Steps:
- Too prepare the waffles: In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt. Make a well in the center of the mixture; set aside.
- In a separate bowl, whisk together eggs, buttermilk, oil and vanilla. Pour into the bowl with the dry ingredients. Stir just until moistened; batter will be slightly lumpy.
- Preheat a waffle iron and spray with nonstick spray. Pour batter into waffle iron grid and close the lid. Bake until waffles are completely done- follow your waffle iron's instructions. Use a fork to remove finished waffles. Repeat with remaining batter. Keep waffles warm until ready to serve (Placing in a 200 degree oven is will do the trick).
- To prepare the cinnamon topping: In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside.
- To prepare the cream cheese topping: In a medium, microwave-safe bowl- heat butter and cream cheese for 30 to 60 seconds; just until melted. Stir together until smooth; whisk in powdered sugar and vanilla extract.
- When ready to serve, place waffle on plate, drizzle cinnamon topping, then drizzle cream cheese topping to taste. Serve immediately.
CINNAMON BUTTERMILK WAFFLES
A light and tender waffle with just a hint of cinnamon and cardamom. Delicious served with fruit or fruit syrup with whipped cream. We like this with lingonberries.

Steps:
- Mix dry ingredients in a small bowl.
- In a separate bowl, whisk eggs until well blended (I use a kitchenaid mixer); stir in the buttermilk and butter.
- Stir in the dry ingredients until well mixed, adding enough of the milk to make the batter thin enough to flow from a spoon. I use the whole 1/4 cup.
- Bake in a lightly oiled waffle iron until medium brown, about 3 minutes in mine.
- Serve hot.

THE BEST BUTTERMILK WAFFLES
In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

Steps:
- Preheat a waffle iron to medium-high.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
- Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
- Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

WHOLE-WHEAT CINNAMON WAFFLES
The aroma of cinnamon and vanilla is a great way of getting my family out of bed in the morning. Great with pure New York State maple syrup that my parents bring to us when they visit, we especially love these waffles with homemade blueberry syrup. If there are any leftovers, we freeze them between layers of waxed paper and toast them as needed throughout the week. You can make these with only white flour when the whole-wheat canister is empty. This is an adaptation of a recipe by cookbook author Jeanne Jones, who is known for her healthy recipes.

CAROL'S CINNAMON WAFFLES
If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

- Begin by preparing the cinnamon sugar coating. In a flat tray or casserole pan, combine the sugar, cinnamon and nutmeg. Use a whisk or a large spoon and combine the ingredients together until a uniform mixture forms. Make sure to break apart any clumps of brown sugar. Set the coating aside for later.
- Next, prepare the waffle batter. If you cannot find buttermilk in stores, make your own by combining whole milk with the 2 tablespoons lemon juice or vinegar. Whisk in the juice, then let the milk stand for a few minutes, forming a buttermilk.
- In a large bowl, combine the buttermilk, oil or melted butter, eggs, sugar and vanilla. Whisk on high speed with a mixer or use a hand whisk; mix for a few minutes until the eggs are well beaten. In a separate bowl, combine all the dry ingredients: flour, baking soda, baking powder, salt and cinnamon. Sift the dry ingredients into the batter, then mix for about 1 minute, until the batter is smooth.
- While preparing the batter, preheat a waffle griddle. Once the griddle is hot and ready, add approximately ¼ to 1/3 cup waffle batter into the center; close and let the waffles cook until golden.
