I am a salmon lover. This is a great recipe for a slightly exotic flavor of Indian inspiration with a maple twist. The flavor is exceptional, delicious, and unique. Orange zest may be added for an extra flavor twist.

1 ½ teaspoons salt
1 teaspoon paprika
1 teaspoon ground cardamom
1 teaspoon ground coriander
½ teaspoon ground black pepper
¼ cup grapeseed oil
2 tablespoons maple syrup
1 (2 pound) salmon fillet, cut into 3-inch pieces

Steps:

  • Stir salt, paprika, cardamom, coriander, and black pepper together in a bowl. Add oil and maple syrup and stir until evenly combined.
  • Preheat a non-stick frying pan over medium-high heat, about 350 degrees F (175 degrees C).
  • Dredge salmon pieces through the maple syrup mixture until evenly coated on all sides.
  • Cook salmon in the preheated pan until fish flakes easily with a fork, 5 to 7 minutes per side.

1/3 cup real maple or maple-flavored syrup
1/3 cup canola or vegetable oil
2 tablespoons plus 1 teaspoon balsamic vinegar
1/2 teaspoon ground cinnamon
1 salmon fillet (1 1/4 lb), cut into 4 pieces
6 cups spring greens (from 5-oz bag)
1/3 cup coarsely chopped pecans, toasted
2/3 cup crumbled feta cheese (2 2/3 oz)
1/3 cup dried cherries

Steps:

  • Heat oven to 400°F. Line 15x10-inch pan with foil. In small bowl, beat dressing ingredients with whisk until blended. Place 3 tablespoons dressing in small bowl; reserve for brushing on salmon. Set remaining dressing aside for salad. Place salmon pieces, skin side down, in pan.
  • Bake 10 to 14 minutes, brushing with reserved 3 tablespoons dressing twice during last 5 minutes of baking, until salmon flakes easily with fork. Discard any remaining dressing used for salmon.
  • In large bowl, toss greens with reserved dressing for salad. On 4 individual plates, evenly divide greens, pecans, cheese and cherries. Lift pieces of salmon from skin with metal spatula; top each salad with salmon.

One of my favorite glazes for just about anything sweet! (Cakes, coffee cakes, pies, cookies, breads, pastries, donuts, etc.!)Rich, creamy and delicious!

1 cup powdered sugar, more if needed
1/4 teaspoon cinnamon
1 tablespoon very soft butter
1/2 teaspoon vanilla
1/4 cup good maple syrup, more if needed

Steps:

  • In small bowl whisk ingredients til smooth and creamy.
  • Add more powdered sugar if too thin.
  • Add more maple syrup (or heavy cream or milk) a teaspoons at a time if too thick.
  • Drizzle over just about any dessert! Especially good on cakes, coffee cakes and pastries!

Salmon is my number one favorite "meat" so I'm always looking for a variety of ways to cook it. Here is another of several ways I like to prepare it. (I only make this with REAL maple syrup, so can't vouch for the results if you substitute.)

3 tablespoons maple syrup
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 1/2 teaspoons cornstarch, dissolved in
1 tablespoon water
4 salmon fillets
1 scallion, sliced thin (white part plus about 2-3 inches of the green)
1 tablespoon toasted sliced almonds (optional)

Steps:

  • In a small bowl whisk together the syrup through cornstarch solution until smooth.
  • Place the fillets skin-side-down in a shallow baking pan.
  • Pour the syrup mixture over the salmon.
  • Bake about 15-18 minutes at 450°F until the fish flakes easily; baste with glaze halfway through cooking.
  • Sprinkle with scallion and almonds before serving.
