The perfect dessert for apple season - these apple crisp bars have a shortbread crust, cinnamon apples, and oatmeal crumble on top. Delicious with a drizzle of caramel sauce or scoop of ice cream.

1/2 cup unsalted butter (softened)
1/4 cup white sugar
1 cup all-purpose flour (AKA plain flour)
1 tablespoon cornstarch
1/4 teaspoon salt
2 large apples* (I like Honey Crisp, Granny Smith or Pink Lady for this recipe)
1 tablespoon white sugar
1 tablespoon all-purpose flour
2 teaspoons ground cinnamon
1/2 cup all-purpose flour
1/3 cup brown sugar (packed)
2 tablespoons white sugar
1/3 cup rolled oats
1/4 cup unsalted butter (melted)

Steps:

  • Preheat the oven to 350F (180C) degrees. Line an 8x8 inch (20x20 cm) pan with parchment paper, leaving an overhang around the edges.
  • In a medium bowl, beat together the butter and sugar until combined.
  • With the mixer on low speed, mix in the flour, cornstarch and salt.
  • Press the dough into the bottom of the prepared pan.
  • Bake in the preheated oven for 22-25 minutes, or until the top looks set and slightly golden around the edges.
  • Remove the pan from the oven (keep the oven turned on)
  • Peel and core the apples, then slice into thin slices.
  • Place the thinly sliced apples in a bowl, and toss with the flour, sugar and cinnamon.
  • Place the apple slices over the top of the baked shortbread base.
  • Stir together the flour, brown sugar, white sugar, cinnamon and oats.
  • Stir in the melted butter - the mixture should feel like wet sand.
  • Crumble the topping over top of the apples.
  • Bake in the preheated oven for 35 minutes.
  • Remove from the oven and cool the bars fully (while in the pan).
  • When ready to slice, lift the bars out of the pan using the overhang of the parchment paper.
  • Place on a cutting board and slice.

6 cups thinly sliced peeled tart apples
1/2 cup sugar
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons butter
TOPPING:
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 cup cold butter, cubed
1 large egg, lightly beaten
Vanilla ice cream, optional

Steps:

  • Combine the apples, sugar, flour and cinnamon in a large bowl. Transfer to an 11x7-in. baking dish; dot with butter. , For topping, combine the flour, sugar, baking powder and nutmeg in another large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in egg just until moistened; sprinkle over filling., Bake, uncovered, at 375° for 40-45 minutes or until topping is golden brown and apples are tender. Serve warm with ice cream if desired.

½ cup unsalted butter
2 large Granny Smith apples - peeled, cored, and thinly sliced
2 tablespoons firmly packed brown sugar
2 tablespoons unsalted butter
1 teaspoon lemon juice
1 ¼ teaspoons ground cinnamon, divided
1 pinch salt
2 teaspoons water
1 teaspoon cornstarch
1 ½ cups rolled oats
¾ cup all-purpose flour
½ cup firmly packed brown sugar
1 teaspoon vanilla extract
½ teaspoon baking soda
¼ teaspoon ground nutmeg
¼ teaspoon salt

Steps:

  • Place 1/2 cup butter in a medium, light-colored saucepan over medium-low heat. Cook, swirling often, until butter is browned and fragrant, about 10 minutes. Pour into a large mixing bowl and set brown butter aside.
  • Combine apples, 2 tablespoons brown sugar, 2 tablespoons butter, lemon juice, 1/4 teaspoon cinnamon, and pinch of salt in the same saucepan. Place the pan back over medium-low heat and cook, stirring occasionally, until apples are softened, about 10 minutes.
  • Mix water and cornstarch together in a small bowl or measuring cup. Pour mixture into the saucepan and stir to combine. Cook until mixture thickens slightly, 1 to 2 more minutes. Remove pan from the heat and let cool slightly.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x9-inch square baking pan with enough parchment paper to have overhang on all sides.
  • Add oats, flour, 1/2 cup brown sugar, remaining 1 teaspoon cinnamon, vanilla, baking soda, nutmeg, and 1/4 teaspoon salt to the brown butter and mix until well combined. Measure out 1 cup of this mixture and set aside for topping.
  • Pour remaining oat mixture into the prepared pan; firmly press into an even layer. Pour apples and sauce over the crust and spread into an even layer. Sprinkle with reserved oat mixture.
  • Bake in the preheated oven until top is golden brown and crisp, 30 to 35 minutes. Remove from the oven and let cool completely, about 30 minutes, before slicing into 16 bars.

