tightly and cut into 9-1 1/2" slices.
- Place in greased rectangular pan.
- Bake at 375 F for 25-30 minutes.

- FOR THE SWEET DOUGH.
- In a large mixing bowl combine 1 1/2 cups (180 gms) of the flour and the yeast.
- Set aside.
- In a sauce pan heat the milk, sugar, butter and salt until it's just warm (125 degrees f).
- Add to the flour mixture and beat for a moment, slowly add eggs.
- Beat at medium/low speed for 30 seconds.
- Scrape down the bowl then beat at high speed for 3 minutes.
- Add as much of the remaining flour as possible and stir until just combined.
- (save some for the board if kneading by hand) If using a stand mixer change to dough hook and knead until smooth and elastic, 3-5 minutes.
- Can be done by hand, be cautious not to knead in too much flour or rolls will be tough.
- Form dough into a ball and place in a greased bowl covered with plastic wrap.
- Let rise in a warm, draft free place until doubled in size (60-90 minutes).
- Punch down the dough, turn out on to a lightly floured surface, divide in half.
- Allow to rest 10 minutes covered.
- FOR THE ROLLS.
- While the dough is resting, Grease and flour 2 9 x 1 1/2" round cake pans.
- Mix sugar, cinnamon and optional nutmeg or cocoa in a small bowl or plastic bag.
- On a floured surface, roll one ball out to a 12"x12" rectangle, brush 1/2 of the butter on the dough (leaving 1/2" along the edge unbuttered).
- Sprinkle 1/2 of sugar mixture and be sure it's spread evenly.
- Sprinkle on Optional apples, raisins or chips.
- Roll dough into a tight roll, seal unbuttered edge with a bit of water.
- Set aside.
- Repeat with other dough ball.
- Preheat oven to 375°F.
- Cut each log into 12 pieces and arrange in pans.
- Cover rolls and allow to rise until nearly doubled, 30-60 minutes.
- Bake for 20-25 minutes.
- Rolls will be lightly browned.
- Test for doneness with a toothpick.
- Remove from oven, allow to cool on a rack in the pans for 10 minutes.
- Remove from pan and place on rack until just warm.
- About another 10 minutes.
- FOR THE ICING.
- While rolls are cooling, sift powdered sugar into a medium bowl.
- Add vanilla extract and 2 tablespoons of liquid.
- Beat until smooth, add more liquid 1 teaspoon at a time until smooth and drizzling consistency.
- Mix in optional melted chocolate.
- Place cooled rolls on serving dish, Drizzle or pipe icing, Serve warm.

- Heat oven to 350 degrees F.
- In a small bowl, mix yeast in the warm water and set aside.
- In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth.
- Then add yeast mixture. Mix in remaining flour until dough is easy to handle.
- Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.
- When doubled in size, punch down the dough. Roll out on a floured surface into a 15 by 9-inch rectangle.
- Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with walnuts, pecans, or raisins if you want. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.
- Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes.
- Bake for about 30 minutes or until nicely browned.

CINNAMON ROLL MONKEY BREAD
Cinnamon roll monkey bread is the decadent combination of cinnamon rolls baked monkey-bread-style into a gooey, flaky, indulgent treat!

- Preheat the oven to 350°. Open the cinnamon roll tubes and remove the frosting cups; set them aside to come to room temperature. Separate the dough into individual cinnamon rolls and cut each roll into 6 pieces.
- In a large mixing bowl, combine the granulated sugar and cinnamon. Set aside.
- In a small saucepan, melt the butter over medium heat. After it is melted, continue to cook it for an additional 3 to 5 minutes, or until the foam and butter underneath are golden brown. Remove from the heat and add the vanilla (it will bubble up!). Once the bubbles have subsided, whisk in the brown sugar until smooth and well combined.
- Meanwhile, thoroughly spray a 12-cup nonstick Bundt pan with nonstick cooking spray. Add half of the cinnamon roll pieces to the mixing bowl with the cinnamon-sugar mixture. Toss well to coat the pieces. Place the pieces in the Bundt pan, creating an even layer. Drizzle with half of the butter-brown sugar mixture. Repeat tossing and layering with remaining ingredients, stirring butter-brown sugar mixture before drizzling, if needed.
- Bake for 35 to 40 minutes, until the monkey bread has puffed up about 1 inch in the pan and the top is deep brown. Let cool for 10 minutes in the pan, then place a dinner plate over the top of the pan. With oven mitts, hold the pan and dinner plate together, then flip over. Carefully remove the bundt pan (give it a few taps if the bread doesn't seem to be releasing) and let it slide out onto the plate.
- Meanwhile, mix the cream cheese with a small rubber spatula until very smooth. Add in the contents of the frosting cups, whisking well to combine. Dollop the icing all over the top of the monkey bread, letting it melt into the top and drizzle down the sides. Serve immediately.
