I remember Mom making these whenever we would go camping. They are so light and flaky, and much easier than trying to make oatmeal over a camp fire.

2/3 cup butter, melted
1/3 cup milk
1 egg
1 1/2 cups flour
1 1/4 cups quick oats, uncooked (or 1 1/2 c. old fashioned oats)
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon cream of tartar
1/2 teaspoon salt
1/2 cup raisins or 1/2 cup currants

Steps:

  • In a large bowl, combine dry ingredients: flour, oats, sugar, baking powder, cream of tarter and salt.
  • In a small bowl, combine wet ingredients: butter,milk and egg,
  • Add wet ingredients to dry ingredients and mix, only until moist.
  • Add raisins (or currents).
  • Shape into a ball.
  • Pat out on a lightly floured board into an 8 inch circle.
  • Cut into 8-12 wedges.
  • Bake on a greased cookie sheet in a 425 degree oven for 12-15 minutes or until brown.

Steps:

  • Heat oven to 350°F. Spray large cookie sheet with cooking spray, or line with cooking parchment paper. In large bowl, stir milk and egg white until blended. Stir in muffin mix and 1/2 cup oats (dough will be sticky).
  • On cookie sheet, shape dough into 8-inch round, about 1/2 inch thick, using floured fingers. Break up any lumps in streusel (from muffin mix); mix streusel and 2 tablespoons oats. Sprinkle streusel mixture over dough. Cut dough into 8 wedges; separate wedges slightly.
  • Bake 25 to 35 minutes or until golden brown. Serve warm.

1 2/3 cups all-purpose flour, plus more for rolling
1 1/3 cups old-fashioned rolled oats, plus more for topping
1/4 cup plus 2 tablespoons light-brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into pieces
1 1/2 cups diced Granny Smith apple (2 apples cut into generous 1/4-inch cubes)
2/3 cup cold buttermilk, plus more for brushing
Raw turbinado sugar, for sprinkling

Steps:

  • Preheat oven to 400 degrees. Whisk together flour, oats, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. Cut in butter with a pastry blender or rub in with your fingers. (The largest pieces should be the size of small peas.) With your fingertips, flatten butter pieces into small disks. Add apples and buttermilk, stirring until dough just comes together.
  • Turn out dough onto a lightly floured work surface. Pat dough into a 6-by-8-inch rectangle, and cut into twelve 2-by-2-inch squares with a floured knife. Place about 2 inches apart on parchment-lined baking sheets. Brush tops with buttermilk, and sprinkle with raw turbinado sugar and oats. Bake until golden brown, 20 to 22 minutes, rotating sheets halfway through. Let cool on sheets for 15 minutes. Serve warm or at room temperature.

3 cups white whole wheat flour
2/3 cup coconut sugar
4 teaspoons baking powder
1 teaspoon salt
2/3 cup cold butter
1/2 cup whole milk
1/2 cup heavy cream
2 large eggs
1/2 teaspoon ground cinnamon
1 cup raisins

Steps:

  • 1. Heat oven to 375 F. Spread oats on a baking sheet. Bake in preheated oven 9-10 minutes, until oats are lightly browned. Cool completely. Increase oven heat to 450 F.
  • 2. In a food processor, pulse flour, coconut sugar, baking powder, and salt until combined. Pulse in cold butter until mixture looks like coarse cornmeal. Place mixture in a large bowl and set aside.
  • 3. In a small bowl, whisk milk, cream, and eggs until smooth. Set aside two tablespoons for brushing scones.
  • 4. Stir cooled oats, cinnamon, and raisins into flour mixture. Pour milk mixture over top and gently stir with a rubber spatula until just combined. Gently knead with hands until mixture forms a ball. Divide dough in half and shape one half into a 7-in round. With a sharp knife, cut round into eighths. Place each wedge on parchment paper lined baking sheets, spacing 2 in apart. Repeat with remaining half of dough. Brush each wedge with reserved milk mixture. Bake in preheated oven 12 minutes or until golden brown. Cool on baking sheet 5 minutes before transferring to a wire cooling rack. Serve warm.

1 cup chopped pecans
3/4 cup craisins (dried cranberries)
1 tablespoon orange zest
1/4 cup whole milk
1/4 cup heavy cream
1 egg
1/3 cup honey
2 teaspoons baking powder

1 1/2-2 cups all-purpose flour
1/2 teaspoon salt
5/8 cup butter (10 Tablespoons)
2 tablespoons whole milk
2 tablespoons granulated sugar

Steps:

  • Preheat Oven 375 degrees.
  • Spread oatmeal on baking sheet and place on center rack of oven and toast for 4 minutes.
  • Stir and add pecans to mixture and toast an additional 3-5 minutes, careful not to over toast the pecans.
  • Remove from oven and allow to cool.
  • Set oven temperature to 425 degrees.
  • Remove 2 Tablespoons oatmeal and set aside for dusting counter.
  • Wipe out baking sheet and line with parchment paper.
  • In small bowl combine, milk, cream, honey and egg.
  • To food processor mix together 1 1/2 cups flour, baking powder, cinnamon and salt.
  • Sprinkle butter over top and process until resembles cornmeal.
  • Transfer mixture to bowl and stir in the oats, pecans, orange zest and craisins.
  • Stir in milk mixture and knead in bowl until forms a large ball.
  • To reserved oatmeal add 2 tablespoons of flour and sprinkle counter with 1/2 of the mixture.
  • Turn dough out on counter and dust top with remaining toasted oatmeal mixture.
  • Lightly knead mixture and form into a circle approximately 1 inch thick (7-8 inches in diameter).
  • Cut dough into 8 wedges and place each wedge on prepared baking sheet.
  • Brush tops of each wedge with milk and dust with sugar and cinnamon.
  • Bake at 425 degrees until golden brown, approximately 12-15 minutes.
  • Remove to pastry rack and allow to cool 10-15 minutes before serving.

  • Cut the butter in with a pastry cutter or your fingers (food processor would be okay too) until the mixture resembles small crumbs. Add the half & half and stir well. I used the full amount, but you might want to start with just 3/4 cup to make sure the dough is still firm enough to handle. Dough should be soft, but not so soft that you can’t shape it into a circle.
  • Dump though dough out onto a piece of parchment paper and shape it into an 8 inch circle a little less than an inch thick. Wetting your hands lightly very will help with this part. Score the dough into 6 triangles but don’t separate them yet. Put the circle of triangles on a plate and freeze for a few hours or until stiff. When stiff, separate the triangles and put in a freezer bag.
  • When you are ready to bake the scones, remove from the bag and set on a baking sheet. Preheat oven to 375 degrees F. Rub scones with a mixture of egg and milk if desired or just brush with some half half. You can also sprinkle the tops with cinnamon sugar if you like.