These very simple but impressive bars use boxed cake mix for the base, streusel on top and apple butter in between for a sweet snack that's not too sugary.

1/2 cup (1 stick) unsalted butter
1 box yellow cake mix for two 9-inch rounds
1 large egg
1 cup apple butter
1/2 cup unsweetened instant or quick-cooking oats
1/4 teaspoon ground cinnamon
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-inch square pan with a piece of aluminum foil (about 17 inches long), leaving a 2-inch overhang on each side. Lightly coat the bottom and sides of the lined pan with cooking spray.
  • Melt half the butter (4 tablespoons) in a medium bowl in the microwave, about 45 seconds. Set aside 1 cup of the cake mix, and add the remaining mix to the melted butter. Add the egg and 1 tablespoon water, and mix with a spatula until well blended. Let stand a few minutes until the mixture is no longer tacky to the touch. Pat the dough in an even layer in the pan. Bake until the edges are lightly set to the touch and the crust is lightly browned all over, about 20 minutes. Let cool for 5 minutes.
  • Meanwhile, melt the remaining butter in a medium bowl in the microwave, about 45 seconds. Add the reserved cake mix, oats and cinnamon, and mix with a fork until crumbly.
  • Spread the apple butter over the cooled crust, spreading it to the edges. Scatter the crumb mixture over the apple butter. Return the pan to the oven and continue to bake until the crumbs are golden brown and firm, about 30 minutes more. Cool completely in the pan.
  • Using the foil overhang, lift the bars out of the pan and peel the foil away from the edges. Dust with confectioners' sugar, and cut into 16 bars.

CINNAMON-APPLE BARS WITH ICING

Cinnamon-spiced apple slices are layered between a soft golden crust and a crumb topping, drizzled with icing. Tastes exactly like apple pie, only in bar form! This recipe is my most famous of all!

2 cups all-purpose flour
½ cup white sugar
½ teaspoon baking powder
½ teaspoon salt
2 large egg yolks, beaten
1 cup unsalted butter, cubed
4 medium baking apples, peeled and sliced
¾ cup white sugar
¼ cup all-purpose flour
1 teaspoon ground cinnamon
½ cup powdered sugar
1 tablespoon milk
¼ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, sugar, baking powder, and salt for crust in a bowl. Cut butter into the mixture with 2 knives or a pastry blender until crumbly; do not overmix. Stir in egg yolks. Press 1/2 of the mixture into a 9x13-inch baking pan, and set the remainder aside for the topping.
  • Prepare filling: Mix apple slices with sugar, flour, and cinnamon until coated. Layer apples overlapping evenly on top of the crust. Drizzle any remaining juices from the apple mixture over top for added sweetness. Crumble the remaining crust mixture over the apples.
  • Bake in the preheated oven until sides are bubbly and top is golden brown, about 40 minutes.
  • While the bars are baking, mix powdered sugar, milk, and vanilla for icing together.
  • Remove bars from the oven and immediately drizzle icing over top. Let cool to room temperature, about 30 minutes, before slicing into 12 bars and serving.

1 tablespoon cornstarch
1 tablespoon cinnamon
2 cups flour
2 cups old-fashioned oat
1 cup brown sugar
½ teaspoon baking soda

¾ cup butter, melted

Steps:

  • Remove the core and thinly slice apples.
  • Place apple slices in a large bowl and gently mix in sugar, cornstarch, and cinnamon. Set aside.
  • Preheat oven to 350˚F (180˚C).
  • In another bowl, combine flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly.
  • Line a 9x13-inch (23x33 cm) baking dish with parchment paper and pour ⅔ of the oats mixture in the bottom of the pan, pressing firmly to pack it down to make a crust.
