APPLE-RAISIN CINNAMON BUN PIE
There's more than meets the eye in this tricky pie. At first glance, it looks like a pan full of cinnamon buns, but cut into it and there's apple pie filling underneath! Big and little kids can help with measuring ingredients and even rolling out the dough (though parents should be nearby in case they need help).

- Line a 9-inch pie plate with 1 piece of dough, and refrigerate until ready to assemble the pie.
- Make the cinnamon-roll crust: Lay the remaining piece of dough on a lightly floured surface, and spread 2 tablespoons of the butter evenly on top. Combine 1/4 cup of the granulated sugar and 1 teaspoon of the cinnamon in a small bowl, and sprinkle evenly over the butter; gently press with your fingers to help the mixture adhere. Roll the dough up into a tight log. Trim and discard about 1 1/2 inches from each end, and cut the remaining log crosswise into 1/2-inch-thick pieces. Arrange the pieces, cut-side down, in a snug circle on floured parchment paper. Lightly dust the pieces with flour, then gently roll out into a 10-inch round. Slide the parchment onto a baking sheet, and refrigerate until ready to assemble the pie.
- Put the dark and golden raisins in a medium bowl with hot water to cover. Let them soak until tender, about 5 minutes, then strain.
- Make the filling: Peel and core the apples, cut them into 1/2-inch-thick slices and toss with the remaining 1/2 cup sugar and the lemon juice in a large bowl. Melt the remaining 4 tablespoons butter in a large skillet over medium-high heat. Add the apples, and cook, stirring occasionally, until the firmer apples soften but hold their shape, 15 to 18 minutes. (The softer apples, like McIntosh, will get very soft and saucy.) Add the flour, the remaining 1/2 teaspoon cinnamon, and the nutmeg and salt, and stir until the juices thicken, about 2 minutes. Remove the skillet from the heat, stir in the raisins and let the filling cool completely. (The filling can be refrigerated, covered, for up to 2 days.)
- Fill the dough-lined pie plate with the filling in an even layer. Invert the cinnamon-roll crust on top, and peel off the parchment. (It's OK if the individual rounds separate a bit in the process.) Pinch the crusts together. Fold the overhanging dough under itself, and crimp as desired. Brush with the egg, and refrigerate for 30 minutes.
- Bake the pie: Place a baking sheet in the oven, and preheat to 400 degrees F. Set the pie on the hot baking sheet, and bake until the crust is golden brown and the filling is bubbling, about 50 minutes. (Tent loosely with foil if the top browns too quickly.) Transfer to a rack to cool slightly.
- If using a glaze, whisk together the confectioners' sugar and milk in a bowl until smooth. (Add more milk if the glaze is too thick.) Drizzle over the pie.

Pinch the crusts together; fold the overhanging dough under itself and crimp as desired. Brush with the beaten egg.
- Set the pie on the hot baking sheet in the oven; bake until the crust is golden brown and the filling is bubbling, about 50 minutes. (Tent loosely with foil if the top browns too quickly.) Transfer to a rack to cool slightly.
- Whisk the confectioners' sugar and 2 tablespoons milk in a bowl until smooth. (Add more milk if the glaze is too thick.) Drizzle over the pie.

- Preheat oven to 350°F (180°C) and spray a pie dish with nonstick oil.
- Peel and cut the apples into thin slices and place in a bowl.
- Add sugar, cinnamon and cornstarch to apples and stir.
- Cut each cinnamon roll in half and roll out with flour until thin.
- Layer the bottom of the pie dish with the flattened cinnamon rolls to create a bottom crust.
- Add the apples and layer the rest of the rolls on top to create a closed crust, pinch any holes together with your fingers.
- Cover with foil and bake for 35 minutes.
- Remove the foil and bake for another 10 minutes uncovered.
- Allow the pie to cool and drizzle with icing.

- Heat oven to 350°F.
- Separate Cinnamon Rolls. Place 6 rolls in single layer on bottom of 9-inch pie plate sprayed with cooking spray; press to flatten and completely cover bottom and side of pie plate. Reserve remaining cinnamon rolls and Icing for later use. Bake crust 10 min.; cool slightly.
- Toss apples with dry pudding mix and cinnamon; spoon into cinnamon roll crust.
- Press remaining cinnamon rolls into 5-inch rounds. Place around outer rim of pie plate, leaving opening in center to allow steam to escape. Press edges of rolls together to cover filling and to seal to edge of bottom crust as shown in photo.
- Bake 40 to 45 min. or until apples are tender and crust is golden brown. Cool slightly.
- Drizzle with reserved icing as desired before serving.

I have been making these for years. They are huge! and have just the right amount of sweetness....very close to "Cinabon" this recipe makes a big batch and does freeze well.

- in a small bowl combine yeast, warm water, and sugar. set aside until foamy.
- In a large bowl: make pudding according to package directions. add butter, eggs and salt. mix well.
- add yeast mixture, blend.
- gradually add flour and knead until smooth. adding sprinkles of flour to control stickiness.
- once the dough is no longer sticky and soft and silky feeling (like a baby "bottom") the dough is ready.
- place in a very large greased bowl.
- cover and let rise until double in bulk (about 1 hr).
- punch down and on a lightly floured surface role out dough to a 34 inch x 21 inch rectangle.
- spread softened butter on the dough.
- combine the brown sugar, cinnamon, and diced apples, spread over the dough leaving about an inch away from the ends.
- gently and tightly roll up the dough.
- with a knife, put a notch in the dough every 2 inches. then with string or thread place under roll at marking and make a criss-cross over to cut the roll.
- place on greased cookie sheets, 2 inches apart.
- lightly press down rolls with your hand.
- cover and let rise again (about 30 minutes).
- bake at 350 degrees for 15-20 minutes. take them out when the just begin to turn golden brown. DO NOT over bake!
- frost hot rolls with frosting. (see recipe below).
- frosting: 8 ounces cream cheese softened, 1/2 cup butter softened, 1 tsp vanilla, 3 cups powdered sugar, 1 tablespoon milk.
- beat cream cheese and butter until light and fluffy, add vanilla and milk then gradually add powdered sugar. beat until smooth.

CINNAMON PIE
This is a favorite with all the men in our family. This was my great grand-mothers recipe that she made often. Simple to make - when cut you will see 3 different layer colors. *Note - due to several reviews I am updating to strongly suggest the following: You need to use at least a 9" deep dish pan for this recipe. A normal 9" will not work. This recipe does not set up if you halve it. The batter is very thin.

- Preheat oven to 375°F.
- Mix first six ingredients together with wire whisk- batter will be slightly lumpy.
- The batter is very thin.
- Pour into unbaked 10" or 11" pie crust. If you do use a 9" make sure it is a deep dish. This fills the shell completely and this is normal.
- Bake approximately 45 minutes or until set. If you see that it is not setting up properly, cover crust with foil or crust protector and bake an additional 10-15 minutes until set.
- Let cool before cutting.
